豚燻座位大約有十個左右,是開放式廚房,師傅會按下單次序一個一個煮麵,如果單多的話可能要等比較久一下,邊等邊看師傅煮麵,饑餓感會不停上升XDDMenu上有四款拉麵供選擇除了Menu上的選擇,還有一款季節限定拉麵自己寫紙下單,可以選粗麵或幼麵,還有麵的軟硬度芝麻凍波菜 HK$28波菜夠嫩,也很夠凍蒜片牛舌 HK$68牛舌約八成熟,爽口很嫩滑不會過老,厚切更曾加口感朋友本來想吃灘岸白貝蜆湯拉麵,可惜當天沒有白貝蜆店員推介了原匹松葉蟹拉麵,但也同時告知松葉蟹拉麵和松葉蟹腳拉麵湯底會沒有蜆,問可否介意,這點不錯原匹松葉蟹拉麵 HK$298上桌夠霸氣,超大隻松葉蟹原隻鋪上拉麵上面,更有大量蟹膏松葉蟹蟹腳部份經已開半殼,方便進食,這點十分細心朋友點的是粗麵軟度中等,我也試了一點,麵質煙韌,蟹膏大大提升了湯底的濃郁鮮味充滿松葉蟹則新鮮有蟹味的鮮味松葉蟹腳拉麵 HK$178松葉蟹腳相對原匹松葉蟹拉麵就比較精緻,跟隨四隻半開殼的蟹腳我點的是幼麵軟度中等,麵是扁身的,但個人覺得太軟身,好像煮得軟了一點湯底則沒有原匹松葉蟹拉麵的濃郁,不過也很鮮甜拉麵的價格有進取,不過也絕不欺場,份量充足,偶爾一次豪食一點也不錯…Read More

餐牌有點似曾相識,跟隔離的豊勝手丼是同一個設計。和一般的拉麵店一樣,有一張拉麵紙可以選擇麵條的粗幼及硬度,要不要走蔥等等。豚燻與其他拉麵店不同的是,有其他比較霸氣一點的選擇。平常吃拉麵都是叉燒作配料,豚燻有蟹腳又有海膽,比較創新一點。*松葉蟹腳拉麵($178)拉麵的配料就是四條已經半開殼的蟹腳;蟹腳新鮮有蟹味。兩個麵都是選了幼的硬質麵底;麵是扁身的,雖然選了硬身,但個人覺得不太夠硬,煮得軟了一點。*雲丹拉麵($198)「雲丹拉麵」一個很有意景的名字,其實是海膽拉麵。一片一片的海膽,又頗似一片一片的雲朵。不過個人不太愛海膽沽到湯汁,如果可以隔一隔會更理想。海膽一片片完整的,可見尚算新鮮;但是沾了湯汁後,不太吃到海膽的原味。兩碗的湯底和外面的很不同,用上了海鮮湯底,加入了很多隻蜆;每一粒都很有肉,沒有沙。*燒餃子($38)一客四隻的燒餃子,肥肥滿滿的。餃子皮薄,外皮煎得金黃不焦,外脆內軟;中間的豬肉餡很多肉汁,不會乾。*蒜片牛舌($68)炸過的蒜片,配上一舊舊煎過的牛舌。牛舌約煮得八成熟,爽口不UN;厚切令其更有口感。…Read More

今日友人突然心血來潮,想吃日式拉麵,便同友人來到這間店鋪。 這裏店子雖少,但感覺舒服,而且都很乾淨衞生.原來這裏只有4款拉麵,雖然款式不多,但每款都好特別,因款式不多,相信廚司更加可以專心烹調每碗拉麵。點菜就就用這張點菜單牆上則寫有日文的餐牌雲丹滿開之幸拉麵~~聽個名都夠勁,仲有灘岸白貝蜆湯拉麵。仲叫咗兩個小食。一送上果然有驚喜,蜆肉滿瀉,蓋滿晒碗的表面,蜆之多令到湯底都好鮮甜,蜆沒有沙,蜆肉好大隻,又鮮甜,吃完可裝滿一個碗,哈哈。 麺選擇了粗身的,雖然是粗身,口感好彈牙。海膽,旁邊也鋪滿了大大塊的紫菜,全片的海膽就鋪在碗中,感覺好邪惡,但唸起海膽的美味,就唔理咁多啦,一口一口吃下,好濃的海膽鮮美,一啲都唔覺腥,相信是新鮮的原固。我 選擇了幼麵,感覺林滑,湯底都是精華,不太咸。餐廳還有每枱放了些調味,有紫姜,蒜和我想是辣的大豆芽。放入湯麵更加野味。小食我們就叫咗牛舌和炸雞. 牛舌每件都好厚切,每件都很大件,好爽口,好有口感。配上炸蒜和葱,令到更加香口和嘢味。炸雞紫蘇梅味。夠特別,好少地方有這種味。味道酸酸的,好開胃。好林,咬下有肉汁,不覺得乾身,有4件,配埋一碗拉麺,份量啱啱好。這裏的拉麵款式很少有,下次可以和友人再來…Read More

豚燻拉麵,橫濱風味,豚骨湯頭相比其他吃慣的清淡不膩,中秋節大魚大肉一番後,又想吃拉麵,正是今日心水選擇。長型店子細小,大家都是坐麵吧,面向廚師看著他們做麵。湯頭只有兩款,豚骨及味噌,我倆皆喜歡前者。配搭方面有特色,這兒的豚肉是煙燻製的,小食方面供應少有的燒牛舌,而昇級配菜竟然有雲丹,即是海膽!蒜片牛舌未想到在一家拉麵店內,燒功竟然有水準,厚切牛舌,意料之外的燒得香口,香嫩爽滑有口感,味道亦好,蒜片炸至非常脆口,蒜味不霸氣,配搭匹配。美味指數:3.5/5雲丹拉麵整板雲丹份量足,半浸在麵之面頭,但被湯灼過,蓋了甘香之味,但又真的豐富了吃拉麵的奢華感。白淨大片的豚肉確富煙燻之味,中央全瘦但肉嫩不,四周連皮有脂肪,吃的是煙燻香,口感味道不過不失。湯頭油光不多並不膩,富大量香蔥,配菜方面有黑木耳、菠菜及四大片紫菜,紫菜是香脆的。加了一支煙燻半熟玉子,流心滑溜富少許煙燻香。幼麵不俗,柔韌掛汁,口感佳。這個拉麵,有些新意,風味及配搭有所不同,整體感覺不差亦不特別好,沒有急於回味之感。美味指數:3/5燒餃子大路水準,一般拉麵的出品也許皆差不多。美味指數:2.5/5一試無妨,若然喜歡湯頭不膩的豚骨拉麵,是可以考慮的選擇,如果亦喜歡煙燻風味就更加適合,但對我來說,還是邪惡香膩的濃郁豚骨拉麵更能令我回味。…Read More

又一個下雨天,濕答答的天氣總令我想食一碗熱呼呼的拉麵。早前看到豚燻推出了期間限定的雲丹(海膽)拉麵,十分吸引,一心打算試試看。怎料,進了店鋪才知道海膽還未返貨,而且每天都只是限量供應,只好點其他拉麵。既然一場來到,便嚐嚐他們的主打: 豚!食店店員很主動,不會讓客人自己tick點單紙,而是會跟客人介紹食物,幫客人點單。豚骨湯粗拉麵 ($98)早知道這食店主打橫浜系拉麵,也即是豬骨醬油湯加雞油,配上紫菜、菠菜和爽口的木耳,精髓都在不花巧而又帶有豬骨味香味的湯。這碗豚骨拉麵的湯,不稀亦不杰,味道清澈,喝後不會口渴。重點是那片煙燻滷製的叉燒,外邊呈煙啡色,內裡的肉則肥瘦剛好,口感厚實,味道似平日在自助餐吃到的燻火腿一樣。味噌湯幼拉麵 ($108) +追加燻製半熟玉子 ($14)友人選的是味噌湯底和幼麵,味噌湯不像一般日式店開粉煮的那種,而是有一點豆瓣味,有點點咸辣的黃豆味,但同時又帶有一些甜甜的味道,如果是愛好重口味的人,應該會喜歡這個湯; 友人的幼麵比我選的粗麵軟和糊一點,吸湯力較強。他還追加了燻製的半熟玉子,口感不像溫泉蛋那麼滑溜,亦不是流心,而是呈溏心狀態,蛋白有些微的煙燻味。鳥唐揚大阪 ($38)我和友人都比較大食,吃過拉麵還點了炸雞!炸雞是半肥瘦,吃起來肉質較滑,而且炸很非常脆口。醬汁方面很有日本風味,用上了大阪章魚小丸子用的燒汁,再加上一大堆很有動感的木魚絲,味道都很配炸雞。 炸蒜片燒牛舌 ($68)這裡的牛舌都是厚切,而且一碟有很多件,與價錢還成正比。蒜片炸很乾身,很香口,略嫌牛舌有點厚身,有點難以嘴嚼和入味。信州蘋果梳打 ($36)我很喜歡這個飲品,蘋果味清甜亦帶點果酸,梳打的碳酸幫助消化,喝後很滿足!總的來說,豚燻的拉麵十分樸實,味道不太濃但不會淡,以煙燻叉燒作為噱頭,是坊間鮮見的。但也希望食店有多兩款湯底配料供選擇,另外如果叉燒的煙燻味重一點會更可口!…Read More

不是魯芬、不是朱薰、也不是岑建勳,這間近期讓人大排長龍也要一試的銅鑼灣拉麵店名叫豚燻拉麵。門口掛著一個醒目亮白的大燈籠,上面印著『豚燻』二字,亦即是這裡的殺手鐧 - 煙燻黑豚肉。店內環境不大,大約有十個bar檯位置,食客全都面向開放式廚房,能夠一邊聞到香噴噴濃湯,一邊欣賞師傅煮拉麵時的認真模樣。拉麵有兩款湯底可選,經店員推介後我最終選擇了味噌汁,另外也點了兩個小食跟男友開心share!豚燻味噌橫濱拉麵 $108先喝一口湯,湯底黏口而且味道帶甜,原來是用了筒骨、雞腳、昆布及魚乾等淆製12小時,難怪黏性極強,而且當中必定有大量女人最愛的骨膠原。而且我加了點炸蒜片,湯底額外多了份甘甜味。麵質爽口有韌性,掛湯程度不俗,不會一咬就斷。叉燒是鹿兒島黑豚肉,先用櫻花木煙熏後,再用鹽滷熟3天,再經過4小時慢煮,所以肉質不過因為過度加熱而失去肉汁跟油份,反而能食出陣陣木香,口感亦比一般叉燒要稔滑得多。蒜片牛舌 $68牛舌體積不算厚切,不過火喉控制上盛,每片都軟中帶韌,牛味濃郁之餘入口亦感受到肉汁從四方溢出。燒餃子 $38皮薄卻足以包裹著肉汁,餡料比較細碎易咬,肉料沒有筋。蘋果梳打 $36日產的信州蘋果汁,口味清甜,蘋果味突出又有汽。香港拉麵店越開越多,要保持著迄立不倒絕非易事,且看豚燻能否憑著超班的黑豚叉燒傲視群雄。…Read More
