今天和家人來屯門三聖吃海鮮,我們在旁邊的海鮮市場買了$5000海鮮,之後再來這間餐廳加工吃飯,今次吃的海鮮非常豐富,包括了阿拉斯加長腳蟹、瀨尿蝦和海斑等等。阿拉斯加長腳蟹:這份長腳蟹買回來$1300左右,我們選了清蒸,蟹鉗內充滿著大量蟹肉,嫩滑可口,香甜美味,大家都吃得津津有味。椒鹽瀨尿蝦:瀨尿蝦的皮十分薄和香脆,可以連皮一起吃,而且肉質十分柔軟嫩滑,鮮美多汁,是全場最驚艷的菜式。白灼海蝦:海蝦十分爽口彈牙,每一口都相當鮮甜美味,是一道美味的開胃菜。清蒸海斑:由於不想每次都吃東星斑,便在海鮮檔問店員那款海斑美味,店員推介了這款,說了名字可惜忘記了,不過魚肉非常柔軟,入口即化,每一口都充滿著淡淡的鮮甜味,店員沒有介紹錯。至於其他海鮮和小菜便不再詳細介紹了,總知每一道菜都相當出色,海鮮是講求鮮味,而今次全部菜式都鮮味十足,味道和西貢相比有過之而無不及,雖然加工費真的有點貴,不過最重要是突出了海鮮的鮮味。價錢方面,海鮮全部都在海鮮檔內買,這裡只是茶位連海鮮加工費,再點了一些飲品和小菜,12人總共$3000多。總結來說,以前經常到西貢吃海鮮,今次是第二次來屯門三聖吃海鮮,發現三聖海鮮的味道都相當出色,質素和西貢不相伯仲,而且餐廳環境比起西貢更好一些,下次和家人吃海鮮都應該會來屯門三聖。…Read More

三聖一帶一向是吃海鮮勝地,選擇繁多,豐儉由人,這次到了定價較高的廣東名門。到了三聖海鮮檔附近已看到絡繹不絕的紅色的士,可見不少人特地從港九地區過來。我們一行十五人點了十一道菜,海鮮小菜都有。沙拉骨 酸酸甜甜,肉略韌。砵酒焗桶蠔餐廳推介,果真不錯,外脆內軟,帶輕微的酒味。菠蘿咕嚕肉正常水準,沒特別。蒜蓉粉絲蒸扇貝蒜蓉粉絲蒸扇貝一直是我的最愛,所以要求也高一點,這道菜蒜香足,粉絲入味,唯略欠溫度。豉椒炒蟶子很難失敗的一道菜,豉椒加蟶子本來就是絕配,味濃爽口。蒜茸炒瀨尿蝦有一大堆蒜茸,但不夠入味,蝦肉亦不夠鮮嫩。豉汁蒸鮑魚簡簡單單用豉汁烹調已能帶出鮑魚的鮮味,一人一隻,永不落空。辣酒煮花螺餐廳的另一道招牌,嗜辣者至愛,果真香辣可口;有石窩加持,吃到一半還在冒煙。鹽焗蟹只有蟹殼有鹽味,蟹肉不入味。單從食物質素而言其實不錯,環境算舒適,唯侍應態度可加改善,可能是生意太好吧。…Read More

一行廿多人,浩浩蕩蕩去到三聖,由於早已由其中—位搞手在"忠仔記"代訂了幾樣極品,包括阿拉斯加蟹,花殼龍蝦,扇貝,澳洲大鮑,瀨尿蝦,聖子皇和蠔等,所以在海鮮檔現場只是驗貨和隨意再揀多兩三樣,包括花螺,大蝦及老虎斑;隨即入坐"廣東名門",我們被安排在另一邊向海舶『貴賓房』(不過估計該處是僭建出來的),因為無肉和菜,所以在飯店加了咕嚕肉和生菜等。花螺,做了兩食,先是白灼,當晚約花螺不太大,所以有咬口之餘又不韌,作為餐前小食相當不錯;另一食是辣酒煮,雖然煮的時間不長,但由於花螺不大,而飯店爐火應該幾大,所以後上的辣酒花螺也勉強算是夠入味,亦夠淋。大蝦用豉油皇煎,蝦肉夠爽口,外殼味道夠濃,非常惹味,但蝦肉味道不足,略嫌偏淡了半點。聖子皇,豉汁炒,很多時豉椒炒聖子都用較細的聖子做,這次用到聖子皇,食法當然有別,大大隻聖子,入口咬落夠爽口,火喉恰到好處,若過火就會韌,唯—略嫌豉汁稍為偏咸。生蠔,用椒鹽半煎炸的方式做,生蠔本身夠新鮮,用椒鹽炸起,麥面炸粉極少但蠔身外表卻脆而香,內裏汁液豐滿,一口咬下去有爆漿效果,味道咸香鮮美。瀨尿蝦,用一貫做法-椒鹽,瀨尿蝦夠肥大,有膏但肉有半點削但仍鮮甜,而蒜泥夠香脆惹味,但味入不到蝦肉,令人有點可惜。阿拉斯加蟹,一蟹兩食,先上爪腳拑白灼,用剪剪開殼即食,入口微熱更加原汁原味,肉質鮮甜無比;蟹身用花鵰蛋白蒸,上檯時聞不到花鵰味,但食蛋白時就品嚐到淡淡花鵰清香夾雜著蟹鮮味,花鵰蛋白蒸蟹,最美味的就是蛋白,所有蟹汁都溶入了蛋白內,故為精華所在,特別美味。花殼龍蝦,這晚的海鮮材料樣樣都夠件頭,所以幾款都可以兩食,這龍蝦也一樣,蝦身肉做刺身,入口新鮮爽脆,但可惜飯店代雪時間太短,未夠凍而導致口感下降;龍蝦頭爪滾粥,也可能因時間關係,粥未夠入味,有點像龍蝦"送"白粥。扇貝,用蒜蓉粉絲蒸,全晚最差的原材料,下次再去此檔買海鮮要檢清楚,這扇貝可能早有問題,入口很削,完全似在超市買急凍貨,有幾位甚至要吐掉,原因是感到又腥又有沙,蒜蓉粉絲也很干,甚稱全晚最失敗的一道菜。澳洲大鮑,原意是甜椒炒鮑片,但最終試了飯店用石窩蔥爆,結果出事,如果一上檯就食,基本上面上面那些鮑片也爽脆彈牙,香口惹味,但稍為放一會及處於窩底的鮑片就過火太熟,又韌又老。尚有幾道菜,欲知味道和材料如何,請看下集大結局…Read More

年廿七公司團年飯.今年我們去屯門三聖(廣東名門)食海鮮.好在有位老友在對面(關財記)做海鮮炸.如果唔係年尾買海鮮食一定要天價.....今次(12人用)海鮮我買左 [象拔蚌 差不多有三斤 鮑魚 好大隻呀 12隻 瀨尿蝦 半隻手臂長 9隻 海虎蝦 長過手板 6隻 聖子皇 12支 花螺 兩斤 皇帝星班 三斤有多 大扇貝 12隻 全部海鮮埋單$4000大元.我以巠覺得相當超值了先黎[IMG:1](象拔蚌剌身)超大象拔蚌.貨魚真的唔講得笑呀.12個食.食極都有爽呀.厚溥切得江江好蚌肉先甜到不得之了.如果唔食生野.仲可以加個gas爐.黎個(堂卓蚌片)原來象拔蚌個膽仲可以用黎粥.用個膽黎粥又係先味到不得了.....正~~~~再黎....(.避風塘炒珍寶瀨尿蝦)一開二都以巠好大件好香好脆好多肉GOOD.....第三道的是(豉椒炒聖子皇)隻隻長過手板架拆哂肉面唔洗四圍巢的肉.不過真係好多肉又厚.豉椒炒得好有火氣.好入味.第四道黎的是(大海虎蝦上湯伊麵)龍蝦伊麵.食得多虎蝦上湯伊第一次.虎蝦的肉真的唔會小得過果大大隻龍蝦的.肉味超鮮.蝦肉彈牙.冇得彈....正第五道是(果皮清蒸大鮑鱼 )隻隻都成個盒咁大.比出面酒樓果鮑仔大一半.用刀差來食好有FEEL.GOOD..第六道(蒜蓉粉絲蒸扇貝)又係好厚肉鮮甜.加理果蒜蓉粉絲間直是絕配......第七道(石窩辣酒花螺)辣酒好香.花螺鮮味.唔太辣.味道好.因為用石窩的關係.所以食到尾都是熱辣辣的.永冇泠場...第八道~~WO~~wo~~wo(清蒸皇帝星班)我可能見識小..東星班...西星班...虎班..都成日聽(皇帝星)都係弟一次聽.呢條係老友全日推介架.佢話果(乜星物星甚麼虎班)全陪行埋一邊......咁勁~~~出來了.先下手為.食落肉好滑.滑得黎好爽.爽得黎又有彈..真的是好食過那些(乜星物星甚麼虎班)冇得比呀!!!!!!不過最想食那個( 炸脆奶)冇得食.有點兒失望.可能係新年做唔切.所以冇得食~~~~仲有兩諜菜...計埋洒水埋單$2600幾.ok啦....全晚仲結...85分..可能之前去過流浮山(歡樂海鮮酒家)我似中覺得歡樂做得比名門出色....不過85分都唔係一個底的分數.名門就坐得舒服.裝修都靚.真的是各有千抽.大家有時間的話都可去呢間家(廣東名門)食海鮮~~`真的一去無防是也~~~好了今日報告原結.....88~~~…Read More

六個人專誠過來青山灣食晚飯。選擇在對面「上記」買海鮮。五百多元,便有以下海鮮。七點多鐘,還好,有枱,晏少少便要等咯!豉椒炒蟶子,味道好,但唔夠鑊氣。 鹽水浸小蛤蜊,如果加點酒會更好。喜歡他加了粉絲,蛤蜊湯粉絲,正!上湯龍蝦,好差。本身有斤半重,煮出來,好像不見了頭部份。上湯調味很咸。見隔離枱用芝士乾焗龍蝦,好似好正。豉汁蒸帶子,加工費@$9。豉汁味濃,蒸過火了,韌晒。蒜蓉粉絲蒸扇貝,粉絲仍有彈性,蔥及完茜切碎,令整體味道更均勻。乳鴿$48隻。大家說麻麻。星洲炒米,$78米粉好硬,下太多咖哩粉。好難食。甜品有桂花紅豆糕。桂花味很強烈,紅豆多又大粒,被紅豆作了主角,吃過後很飽!我覺得這裡的加工費收費貴,又不是味味都做得好。好吃與否,主要關乎海鮮本身質素。如果行入少少的興記,加工平d,而且味道都ok,只是坐得不太舒適啫!不過最終我覺得鯉魚門吃海鮮,是最好吃的啊!…Read More

約埋兩個friend,一行四人去屯門食海鮮,人少少,又想試多D款,自己買料都唔錯,可以每樣買少D,買多幾種。本來想買一隻魷魚,用嚟椒鹽,不過太大隻,四個人食唔晒,於是散叫一碟魷魚鬚。魷魚鬚炸得鬆脆,送酒一流!花竹蝦爽口鮮甜,用豉油汁煎香,更惹味!蒸嘅火候到家,唔會過火太韌,又不失咬口。象拔蚌鮮甜爽口,內臟嘅味道更濃郁,不過唔係人人都啱口味。原來都好大碟,四個人夾極都仲有,抵食!炒蟶子亦好抵食,平日去大牌檔食,只係炒蟶子殼,呢度冇呃秤,半碟殼,真係有返半碟肉。相比起扇貝就唔抵食,舊膶仲大過粒帶子,唔抵!海龍王湯好味!買海鮮時叫老闆執包海龍王湯,次次都係執D瞓覺嘢,魚毛蝦毛等,今次竟然撈咗條游水魚,雖然唔係咩貴嘢,但已經正好多啦!已經好飽,諗住叫甜品,侍應跟手上埋碟蟹,係喎!仲有奄仔蟹!不過蟹殼上有D油光,唔似淨係搵鹽去焗,一開蟹蓋,蟹羔都算多,雖然唔太黃,不過都香!最後送甜品,紅豆桂花糕麻麻地,紅豆唔夠腍,桂花太多太濃,有D似藥水味。南瓜西米露就好正!南瓜夠香,唔太甜,完滿嘅終結!買料$1300,加工費$700,埋單$2000,每人$500,抵食!…Read More

今次我地一行5 人先去買海鮮,再拎去名門到煮。其實之前已經去過好次都係平日,估唔到今次星期日黃金時間去就出事,原先已訂好7:30 結果要等到8:15 足足45分鐘,其實都已經預咗,但最唔激氣就係見到有熟人( 二打六明星) 就比枱佢地先真係好唔公平。入座冇幾耐佢一次過將海鮮起晒,我地non-stop 不停食食食,將原本好好食的海鮮攪到凍晒最好食都係 "辣酒煮花螺",但要小心個煮費用好貴,除本身每兩計之間要額外加$50買海鮮用咗 $630 但煮費用居然 $700超貴 ( 下次千萬唔好假日去食)…Read More
