To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 家人慶生月又來了,又是試中菜的好機會。今次來到了資深食評人都是常客的米芝蓮一星粵菜食府 — 彭慶記。開業已經有二十年,可能因為地段問題,縱使一直在我記憶中,也久久未有拜訪。.走進店內,一眼看完,大概只有十張枱, 枱與枱之間位置不算鬆動。老闆也自知,用餐途中也自嘲「黎呢到食飯係坐得唔舒服嫁」。可能因為店內天生的缺憾,讓老闆堅持其他方面盡善盡美,讓這家庭式經營飯店獲得連續10年米芝蓮一星榮譽。.menu上菜式非常多,想要簡簡單單家常便飯的有粟米斑塊之類的;較名貴可宴客的也有原隻鮑魚或大鮑翅;或是時令的羊腩煲;傳統考功夫的大良炒鮮奶更是特別推介⋯⋯最後試了以下的菜式:.✿ 蒜蓉粉絲蒸蟶子 $65/隻新鮮大大隻蒸蟶子配上海量的粉絲,十分惹味✿ 菠蘿生炒骨 $168同樣是推介之一,酸甜醬烹調得恰好,味道恰好,稀結度也恰好,排骨煎炸也沒有很乾。✿ 順德砵仔焗魚腸 $158傳統菜式,也很家人喜愛的,基本上到哪都會一試。這裡的較平常吃到的面層更乾脆,魚腸蛋的部分沒有多餘的水份,焗得很出色。味道上唯筆者覺得可稍微鹹多少少,但相信只是個人口味的因素。✿ 啫啫芥蘭煲 $158上枱咋咋聲,熱力十足,職員都有細心提醒「小心熱」。薑汁味相當足夠滲透每根芥蘭。✿ 瑤柱糯米釀炸雞翼 $75/隻另一道少考功夫的小食,糯米很香,餡料均勻,雞翼炸的十分香脆✿ 大良炒鮮奶 $228整餐飯最驚艷的菜式!向來都知道這道菜不易做,很考師傅功架,一不小心奶味太重或是雞不滑。雖然筆者第一次食,但感覺奶同蛋白比例調整得很好,兩者不會有一方喧賓奪主,蛋白非常的滑,慢慢就流入了口中。而且加入了瑤柱和帶子,帶點鮮味,賣相平凡的一道菜卻毫不簡單。✿ 闊少炒飯 $178炒飯幾乾身,味道正常若論整頓飯,筆者覺得所有菜式都很到位,沒有任何一道會有特別不好的感覺。另外值得一提的是,上菜效率非常高。雖然理解是急著要還枱所致,但同時所有細節都做足,主動換碟加水以至連送客這動作都是表現自如不造作。不知不覺又被這窩心的服務感染了,亦明白這裝潢低調不顯眼的食府為何獲得星級榮譽。…Read More

每到年初,第一位生日的家庭成員就是奶奶了。由於她的生辰臨近農曆新年,食肆在這段時間都異常繁忙,今年我比往年更提早預訂生日飯的目標食肆,可是打了一個上午,電話仍是接不通,心裡不禁涼了一截,莫非又被米芝蓮所害,幸好皇天不負有心人,最終仍能訂上心水之選 — 彭慶記。到過彭慶記用膳的朋友一定會知道,店子內只能容納數張餐桌,當晚擺放了我們九人的大檯後,中間的行人通道變得非常狹小,所以到彭慶記肯定不是為舒適的用餐環境而來。彭慶記所提供的菜式平易近人,所以不用多加思索,便能選出不少欲嚐的菜式。先選來了糯米雞翼,將其一分為二,剛好足夠八位成人分享。雞翼外層炸得香脆乾爽,皮下脂肪彷彿消失掉了。餡料的糯米不會過份軟腍,入口帶有瑤柱、臘味的香氣,不過餘韻卻帶有輕微的酸味,估計是南乳醬遺下的味兒。彭慶記有孖寶和六寶兩個寶貝。孖寶是藕餅拼芋卷,而六寶則包括了藕餅、芋卷、魚餅、蝦餅、豆腐和海蜇。六寶可按二至六件的數量落單,我們九人,於是要了每款三件,每人至少可享用每款的半件,讓肚子預留空間品嚐其他菜式。彭慶記這靈活且富彈性的做法,實在體貼!海蜇爽彈,甜甜帶微辣的中式調味,沒有過份造作,令人滿意;豆腐皮薄如蛋衣,一咬豆腐流心般滑出,充滿焦香、調味溫和;爽口的蓮藕碎粒混在魚肉中,軟彈中夾雜著爽脆的口感,藕香不絕;芋卷外層薄脆,粉紫的芋蓉滑溜盈香、帶著怡人的小甜,使平日不愛芋頭的老公也吃得津津有味;魚餅和蝦餅質感彈牙,分別富有香濃的鯪魚香與蝦香。無論那一寶均令在座每一位讚不絕口,是實至名歸的彭慶記推介。餐前老公和我在查閱餐牌上的菜式,發現當中有不少菜式均是老爺和大姑 (老爺的妹妺) 的喜好,於是老公和我在心裡預設了幾款他們必選的菜式。結果我們的預設全中了,香煎雞蛋魚腸也是估計之內。對魚腸沒有太大的喜惡,每次總會嚐一點點。彭慶記為魚腸配上了煎雞蛋,雞蛋煎得甘香不油,內層保留滑溜的蛋汁;雞蛋除了軟滑,亦釋出恰好的果皮香,正好與爽口的魚腸混和,入口綿潤甘香、非常美味!是我嚐過最美味的魚腸,不過記得趁熱品嚐!秘製松皮雞放上蔥段作點綴,賣相樸實,猶如淡素蛾眉的女士。入口雞肉口感細滑、富有鮮雞香氣,味道則鹹中帶甜,帶出順德菜的特色。不以濃味、煎炸取勝的秘製松皮雞,擁有清雅脫俗的氣質,低調卻討好!生蠔也是家人的至愛,當大家在討論烹調方式時,彭慶記又一再發揮其體貼的待客之道。侍應稱每款口味最少可以四隻生蠔為單位,於是我們便選來了四隻薑蔥的焗生蠔和四隻砵酒的焗生蠔。端來的生蠔肥大肉厚,香氣不絕!我較愛薑蔥的豐香,而甜潤的砵酒口味則不是我杯茶。不過無論是那一款味道,蠔隻均做到爽口中帶著水盈欲滴的蠔心,入口豐腴鮮甜,廚師精堪的廚藝,實在功不可抹。家姐與妹妹是菠蘿生炒骨的忠實粉絲,彭慶記的生炒骨入口皮脆,配合酸甜度自然的醬汁,不失開胃美味。很多時候都會遇上用油量過多的炒蛋白或鮮奶,使原本清淡的食材變得油膩,造成反效果!這道順德大良炒鮮奶不單沒有油膩感,而且奶香不淺,在鮮奶上更加入了鮮帶子,就好像一片白皚皚的雪地,或是軟綿的奶香綿花糖,令人喜愛!當看到魚鰾,肯定又是必選的菜式。可是煲仔上露出的魚塊完全不是魚鰾的模樣,起初還以為是魚鮫,細問下,得知彭慶記的魚鰾原來是魚下顎一處連骨的魚肉,跟魚鰾拉不上任何關係。雖然老爺與大姑對未能嚐到真正的魚鰾感到失望,但吃過魚下顎極度細嫩幼滑、又滿是薑蔥香氣的魚肉後,大家紛紛叫好,一瞬間又由失望跳到興奮的狀態,結果變幻莫測!同屬魚菜式的順德煎焗魚頭也端來了,炸過的魚頭,再淋上醬汁,味道較薑蔥魚鰾鍋濃香。不過大家也許對魚下顎實在太驚歎了,所以反覺這道魚雲效果較為普通。蝦醬芥蘭煲夾著 "啪啪" 的聲勢出場,蒸氣猶如騰雲駕霧,香氣更隨著蒸氣擴散,令人好想來碗白飯。不過這種烹調方法,通常嘴巴得到的滿足感,遠不及鼻子嗅到的那麼惹味與滋味,浩大的氣勢後不過也是一道平常的蔬菜而已。最後來點米飯作為這頓生日飯美好的完結。荷葉糯米蒸蟹蒜香惹味、蟹隻新鮮美味,而籠底的糯米飯更是精華所在,軟糯中集蒜香、蟹汁於一身,又是世上的滋味所在。當晚十二道菜式澎湃的呈上,又要聊天,又要趕著嚐菜,讓嘴巴未有停頓的機會,加上在密集的用餐環境的襯托下,使得節奏更加緊湊,氣氛更為熱哄哄,一片歡騰的場面!晚上九時多,仍有食客到彭慶記用膳,不介意坐位狹窄,看來大家都為美味而來!…Read More

位處跑馬地的中菜館,雖店舖不大,但都薄有名氣。是晚試了數款名菜。大良炒鮮奶:賣相雪白討好。炒鮮奶口感嫩滑;內含帶子非常鮮甜爽口,好食。菠蘿生炒骨:醬汁偏酸。生炒骨剛炸起外層鬆脆熱辣,只可惜內裡肉質不夠juicy。煎釀鯪魚:OK,只是「魚塊」實了少許。蝦子柚皮:蝦子數量不多。柚皮炆得幾腍幾入味。薑葱魚雲煲:賣相OK。因小弟不吃魚雲,所以味道不予致評。薑葱美國蠔煲:先將美國蠔走油再放在瓦煲烹制,薑葱夠惹味,美國蠔的夠大夠鮮味。啫啫唐生菜煲:很惹味搶口,味道偏鹹。干扁肉鬆炒四季豆:另一推介之作,味道濃郁,送飯一流。楊州炒飯:賣相隹,餸料多,炒飯夠乾身好食。粉葛赤小豆排骨湯:老火靚湯,幾好飲。…Read More
