睇完戲在附近一帶覓食,竟見新開了一間鐵板牛肉店,回憶起上次鐵板燒牛肉自覺技術不夠,令牛肉容易燒至過熟,今次要再次挑戰煎牛扒手藝!無求練到爐火純青餐廳以深木色為主,鋪面細小大約可容納最多20人。大門一打開,濃郁的牛排油煙味隨即湧出,在這一瞬間突然有二個諗法,肚子餓的我嗅到牛排氣味第一想法表示份外飢餓,第二想法覺得那股香氣或許會跟隨我回家餐牌簡單只有6款牛肉部位選擇包括肩膀位、上腰西冷、橫隔膜腹肉、側腹、肩胛及A5和牛腹,加$30可從白飯、薯條、湯、沙律及汽水中五款選三款轉成套餐,另外貼心地附有牛部位指所南,說明部位位置及其肉質與口感,完全解答了我對牛部位的不熟識,亦可以了解自己喜好選擇喜歡的牛質感牛肉湯內有2片青瓜及1片冬菇,味道非常清淡,牛肉味欠奉,勝在油份不多,一點不覺油膩感都沒有即炸薯條熱烘烘並炸至黃金色,屬粗身炸薯條能清楚品嚐到其薯味及薯質感,自行灑少許鹽及胡椒更惹味,最後一款我選擇了汽水。經上次經驗後,得知牛肉在鐵板上非常快熟,所以決定吃一塊切一塊,這樣得注專地控制該牛肉的生熟度。不過用膳速度也是因素之一,如用膳時間太長而石板已失去熱力,會令完塊牛扒外焦內生,如先將牛扒完全切成小件再進食,可能令牛扒容易快熟口感煙嚼,所以速度與時間必須掌握得非常恰當石板剛到猛烈地發出咋咋聲響,油份亦不由自主地四濺,幸好送上時附有吸油紙蓋著,減低被油份的攻擊。我所選的橫膈膜腹肉呈長條形,急不及待的我已趕快切開,同樣切開也有一定難道,因為石板上牛肉真的只有1成熟,外熟內生。今次掌握了石板燒牛排之技術,牛排煎得剛剛好,肉質柔嫩中不失嚼勁,牛味頗香濃,沾上阿根廷青醬鹹中帶點草青味是頗青新的選擇,而沾上紅酒牛肉汁則帶出牛肉味,但略嫌紅酒與牛肉味同樣不足,個人是較喜歡阿根廷青醬!外形較橫膈膜腹肉扁平,牛部份指南介紹牛側腹是位於牛胸和牛腹之間的部份,含有細緻脂肪紋路,果真切下去質感爽嫩,肉質軟腍,咬下有豐富油份溢出,不用太用力咀嚼而消失於口內,油脂豐富較適合與白飯一同享用,由於牛側腹較薄身所以熟速度較快,個人先把牛排切成小件,燒熟所有牛肉後並放在飯中稍後慢慢享用,可避免牛肉過熟令肉質變得煙韌。2款牛肉均沒有添加任何調味,自行加少許鹽及胡椒會令牛味更突出!石板燒牛肉就是一項與時間競賽的活動,捉緊時間就能吃到美味牛肉,同時燒牛扒的油煙亦提緊著我地衫尾,帶著它回家~幸好只是小氣味,並不濃烈…Read More

石燒牛扒係香港掀起一股熱潮,陸陸續續有好多間主打石燒牛扒既餐廳開業,今次嚟到荃灣試下呢間「牛県」。環境店舖不算大,坐位較逼,但食物上枱速度都可以。餐牌石燒牛扒分六款,分別係平鐵牛扒、上腰西冷、牛橫隔膜腹肉、牛側腹扒、小牛柳及日本A5和牛腹。本身想試日本A5和牛腹,估唔到餐廳已經售罄,就試左牛橫隔膜腹肉及牛側腹扒。牛橫隔膜腹肉(200g) $128揀左紅酒牛肉汁,牛橫隔每隻牛只可以切岀一塊牛橫隔扒,味道會較濃郁且柔嫩,切落去牛肉容易離刀,肉質帶少許沙沙口感,口感頗鬆化,加少少粗鹽調味,更加美味,油分較多,係鐵上彈油情況較厲害。+30可以五選三,分別係飯、湯、沙律、薯條及汽水中選,要左薯條、汽水及飯,可惜薯條油溫唔夠,有啲生。牛側腹扒(200g) $128呢份就加左沙律及汽水同揀左阿根廷青醬,牛側腹屬牛胸及牛腹之間既部位,帶脂肪,肉質會較有咬口,比起牛橫隔膜腹肉口感較厚實。羽下牛扒(200g) $158餐牌上冇,而係店內手寫既限定款式,羽下牛扒係位於鞍下既下部,因為牛肉既油脂分布猶如羽毛,所以被稱為,所以有呢個名稱。口感同無骨牛小排相似,食落較多筋,但牛味係三者之中最濃,不過牛橫隔膜腹肉比較岩我口味。總括而言,呢間石燒牛扒性價比高,價錢便宜,牛扒質素唔錯,會再來幫襯!…Read More

同女朋友去荃灣廣場睇戲,路過這間鋪頭見到好多人就過去八下,原來係一間新開嘅石燒牛扒,石燒牛扒近排真係大熱,但這間比較特別,標榜濕式熟成(Wet Ageing) 牛扒,我們買完飛返轉頭過來試一下,所以先攞飛回來後,等了不久就可以入座餐廳提供六個牛扒部位,其中五款利用濕式熟成處理,同市面一般急凍牛扒好唔同另外亦有每日精選師父會把牛扒煎至一成熟,然後放在高溫熱石上上菜,客人可按個人喜好於石板上煎至心水熟度牛側腹扒 (prime beef flank steak) - 位於牛嘅則腰位置,脂肪分佈平均,油香豐富,肉質較有嚼勁同口感,而且肉味較濃,但因為纖維多,需要切成薄片吃,這樣處理就不韌,所以比較難處理,好少地方有得食,今日試到,正牛橫隔膜腹肉 (prime beef hanging tender) - 每一隻牛只可以切出一塊hanger steak,較為珍貴,味道濃郁,肉質柔嫩。之前食燒肉成日都話有牛橫膈膜食,但就是細細塊,今次終於可以當牛扒咁樣切,油花密布,油香味重除了提供岩鹽、黑椒調味之外,每款牛扒可選配一款自家特製醬汁,分別是:紅酒牛肉汁 - 紅酒味濃郁,而且加入意大利黑醋,更突出濃香肉味;阿根廷青醬 - 有檸檬汁、羅勒,酸酸地,好清新,令牛扒變得不會太膩日本A5和牛腹 Tomobara - 油花分佈平均,入口即溶,推出限時以優惠價$98就食到另外加$30選配套餐,有湯、飯、沙律、薯條、汽水,其中五選三!我哋當然有轉,揀左湯、薯條同汽水薯條 - 用粗身薯條,所以薯味很重西洋菜湯- 超濃郁,有點似西洋菜蓉…Read More
