割烹作為頂級日本料理之一,單從字面上解釋的話,就是將食材透過刀工等處理後再烹調,不只有煮物、烤物、炸物等各式日本料理型態,也會有刺身等冷食,核心精神依然是善用新鮮食材做出當季的原汁原味,今次我就來到新開張不久的割烹 炑 Kappou Mu 初體驗地道的割烹料理文化。店內環境寬敞,充滿空間感,設計靈感源自簡潔樸實的侘寂美學,呈現天然平衡的木系調和美感,將和式素朴的韻味延伸到每一角落,氣氛幽雅恬靜。採用典型的和食開放式廚房設計,坐在吧檯就可親眼見證師傅精湛的廚藝與刀工,跟師傅直接交流。今次我就選擇了每位$780 九道菜的廚師發辦午市套餐,包羅先付、刺身、及一系列體現不同烹調技藝的菜餚,如煮物、燒物、炸物、主食及甜品,菜單隨著時令而不斷推陳出新,致力展現每個季節的優質食材精髓。先付 - 茶碗蒸し一如Omakase的慣常順序,菜式是從清淡的口味走向濃郁,熱騰騰的茶碗蒸蛋軟軟嫩嫩,猶如豆腐花般彷彿吹彈而破,喚醒沉睡的味蕾。南非鮑魚貴為眾多鮑魚品種當中最稀有之一,亦是鮮鮑界中的皇者,口感緊緻彈牙,鮑魚味特別濃郁且鮮味明顯。お造り- 3品適逢春天是鯛魚的當造期,師傅將石鯛切成晶薄透光的薄片,透出粉嫩肉色。石鯛又有「夢幻之魚」的稱號,肉質細嫩,配上三款不同佐料:蘿蔔蓉、紫菜及以紅酒煮鮟鱇魚肝,足以將鮮味再昇華。擺盤姿態典雅,貫徹和風料理的精髓,讓人提起食慾,品嚐海洋最純粹的美味。牡丹蝦是北海道三大名蝦之一,肉甜細滑帶彈性,鮮爽無比,配合青綠色蝦籽及蝦頭膏,餘味悠長,還有以魚油甘香細膩見稱的深海池魚、豐腴雪白的香煎BB銀鱈魚和入口彈潤嫩滑的赤貝。椀物 - ロブスター、椎茸龍蝦清湯加入日本礦泉水、椎茸及京蔥,湯頭色清味鮮,大粒厚肉的龍蝦新鮮爽彈。焼き物 - 金目鯛食材選用地金目鯛,屬金目鯛中的頂級品種,表面灑滿擁有獨特的鹹香和鮮味的烏魚子碎屑,餘韻甘美,還有青綠爽脆的油菜花作配菜。金目鯛本身具有更豐富的油脂,魚皮金黃脆口,肉質豐厚細嫩,席前即燒後皮脆肉嫩,更能牽引出這條魚中貴族的魚油鮮香。天麩羅 - 穴子外層天婦羅麵衣粉漿夠薄,色澤金黃,酥酥脆脆,炸得乾身不油膩。穴子油脂比鰻魚少,更適合用作天婦羅食材,鎖住魚身獨有的海洋鮮香。食事 - 近江A4和牛御飯、味噌汁餐廳的星級和牛食材為來自日本滋賀縣的近江牛,貴為日本三大和牛之一,在得天獨厚的飼養環境下成長,霜降脂肪分佈均勻。A4和牛切粒中心位呈現寶石粉紅色,感受到入口即溶的口感,滿口瀰漫著牛脂香氣,拌以日本蛋漿,入口更滑溜,這樣最能嘗出肉質的鮮嫩,用來拌飯吃極之開胃。デザート - アイスクリーム甜品有開心果雪糕,散發純粹濃厚的果仁芳香,搭配口感軟糯的日式蕨餅,甜而不膩。…Read More

第一次食割烹料理,割烹是利用頂級及季節性食材來設計的Omakase餐單Omakase,師傅會配合客人的需求喜好而量身訂做菜肴,今次食午餐,CP值超高,午餐$780/位。首先係茶碗蒸,蒸蛋裡面加入南非鮑魚,鮑魚爽口香濃,蒸蛋非常嫩滑。刺身有三款(彷彿魚、牡丹蝦、右口魚邊)彷彿魚裡面放左土佐醋啫喱,酸酸甜甜,非常開胃。北海道牡丹蝦,可以配蝦子或蝦膏一齊食,非常鮮甜。右口魚邊,左口魚邊就食得多,第一次食右口魚邊,油脂豐富,油味香濃,比左口魚邊更肥美,入口即溶。另外仲有海帶根部,口感黏黏地。梳子魚將皮燒到香脆,然後用日本櫻花木煙燻過,食落有淡淡木香。一打開就聞到陣陣柚子清香,清湯裡面放入龍蝦、京蔥、椎茸,而且用上礦泉水來煲,飲落非常順滑,日本人正確既飲法係,先飲一啖湯,然後食哂材料,最後再飲埋d 湯。呢款地金目鯛係最高級既金目鯛,燒完肉質依然嫩滑,上面灑上烏魚籽,味道鹹香,配上清甜既菜之花。海鰻天婦羅,粉漿超級薄,非常巧功夫,炸到外脆內軟,用日本岩鹽作調味非常適中。日本和牛御飯,用上近江牛,牛肉燒到半生熟,入口即溶,肉質軟熟,放入半生熟蛋同洋蔥,令到飯口感更香。開心果雪糕,開心果味濃,雪糕好滑,黑糖蕨餅。…Read More
