我平日與好友食飯, 多數係日式和西餐為主, 早前有朋友提議食中菜, 選揀了位於鰂魚涌新開的東海酒家. 見到餐牌有不少懷舊菜式推出, 我們也點了幾款. 先來一個小食, 懷舊蝦多士. 蝦多士夠脆身, 時間控制剛好, 唔會太硬, 口感不錯. 大良蟹肉炒鮮奶. 睇來好似好簡單, 其實好考師傳功夫. 鮮奶能夠保持滑身, 唔會老身, 加上蟹肉, 多了一份鮮美, 雙重口感. 蝦籽柚皮. 這個菜式好多酒家已經無得食, 估唔到這裡有, 所以一見到就點來試下. 這個絶對係花時間和心機的菜式, 當中的步驟繁多, 而且要整得好食也不容易. 這個柚皮入口好鬆軟, 感覺完全唔會柚皮, 最重要係唔苦, 真係令人好回味. 沙拉骨. 這個家常小妙, 我自己鍾意食. 肉質唔會太乾, 加上醬汁, 好啱依加食. 鍾意食懷舊小菜的朋友, 可以來這裡重拾當年的感覺.…Read More

東海酒家(太古坊分店)隣近鰂魚涌地鐵站,最近更以懷舊茶居為題,推出一系列懷舊菜式及點心,務求將最傳統的味道,再次呈現給一衆食客。懷舊蝦多士 ($60)中西合璧的演繹,鮮甜爽彈的蝦肉配上香脆的炸多士,那有不心動的道理,可惜每人只有少量,有點唔多夠喉。東海小炒皇 ($88)食材非常豐富,包括韭菜、腰果、蝦乾、芽菜及小魚乾等,香口、爽脆共冶一爐,用來送啤酒更是一流。蝦籽柚皮 ($128)柚皮得浸泡數小時去除苦澀味,再燜煮逾8小時,方能令柚皮軟身、入口即溶,配上適量的蝦籽,滋味更好。大良蟹肉炒鮮奶  ($78)鮮、香、滑的組合,嫩滑的牛乳,色澤雪白,油分充足,加入大量鮮甜的蟹肉,是另一味老少咸宜的佳餚。沙拉骨 ($58)炸得香脆的肉排,配上滋味的沙拉醬,重口味人士之選。江南五繡($68)食材有蓮藕片、雲耳、蜜糖豆、馬蹄和百合,清甜爽脆,健康有益,正好平衡巳吃到肚滿腸肥的胃腸。在懷舊菜買少見少的今天,值得大家專程到訪;細意品嚐。…Read More

已經很久沒有見一班舊同事了,早幾天他們與我一起相約於鰂魚涌的東海酒家吃午飯。原來這裏設計很懷舊也有山水畫,餐具亦有紅色的小金魚! 而且每個窗戶都是向海景的,令人食得舒服談得開心 !一大班人叫了很多特色點心和小菜。點心方面:古法金錢雞($88),是我最喜歡的,上層是用蜜汁燒雞肝外邊香脆,味道帶有濃郁雞味,( 就有如鵝肝一樣 )下層有一片蜜汁厚义燒及蜜汁燒肥豬肉,好奇怪义燒雖厚,卻不鞋口,而肥豬肉竟然有咬口!最底層是一片中式薄麵麭,本身無味,但夾在這幾件濃郁肥美的食物中,即時起了中和作用!第一次真正見識古法金錢雞,大開眼界!江南百花卷($88),外面好像中式酥皮卷著蝦肉馬碲粒和芫茜,雖然幾種食物都有他們獨特的味道和口感,但卻非常夾得來,好想食多幾件呀!懷舊沙律明蝦角 ( 大點 ),入面全是蝦肉,還全部挑走了蝦腸,蝦角外皮炸得脆囗,鬆化,蝦肉彈牙新鮮!懷舊千層峰($55),外表好像分蹄,很香麻油味,看上去很簡單,但其實製作過程應該頗複雜,因為看見有肉丶豬耳軟骨等,而每片花紋不同,我相信應該是將所有材料煮好後放入盛器,然後冷藏,成形再切片!小菜方面:最欣賞懷舊蝦多士($60),一大隻去腸及開邊的鮮蝦擺放得像一朵小花在三角形的麵包上炸熟。一口咬落香,脆,有鮮𧎚味且彈牙!蝦籽柚皮($128),小孩時和家人在洒家最喜歡的小菜!雖然材料只是柚皮,但由厚厚的柚皮,如何出水幾次,再燘煮,記得老爸老媽都話是非常多工序!而這次蝦籽柚皮,賣相很像鮑魚,食落口感不會 「太削身」,味道很有肉味,與以前的柚皮味道有過之而無不及!大良蟹肉炒鮮奶($78), 這味菜現在香港很少有了!不過自己剛剛學煮飯,都曾經跟食譜學過,如果沒有記錯,應該是蛋白加鮮奶炒,火不能太猛,手要快,不然鮮奶過老便不好吃了。而這𥚃的大良蟹肉炒鮮奶, 炒得恰到好處,蟹肉沒有殼,價錢也很化算呀!這裡的沙拉骨 ($58 ),跟外面的做法不同,初初不知是什麼,小小一塊排骨,外層沾有白色點點酸酸甜甜的味道,很好味,亦不會過膩. 老中青少都適合!今次不只可以見番班舊同事,還可以食回兒時懷舊食物!仿佛進入了時光隧道啊!…Read More

難得今日全家人都可以放假,又見到東海 翻新後生開重新開張,啱曬鐘意食中菜嘅老豆。見佢宣傳緊懷舊小菜, 當中竟然有我恨食好耐嘅蝦子柚皮($128)同埋古法金錢雞($88),於是即刻點咗。 另外再嗌咗幾個小菜,估唔到價錢一啲都唔貴,啱曬荷包肝硬化我哋。😂蝦子柚皮同金錢雞,係我一直都好想食嘅菜,因為知道佢工序製作繁複,尤其係金錢雞,今次係我人生第一次食!聽阿媽講原來整個蝦子柚皮要首先啤水啤好耐, 之後又要出水搾乾佢, 然後拎去炸再用上湯浸佢成日, 所以即使鍾意煮餸嘅丫媽都從來未煮過。 而呢度嘅柚皮真係炆得好林,芡汁好入味, 雖然唔打上面嘅蝦子數量比較少賣相唔係咁靚, 但味道係好味嘅!但最令我地興奮嘅係終於可以試到金錢雞,但原來金錢雞入面竟然係冇雞肉嘅!! 佢原來係總共有三層:上面一層係燒過嘅雞肝,中間係腩肉下面嗰層係肥肉,最底就配一塊好似饅頭嗰啲咁嘅麵包。 因為串住上面嗰啲嘢喺度燒嘅時候個樣似銅錢,所以舊時啲人就叫佢做金錢雞! 味道真係好好味,因為我成家人都鍾意唔介意食內臟同肥肉,所以我哋全部都覺得好正! 但對於其他唔食肥嘅人可能就麻麻。另外我哋仲叫咗一樣好特別嘅餸叫做大良蟹肉炒鮮奶($78)。嘩,佢一上枱嗰陣時大家都以為係賽螃蟹,雖然冇賽螃蟹咁滑,但起碼咁樣即係用少啲油炒,同埋有淡淡的奶味,食落去好清甜配埋蟹肉更好味。另外仲叫左江南五綉($68),東海小炒王($88)同埋沙律骨($58)。 除咗個小炒王味道比較普通,另外兩個都係水準之上嘅 。最緊要就係呢度啲小菜真係唔貴成家人最後都食得好開心。…Read More
