是晚選了於銅鑼灣的鬼滷晚飯。餐廳格局猶如一間西餐廳小酒館,吃的卻是新派潮州菜。坐下不久,店員便像酒吧一樣,先送上一碟焦糖爆谷。從氣炸鍋取岀帶點微暖,而且非常香脆,焦糖香而不過甜。剛好我和友人也很餓,可先吃一點再點餐。椒鹽普寧豆腐:其中一道前菜點了豆腐。一份6大件豆腐,就像是巨大版的椒鹽七味豆腐,外皮酥脆惹味,內裏的豆腐超滑且很香豆味,單吃已很好吃。新派炸豆腐沾點傳統普寧豆腐必配的溫熱韭菜鹽水,減低了熱氣感之餘加添了一些韮菜香氣。兩種食法個人也相當喜愛。蜆仔肉生菜包: 小時候跟父母去打冷總愛點蜆仔肉,貪其鹹香下飯。這裡注入新做法,泰式生菜包變成潮式蜆仔肉生菜包。蜆仔肉加了菜甫同炒,咸咸香香,加上脆米粉增加口感,用生菜包著,生菜爽甜平衡了蜆仔肉咸味。這道潮式生菜包令人頗驚艷。滷水拼盤: 到潮州菜館必須要試滷水。是晚點了滷水三拼滷水鵝肉、墨魚及豬仔髀。滷水鵝肉剛好給了鵝髀位置,而且去了骨,非常加分。鵝肉嫩滑入味,皮脂不過厚,入口滿口鵝油香。滷水膽有香料香味,咸度適中,能保留食材原味。墨魚煮得軟淋而不失彈性,墨魚鮮味,處理得非常好。豬仔髀滷得剛好,夠淋很香而入味,整支拿著咬,吃得過癮。底下亦付上滷豆腐,亦是很滑有豆味。特別欣賞店家於滷水拼盤上花了不少小心思。第一是滷水底下有微火溫著,不像平常打冷吃著冷滷水。第二是付上的每人2碟醬。一碟是常睡的蒜茸辣椒醋,另一碟是自家製的辣油。個人喜好先點了醋再點辣油,辣油不死辣且很香,帶椒辣香氣,更加分。這份拼盤相當高分。蠔仔粥: 是晚亦點了一份2人份蠔仔粥。蠔仔量不少,新鮮大大粒。入口熱辣辣很暖胃,亦加了一些炸蔥蒜增添香氣。店家非常細心,將蔥、菜甫、芫荽分上,讓食客隨個人喜好添加。如我倆般一個愛芫荽一個不愛,亦滿足到各人所需。整體食物質素很好,很欣賞店家做新派潮州菜加入新創意或小巧思之餘亦不失傳統美味,讓人感到驚喜。而且以銅鑼灣區來說定價算是實惠,性價比相當高。必定回訪。…Read More

朋友找到一間在銅鑼灣剛開業的食肆,名叫「鬼滷」,邀約一同前往。全店以紅色作主調,燈光柔和,像一間充滿格調的西餐廳,但其提供的食品主要是中國潮洲料理。店員非常有禮的安排我們座位。我們坐下不久,店員送上一碗爆谷。原來在晚市時段,此店會為客人免費送上爆谷作小食,真的與傳統中菜的前菜不同。❣️ 主菜:選三項 (滷水鵝肉、鵝腸和豬肚)主菜以滷水食品為主,可選三項或五項。我們今次先選三項 - 滷水鵝肉、鵝腸和豬肚。食品送來了。整碟放在火爐上,食物可保持温暖。滷水食品當然要配搭蒜蓉白醋,店員除了送上蒜蓉白醋,還有自家製的辣椒醬油。主菜份量真不少。鹵水湯汁清香味醇,能吃出香料的層次,不會過鹹。鵝肉肉質軟腍,肥瘦適中。沾點蒜蓉白醋,酸中更好帶出鵝肉獨有的香甜,肉味齒頰留香。鵝腸爽脆帶甘香的鹹鮮味,沾點辣椒醬油,又另有風味。豬肚甘香爽口富彈性。還有滷水豆腐,口感細嫩幼滑。❣️ 蘭王蛋蠔餅蘭王蛋在日本屬頂級蛋,蛋香味非常濃郁香醇。金黃色的蠔餅上還加上木魚碎,木魚碎隨著熱呼呼的蠔餅散發的熱氣微微飄動,為蠔餅增添了動感和鮮味。蠔餅邊緣口感香脆,蠔仔肉也肥美鮮甜,味道鮮美。❣️ 椒鹽普寧豆腐熱呼呼的椒鹽普寧豆腐,外酥內嫩。豆味香濃,豆腐非常滑溜。配上自家製韮菜鹽水,可解油膩,更具風味。❣️ 蜆仔肉生菜包肥美的蜆肉,滿滿的一碟,混入韮菜和菜甫,還有脆炸米粉,口感鮮香,不油腻。以新鮮爽脆的生菜包起來吃,口感更層次豐富,鮮味爽脆。店員服務態度友善,還告訴我們下個月的餐單將會加添更多食物選項;而慢煮食品和海鮮需預訂。我已提醒朋友,下次訂位時記得要預訂啊。…Read More
