To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 晌香港,印度菜好普及,素食菜館近年亦大行其道,但專賣印度素菜嘅餐廳你又知唔知有幾多家?我就唔多清楚嘞,只喺最近就去過尖東嘅「Sangeetha Vegetarian Restaurant」一掃印度素菜,食素,就梗要預埋喜歡食素菜嘅老婆啦。呢家餐廳位處一入夜就鬼咁靜嘅永安廣場,餐廳內嘅環境好簡單,好平民嘅感覺,完全無咩華麗嘅裝修,感覺就喺既然食素,就毋庸奢華,但仍光鮮企理,菜式定價亦親民,更唔收加一,怪唔得只喺閒日夜晚,都有咁多「鄉里」幫襯,唔少喺一家大細,猶如飯堂。打開餐牌,第一版就有餐廳嘅詳盡介紹。原來其歷史不短,而且,更喺跨越多國嘅連鎖餐廳。由於餐牌都比較厚,又易屈起埋,非常難影嚟俾大家參考,好彩事後發現佢哋有設立網頁,更上載整個餐牌,故此索性編輯一下放上嚟等大家易於參考。如你所見,菜式非常之多,由湯品、前菜、炸餅、什錦烤串、麵條、蒸米糕、印式輕食、麵包及咖喱、煎餅、班戟、掛爐烤餅、米飯、印度套餐、鐵板、北印度風味、兒童套餐、蔬菜、飲品、鮮榨果汁、奶昔、小食,到甜點,一應俱全,多到眼花繚亂。餐牌唔止印刷精美,亦中英對照,有啲店員仲識幾句廣東話,唔使太擔心溝通問題。芒果味印度奶昔(Mango Lassi)$35如無記錯,小弟嚟親食印度嘢,都喺必叫呢一款芒果味印度奶昔,有啲就譯為芒果酸奶,因為喺以鮮芒果肉跟乳酪打成,故入口有陣陣醒胃嘅乳酪酸香味,而且,芒果味亦香甜濃郁。菠蘿汁(Pineapple Juice)$35呢度有唔少果汁選擇,更標明鮮榨,呢杯菠蘿汁一睇就知喺鮮榨,皆因仲睇到果汁內有唔少果肉嘅纖維,入口菠蘿香味天然清甜,不過,唔知喺咪講求健康關係,上文杯芒果酸奶,呢杯菠蘿汁,以及稍後介紹嘅石榴汁,都唔多冰凍,只喺入口涼涼哋嘅感覺。石榴汁(Pomegranate Juice)$45好少飲石榴汁,所以,幾有新鮮感。色澤鮮紅,望落仲以為喺西瓜汁添,試咗一口,雖然石榴味都好出,但對比起上述兩杯飲品,味道比較清淡一啲,但感覺就覺得好健康咁。咖喱角(Samosa)$40幾常見嘅印度前菜,既然喺素版,裡面就當然只得啲薯仔、蔬菜、青豆啦,特別之處就喺包到拳頭咁大。外皮口感比較酥化,卻唔油膩,配以印式甜酸醬及薄荷乳酪醬,食落更清爽。洋蔥炸餅(Onion Vada)$60炸餅無論外形,抑或口感都有啲似炸薯餅,我哋揀咗洋蔥口味,不過,洋蔥味嘅感覺唔喺好強,而且,好大件一個,幾個人共享就最好,一人一個都嫌太飽肚。配上嘅醬汁都好特別,白色嘅有少少芝麻香、又辣辣哋;白色隔離嗰兜都喺有點辣,但就帶薄荷味;再隔離就喺常食到富香料層次嘅咖喱;最邊邊大兜啲嘅喺咖喱雜菜。蕃茄香辣班戟(Tomato Chili Uthappam) $70無咩辣椒公仔嘅溫馨提示下,今勻真喺中咗伏,咪以為喺表面啲紅粉辣,喺班戟裡面堅有唔少青辣椒,嗰啲先非常之辣,而班戟嘅質感正正就喺平常晌麥記食早餐時嘅熱香餅嗰種,軟綿綿,但配鹹食個人感覺一般。蘑菇咖喱(Mushroom Masala)$75瑪沙拉喺混合多種具芳香性嘅香辛料所做,喺印度料理嘅萬能香料,就算呢道菜只配鮮蘑菇,一樣好好食,啲蘑菇好爽口,個汁底稀杰度啱啱好,香味有層次,微微哋辣,十分惹味,無論撈飯,抑或配印度烤餅,同樣咁正。蒜香烤餅(Garlic Naan)$40既然叫咗道瑪莎拉咖喱,咁就梗喺要叫番一客印度烤餅,蒜香口味簡簡單單就最合心水,一客有4件,仲加咗少少芫荽碎,啲烤餅入口香,配咖喱真喺一流,略嫌啲餅稍為韌身咗,唔知喺咪一早嚟到,擺耐咗嘅關係。咪睇啲店員好似茶記啲阿叔,個個感覺都幾親和,唔會不耐煩咁,招呼都幾好架,而且,上菜速度勁有效率。此外,枱上放有收費嘅樽裝水,但同樣有放有水壺和水杯,有免費開水供客人飲用。越夜,就見越多「街坊」嚟幫襯!…Read More

話說,我真係好鍾意食印度薄餅Naan...... 早前有位印度Mix朋友仔介紹我去尖東試一間印度素食餐廳Sangeetha。雖然見每個Staff都係印度人,不過佢地都有職員識廣東話架。就算唔好彩無人識中文,Menu係中英對照,所以唔洗膽心點唔到菜見到餐廳淨係得我們一枱香港人,我就知我會食到好正宗的印度菜!到印度餐廳,一定不能錯過好出名的芒果味印度奶昔(Mango Lasssi)!味道似芒果乳酪飲品,酸酸甜甜好正架!另外,朋友仔就叫左杯朱古力奶昔(Chocolate Milkshake),鍾意朱古力味的朋友,記住要攪勻痴係杯上的朱古力醬哦。原來印度都有佢的芝士架,身為芝士迷的我,即刻叫返碟!呢碟係印式芝士65(Paneer 65),切到一粒粒的芝士痴左粉去炸到脆卜卜,芝士味道唔算太濃,吱埋個青檸,就算唔係芝士粉絲都應該接受到。比大家睇睇芝士的橫切面,個粉其實好薄,而且唔會好油膩,想食真印度菜的大家不能不點。食印度菜,點可以少左咖哩呢?餐廳提供多種不同的素食咖哩,當中包括豆咖哩、薯仔咖哩、蔬菜咖哩。今次,我們就點了一份印式芝士黃油咖哩(Paneer Butter Masala)。咖哩味好香,而且唔會太辣。加左牛油令咖哩更香滑。不過印式芝士,我都係鍾意炸到香口個款多D。食咖哩點可以少左印度烤餅(Naan)呢?我們今次就叫左兩份,一份係黃油烤餅(Butter Naan)及一份蒜香烤餅(Garlic Naan)。兩款烤餅都係非常香,食得出係岩岩新鮮出爐!我最鍾意的係超級香口的蒜香烤餅,蒜蓉應該係用了新鮮切的蒜頭先會達到呢個香味,加上少量的芫茜,令到烤餅一上桌已經香氣撲鼻。另外,我們都叫左有餡的薯仔餡餅(Aloo Paratha)。呢個餡餅用左兩片煎得香口的薄餅去夾住好香胡椒味薯仔餡,點一點酸忌廉去平衡下,令人停唔到口。另外,我們仲叫左份Dragon Mushroom。個人覺得呢個菜式好岩香港人口味,利用洋蔥及Nuts炒香蘑菇,非常香!我同朋友仔食到停唔到口。最後,我們叫左份印式甜品Kulfi,其實呢個甜品唔係Menu度架,係職員介紹的。Search返呢個被稱為印度雪糕,主要用奶同Nuts整成,我個人都幾鍾意食奶款的製品,食落同平時的雪糕無咁實,宜宜有不同的香料同Nuts係入面,值得幾個朋友仔黎叫一份share試一試。==============================鍾意我的分享的,我邀請你訂閲我的食評,我會繼續與大家繼續吃掉世界,甚至吃掉整個宇宙!(哈哈)…Read More

合港人口胃的正宗印度素食

以個人經驗來說,之前所接觸的印度菜都有肉食提供,但其實印度因為宗教信仰關係,有不少人都是素食者,印度餐廳會清楚寫明是否有素食提供,對素食者來說,在印度的素食選擇實在比香港更多!尖東永安廣場之前只知有永安百貨,原來搭扶手電梯上一層就有兩間印度素食餐廳。新意達面積很大,裝修簡潔,餐廳由經理到侍應再到客人全是印度人,可以想像到口味一定十分正宗。餐廳原來係連鎖集團,世界各地都有分店,亦拿過不少飲食獎項。叫餐時留意到原來餐廳不設加一,但客人可以將小費放入收銀前的小箱內。印度素菜種類很多,從湯類、小食、烤餅炸餅、麵飯、主菜以至甜品等,每款種類起碼有十多二十款,看得眼花撩亂,即使全素食亦不會覺得寡口。自問對印度素菜認識不多,只點選較合個人口胃的菜式。印式芝士65最初以為印式芝士內裡會似西式芝士般比較煙韌,原來印式芝士更似中式口味。外層炸脆,灑上椒鹽,內裡質感似食硬豆腐,個人覺得此道菜更似椒鹽豆腐,不過豆腐質感似硬豆腐。碟上附上半個檸檬,灑點檸檬汁酸酸的更加開胃。香料薯仔餡煎餅Masala Dosa乃南印度美食,Masala是綜合香料的意思,Dosa是一種用米漿做成的可麗餅,此煎餅中間加入薯仔蓉捲起。煎餅吃起來很薄很酥脆,配搭上各種不同的香料醬點食。蒜香烤餅Naan這個字其實就等同於麵包,是一種常出現在印度的扁平麵包,可以搭配各式印度醬汁當作主食吃。此烤餅上有大量蒜粒,烤蒜粒的香氣配上柔滑軟香的烤餅,簡直就是絕配!咖哩燴蔬菜此菜乃什錦蔬菜加上椰槳及咖哩香料煮成,醬汁非常杰身,搭配烤餅或米飯非常匹配。黃秋葵咖哩煮秋葵料理經常遇到的問題是切開的秋葵黏液相當多,很難除去滑潺潺的感覺。但用秋葵煮咖哩則無此問題,黃秋葵咖哩香料味非常濃郁,連不愛食秋葵的老公都讚好,謂印度素食帶有濃郁咖哩及香料味,比中式素菜更合胃口。腰果黃飯一向對印度長身香米帶有好感,印度香米有一種堅果香味,黏性低,口感較乾硬,炒成印度黃飯乾爽米香味濃。腰果仁加入其中更增強其堅果香味。印度香料茶Masala Tea與港式奶茶相比多了一份香料味道,茶香、奶香,再加上香料香,於飯後喝上一杯令人滿足!如果放開懷抱,多嘗試不同國家美食,就會發現更多新天地!…Read More
