與太太去馬鞍山體育館參觀中國國術表演,及去看太極服裝後,就去新港城食晚飯。之前曾去過一間食完就說不會再去的餐廳,今次正在躊躇著不知食甚麼之際,卻見到這間餐廳,上次想光顧時卻沒有位,今次如果有位就一定要試一試。莆田這名字在上次新加坡朋友來港時曾聽他提及過,原來這源自新加坡的福建菜餐廳很有名氣, 開業18年間已經在新加坡、馬來西亞、印尼、台灣、香港、上海及北京等地開設超過五十間分店,屢獲獎項,並連續兩年在新加坡獲米芝蓮一星獎。進軍香港四年已開設了八間分店,銅鑼灣店更連續三年成為米芝蓮推介餐廳,果然來頭不小。進入餐廳時已經差不多滿座,幸好還有一兩張枱,不致再碰壁。店內也有很多座位,還在牆上裝了很多玻璃鏡以增加空間感,另牆上還有些用紅磚作裝潢以添樸素的觀感,餐枱則以雲石面鑲嵌木框,結實耐用及易於清潔。第一次正式食福建菜,見餐牌上甚多選擇,很多菜色都想試,奈何只得兩人,唯有先揀幾款來試,我們點了10醉中的4樣:蝦苗拌頭水紫菜($52)、酥炒芋芯($89)、百秒黃花魚($69)及莆田滷麵($82),另加本期推介的紅菇燜豆皮($188)。先來的是免費的前菜油泡紫菜,味道清淡,勝在脆口。然後是莆田10醉之一的蝦苗拌頭水紫菜,頭水紫菜是每季紫菜收成的第一造,比較嫩滑及營養價值較高,我到潮汕南澳時也試過。紫菜加了麻油及有少許醋酸味,再拌以白蝦苗,味道香滑爽口,開胃醒神,真的會吃到停不了的。另一10醉之一的酥炒芋芯,但見只有十來件切成長條形的芋頭,上面放了些紫洋蔥,但賣價卻在前列之中,想必是製作過程繁複有關。芋條外面有一層糖膠,做成外脆的口感,令人聯想起潮州菜的反沙芋,不過酥炒芋芯不用沙糖而用糖漿,而且炒得十分乾身,味道倒還不錯。百秒黃花魚的名字特別,詢問店員時她答是真的煮百秒。魚身開雙飛,使受熱程度均勻,魚肉保持嫩滑而沒有腥味,魚湯鮮甜,加了薑蔥,沒有重胡椒的味道,取價亦很合理。而今期推介紅菇,原來是產於福建武夷山的野生真菌,湖南及廣西也有出產。紅菇是一年一度夏秋兩季,在高溫高濕的氣候下,於茂密椴木樹下的沃土上自然生長,在雨季後每季生長大約15天,而且需要在夏季的凌晨四個小時內採摘,所以非常難得。紅菇的營養價值非常高,含多糖、氨基酸、蛋白質、多種礦物質及維生素,有活血化瘀、補腎強身、降膽固醇及抗癌細胞轉移的功效,非常珍貴,是閩南婦女產後的補品,當地有所謂「從來無種,四季無花,越嫩越好食,越老越有渣。」的說法。紅菇含有天然色素,遇水變紅,所以紅菇燜豆皮端上來時看似是溫公齋煲。除紅菇外,亦有乾貝、蟶乾、蝦乾、鹽水滷豆腐及豆皮等6種主要材料,另外還有豬腩片、金針菇及香芹等,以小火慢燉而成,味道鮮甜。最後是另一道10醉之一的莆田滷麵,材料有大蝦球、蜆、肉碎、冬菇片、豆卜絲、紹菜及青菜等來煮米線、湯底十分之濃稠及鮮甜,爽脆的蝦球及蜆都很鮮味。平均消費每人$240,仍有興趣下次來試其他的菜色。…Read More

話說妹夫要請我食生日飯,佢推薦去米芝蓮一星既莆田食晚飯是日晚上六點幾去到,客人只有三兩個,本來仲擔心晏D會多人,但原來唔會有咁既事發生,因為附近都有唔少食肆一行四人,就叫左個四人餐,另外散叫左個酥炒芋芯、鐵板鹽焗蟶子兩款前菜 - 菜脯&鹽炒花生配脆紫菜菜脯既蘿蔔味甚濃,個人覺得濃到令我以為食梗菇味食品既錯覺炒花生唔太鹹,香口無油益味脆紫菜少食多滋味,多食感滯膩四人餐 ($758)蝦苗拌頭水紫菜整得好精緻,用一片薄青瓜片圍住D紫菜蝦味唔算好出,唔係見到都唔知有佢;但係紫菜係厚身版,較爽口,而且個汁酸酸甜甜調得唔錯九轉小腸我一直都唔食呢類食物,所以無食評,只有目評望落粒粒都好飽滿,仲有一圈厚厚既內臟脂肪…Not My Cup of Tea香拌海蜇頭海蜇我就食得多,海蜇頭就第一次食口感似雞軟骨,比較硬身;亦因為呢個特質,所以唔會太重醃料味,較為清新藥膳竹筒蝦用上竹筒裝住個湯同大大隻既蝦,呢款係色香味俱全既菜藥材味濃郁但唔會澀口,好熟悉既藥材但真係諗唔起係乜湯好清唔油膩 (最怕飲豬骨湯D油浮哂上面);蝦大隻彈牙有蝦味,唔似雪床蝦軟煎黃花魚UM..明明就係炸過既黃花魚再炒魚肉份量好多,應該唔止一條魚,味道OK。頭果幾件都唔錯,但個芡汁太多太結!! 食汁多過食魚黃金荷葉包 (4個)呢個無影到相,但賣相唔錯;饅頭先炸到脆卜卜,之後再灑上大量白芝麻食果陣先切開一半,夾上洋蔥豬肉絲黎食,味道唔錯,係油左少少包菜飯睇名以為係用菜包住D飯,但上枱果陣先知理解錯左,原來係”包含菜既飯”佢用既應該係絲苗米,飯好修長細粒,個人比較喜歡食飽滿既飯多D另外,炒飯色但無鑊氣且味偏淡,稱唔上難食,但亦都唔算好食,感覺我都炒得出芋圓花生湯 (唔記得左影相)望落似羮類既野,食落少少甜;花生有半粒狀亦都有片狀,味唔算太濃,岩岩好;反而芋圓有別於平時食開既煙韌款,口感似未煮熟既粉狀芋圓,雖然芋味重,但口感太奇怪啦酥炒芋芯 ($88)芋頭件件都好粉,似少甜版反沙芋;外層並非食名中既酥,而係硬,分量亦好少…鐵板鹽焗蟶子 ($99)一客有14隻,排得靚靚仔。上枱果陣都FEEL到好熱,陣陣鐵板飄香~聖子比D鹽夾得好實,所以即使熟左個殼都合得幾埋,令水份無咁易蒸發,聖子肉仍然保持到少許水份同彈牙簡單咁調料,先可以食到聖子既鮮味,感覺比芋芯更抵食,不竟芋頭價格比聖子平得多百秒黃花魚 (送,商場優惠)一黎同行唔中意食多骨魚,二黎已經食到好飽,所以結果打包拎走真係唔知可讚定可彈,呢度上菜好快,由第一道菜到最後一碟十分鐘左右就上哂枱;但問題係碟SIZE唔係細,跟本唔可能一次過放哂咁多碟野,攪到我地要快快手夾哂落自己個碗度…感覺似迫人快D食完快D走囉,唔夠親民總結,4個人食左$1100,價錢偏貴,但味道不如理想;食飯食到來去沖沖…米芝蓮一星,食物同服務都好一般…Read More

上個星期同爸媽去馬鞍山同婆婆拜年於是中午搵間餐廳跟爸媽午膳啦雖然馬鞍山位處較為偏僻,但估不到餐廳亦開了不少爸爸提議吃莆田,姐與媽當然絕無異議啦適時紫菜當造,於是點了一個「2人頭水紫菜套餐」冰鎭苦瓜,咬下去爽脆,帶微微的清甜蝦苗拌頭水紫菜餐前的涼菜,小蝦苗伴紫菜紫菜入口爽滑無砂,爸爸話汕頭的紫菜品質就最佳啦九轉小腸外皮炸得香脆,入口甘香酸甜的口感彌補豬腸的微膩度一品紫菜煎樣子似韓國的煎餅,紫菜切得幼細混合蛋漿煎至外表金黃,平時吃媽煎的韭菜蛋餅多紫菜煎蛋,的確第一次,有趣的一味菜興化炒米粉粉條炒的爽滑,加點辣醬,特別釣味亦有幾隻彈牙大蝦,肉質很飽滿的雖則話是2人套餐,但麵湯有齊,加上幾個小食姐三人亦夠吃呢!…Read More
