現在香港食海鮮,雖然唔少地方,但底食大件新鮮唔呃秤的已經少之有少,三聖算是自買加工少數中比較呃得少又算平秤的地方。今晚來到興記,但這間出名偏偏是燒鵝一睇就知好肥的燒鵝,諗住皮脆肉嫩,第一口食胸就十分失望,肥就十分肥,皮硬唔係脆,肉唔嫩,髀肉還可以,不過味道唔差,酸梅醬幾好食。又是出名唔一定好。之後都是自買加工的,除了豉椒蟶子比較濃味外,其餘都偏淡味,由其蒜蓉粉絲蒸扇貝。今次海鮮都十分滿意,在碼頭買了$1990海鮮。結帳是9斤加工費加燒鵝$1044,價錢算正常價。服務員都肯換碟,環境有點迫,不過都接受到。入屯門食海鮮,當然是三聖,燒鵝?算啦…Read More

朋友一行七人,去左屯門度周未,屯門之友按排我哋去三聖買海鮮。天真的我們,以為屯門海鮮會價廉物美。誰知,一問價,下,仲貴過大埔筲箕灣香港仔?唔係啩。於是,臨時取消海鮮大餐,只揀左扇貝及紅肉花蛤($280),交由興記加工烹調($166),兩碟菜已花了$446。椒鹽鮮魷賣相吸引,惜炸粉極厚極多,啖啖都係粉漿,魷魚偏少;咬下時粉漿與鮮魷完全分崩離折,實為一失敗之作﹗油鹽水紅肉花蛤味清淡而鮮甜,大花蛤有紅邊,樣子有d 似北寄貝,比一般細花甲或蜆夠有肉地及鮮味,底有粉絲索味,不錯﹗馳名燒鵝名不副實,半隻售二百元,係屯門而言絕不便宜﹗送上枱時,小妹第一個反應是:色澤唔夠金黃香脆喎﹗燒鵝賣相偏黑,一試,皮燒得不算脆,肉汁頗多,但皮下滿佈肥膏;肉質也是偏靭而欠嫩滑,鵝味也不算濃重;肉與骨也較難分離,需費牙力去撕嚼。味道不差,但說不上頂級﹗羅漢齋豆腐材料有菜心、木耳、竹筍、蘑菇、芽菜及炸豆腐卜,惜豆腐卜欠缺豆腐的清香味,以太白粉水勾芡,味道清淡。咕嚕雞球味道欠佳﹗雞球炸得不夠脆,偏淋,雞球也冇味雞味;醬汁唔夠味,不甜不酸,失敗﹗腐乳通菜味道OK,加左少少紅椒絲,有點辣;腐乳份量偏少,通菜夠嫩滑,冇咩渣滓。蒜蓉粉絲蒸扇貝煮法簡單,只要材料夠新鮮,豈會有難吃之理呢?碩大扇貝上灑上蒜蓉粒,再鋪點粉絲,慢火蒸,蒜蓉味就滲入扇貝中,最後再灑上蔥粒點綴,再淋上豉油,味道香濃之餘,也不會掩蓋扇貝本身的鮮味。扇貝肉厚,不過,可能由於較大隻,故扇貝肉質過老過韌過嚡。粉絲往往好吃過扇貝,它借了扇貝的鮮、蒜茸的香、豉油的鹹,絲絲縷縷纏繞不清的,確是美味﹗…Read More

久未踏足新界大西北,今日難得來到附近遠足,晚上順道到聞名已久的三聖吃海鮮。我們先到海鮮街略購海鮮,然後本想光顧邨內酒樓,但適逢有飲宴被包半場,而餘下位置早已爆滿;最後臨時轉陣,改到附近的興記大牌檔來料加工,吃過痛快。 興記為一般「冬菇亭」改建而成,除了見慣的大牌檔位置,還特設空調「雅座」。而小店為了應付慕三聖海鮮街之名而來的客人,在狹窄的通道兩旁位置也擺設桌椅,環境較係擠迫,而出入要小心之餘,不熟地頭者更可能會迷路哩。 甫坐下,我們把預購的海鮮交由店員處理,而因做慣來料加工的關係,店員不用半分鐘便提出不同海鮮的烹調方法,非常熟練。最後我們再加個馳名燒鵝和幾道小菜,便成了今晚的即興海鮮局。 蒜蓉粉絲蒸扇貝:巨型扇貝以最普通的蒜蓉粉絲蒸,蒜蓉味略略滲入扇貝中,味道香濃之餘,也不會掩蓋扇貝本身鮮味;而清蒸的火候掌握得好,不會過老過韌,加上扇貝有近豉油碟般大,故除了味道好,口感也極佳,當然食材新鮮佔了很重要的一環吧。 椒鹽瀨尿蝦皇:同屬巨型的瀨尿蝦皇以椒鹽處理,再切成頭尾二段。椒鹽味沒有想像中段重,但瀨尿蝦本身鮮甜肉厚,加上蝦膏多,鮮味絕不比扇貝遜色,惟吃時要小心被尖刺所傷哩。 豉椒炒蟶子:撇去貴價的巨型蟶子皇,單以豉椒炒蟶子肉,賣相當然稍遜,但味道卻絕不差。蟶子新鮮,乾淨無沙,濃郁豉椒味道完全滲進蟶子內,惹味得來帶點微辣;加上去殼蟶子特別足秤,一大班人吃極也吃不完,抵食又美味,一流。 油鹽水蝴蝶蚌:資金有限,不可再選海斑肉蟹等高價貨,於海鮮檔見有少吃的蝴蝶蚌,似乎頗新鮮,就來了一斤,以油鹽水煮。蝴蝶蚌與蟶子一樣乾淨無沙,比吃慣的大蜆較肉厚,入口更為鮮甜;油鹽水處理後也變了啖啖海鮮湯,單喝拌飯也可,正! 馳名燒鵝:馳名燒鵝每隻售三百元,以大牌檔而言絕不便宜,我們來了半隻。上檯賣相甚佳,入口皮不算脆,肉汁較多,但肉質卻不太嫩,而鵝味也不算濃重,味道不差但說不上頂級,以鎮店之名無疑有點名過於實,較為失望吧。 香酥炸大腸:大腸外皮炸得不夠脆,可口不足還有點硬,加上也炸得不夠透,內裡脂肪仍呈膏狀,沒有綿軟口感,反而有點膩,水準之下。 中式肉排:味道和質素與一眾大排檔相近,中規中矩,不見突出,算是為「食肉獸」添點合符口味菜式吧。 蝦乾小炒王:除蝦乾和腰果外,其他食材沒有像坊間般切得細碎,感覺比較怪。而味道亦可能食材較「大件」而難以滲進其中,變得相對淡口,不能像平常作為佐酒小吃般品嘗吧。 砵酒焗桶蠔:桶蠔略作煎炸,但粉漿較厚增添膩感,砵酒味也沒有想像般濃郁,最後薯片變了主角,成了搶手的佐酒小吃哩。 以海鮮來料加工而言,這裡處理很得宜,絕對沒有浪費新鮮的食材;但單點店內其他小菜,水準則較為飄忽,有點顧此失彼的感覺。有聞邨內酒樓質素也不錯,而且價錢不高亦坐得舒適,有機會必要一試,再戰三聖。 …Read More
