油麻地區之點心專門店不算太多,心裏盤算應該全部皆品嚐過;怎知昨日在Openrice無意中又找到一間陌生的,而且還是在家之附近,已有一星期被雷雨困在公司嚐麪包及外賣飲盒,今天終於放晴,怎能不走一趟?今早買過麪包飯堂之早餐,上班途中「順路」走過砵蘭街,先「會一會」這點心專門店。此店門面裝潢光鮮,可能該是新店,門匾採中國式盤長花紋設計,牌匾之店名很有氣勢,「功夫」二字筆功剛勁有力,艮方圓氣開口,一派武林至尊之勁,功力十足!大門旁邊清楚顯示此店之菜式及鎮店名菜,此店逢星期一至五之早茶及下午茶時段皆全單八折;我習慣早吃晚飯,看看下午茶之截單時間為下午5:30,心裏已有安排。我於五時光臨,始料不及每張雅座皆有食客,店員漫不經心地指示我隨便坐下,我選了一張四人雅座,座在另外兩位食客之旁。由於時間倉促,未及安坐已點了普洱茶,並立即翻開點菜紙,幸好我已看了食家之食評,心裏已早著決定,點了一客「蟲草花滑雞飯」及兩件「蟹粉小籠包」,這次真的要試試這店之烹調「功夫」如何,看看這分店廚師之「功架」!等候時間正好用來欣賞此店之佈置及氣質,通常點心專門店都會採用木椅木枱設計,此店亦不例外。比較其他同類食店,此店內局佈置算是高雅,身後牆壁上之圓珠形燈與壁畫點綴成趣,遠處牆壁之兩幅壁畫印象更深,一幅是「飛龍在天」配上鎮店的「功夫蝦餃皇」,竟然用上了《易經》乾卦之爻辭,不知是否出自高人之手;另一幅意境較遜,叫「泰山壓頂」,配「酥皮香麻蘿蔔餅」,可惜此畫放於洗手間入口之旁,令人頓失雅興。此店由於空間比較少,大堂只得九張食枱,但竟然有兩張食枱設於洗手間外兩旁,真是嚇煞旁人!菜仍未到,還有時間慢慢欣賞桌面之佈置,這店將點菜紙印成一本武功秘笈之模樣實為一絕,左右翻開「秘笈」,真的以為自己正在翻閱「神功劍譜」,煞是過癮!這店原來有四種茶供食家選擇,分別是普洱、白牡丹、鐵觀音或香片。由於我的腸胃偶爾不太適應綠茶,後兩者不會是我之選擇;至於白牡丹這位「稀客」就不太認識,有機會下次會再試。吃點心總要做點傳統洗杯程序才像樣,而且點心店之餐具一般衞生情況都不會太高,此店雖沒有例外,但屬可以接受;當然小店侍應之服務態度並不如酒店式店子般的殷勤及有禮,亦有不少食客都在催促跟進食物進度,這方面真的還有很大的提升空間。沒料到會是「蟹粉小籠包」先來,此菜式是逐「隻」點,每隻十二元,最少要點兩隻,我就是點了兩隻,順理成章是二十四元(未折原價)。蟹粉小籠包一般都是與醋相伴,此次伴碟的是黑醋,非一般多用之紅色醋。黑醋內有數條幼薑絲,用筷子蘸了一點醋試味,甚是濃烈「撲鼻」。第一隻小籠包一夾,哎唷!可能底皮太薄,竟穿了餡,幸好一早以匙盛著,不然便浪費了金黃之蟹粉黃油。試第二隻時我唯有謹慎小心,小心翼翼地將黑醋之薑絲放在小籠包面皮上,再用筷子蘸一點黑醋灑在小籠包上,今次終於安全,無穿無爛!未嚐一口已見蟹粉黃油顏色滲滿了小籠包皮,可見皮薄;一口咬下,發現內裏餡料被蟹粉染成金黃色,口內湧出濃郁之蟹味,這刻簡直不欲咀嚼,如能讓這份感覺長留舌頭就太美妙!吃罷蟹粉小籠包,另一道菜式「蟲草花滑雞飯」隨之奉上,賣相亦屬極品,雖然份量看似較少。此蒸飯以小瓦罅盛載,由於瓦罅內邊有點飯黏,故相信飯是與瓦罅一同蒸煮的,而非飯熟後轉過去。此飯的配料有青豆角、松草花、滑雞,附以一小碟醬油。這碟醬油色黑,以筷子一蘸知是豉油,但這豉油鹹中帶甜,應是添加了一點糖,一般酒家食店都會這樣做。豆角值得欣賞,色帶青綠很嫰,沒有過份烹煮,吃下仍有一股青新味道。這飯之靈魂松草花又如何,樣子帶點扭紋,有點似伊麪之模樣,吃下去有點像金針,卻沒有金針那麼韌,味道屬清,平日都甚少吃這種食材,故極富新鮮感。滑雞方面本難有突破,此菜之滑雞是去皮的,雞肉面卻有著金黃色之雞油,確是很妙。內質方面做到滑溜、無骨,雞味雖不至於濃郁,亦算是水準之作。飯質亦表現得很好,不淋不硬,粒粒晶瑩,瓦罅邊緣之飯焦是Bonus。豉油我卻用得少,一道好的蒸飯是不用靠豉油的,今次此店確是做到了!我不是喝茶專家,這杯普洱茶我倒是不太懂得怎樣去鑑識,只覺味濃而不苦,生怕今晚會睡不著了!個人認為今晚兩道菜式都屬上佳之作,至於其他鎮店菜式其他食家在食評都頗有微言,這需要下次再作求證。當然此店點心的種類實是較少,希望將來能加添多點新之菜式。今次全單八折,以四十一元吃到松草花及蟹粉,今天真是走運! …Read More

星期日下晝諗住去上海街睇下啲裝修嘅嘢為新屋準備,點知去到嘅時候好多野都冇開門,咁又有少少肚餓所以就周圍去搵下睇下有乜食。行左出去彌敦道,抬頭見到一個好大嘅點心廣告叫做《功夫點心》,之前都有聽過個名但係就無試過,就跟住個路牌入返去砵蘭街度搵哩間點心連鎖店。入到去裝修都幾特別不過就真係逼咗少少,一坐低就先叫壺香片,茶係用茶包沖嘅,味道就當然冇咁好,不過就勝在方便企理。既然嚟得呢間連鎖店就當然要叫下佢嘅招牌點心:之後果兩樣應該係佢哋嘅招牌菜,但我就彈多過讚...…Read More
