今晚約左老友去銅鑼灣睇波, 睇波前當然要醫飽個肚先啦, 老友帶左我去呢間位於永光街嘅塩玉居酒屋, 佢話知道我唔太好飲酒, 不過覺得呢度嘅海膽菜式我一定會鍾意。😙我地6點半已經到餐廳, 客人未係好多, 餐廳裝修有別於一般日式食店, 除左有部位木色同日式裝飾之外, 餐廳大部份地方以黑, 灰色為主調, 走型格路線, 非常有格調。😎忍廉芝士酒盜 $48酒盜芝士係日本最出名嘅佐酒小食,呢款忍廉芝士酒盜由鹽腌漬的魚內臟製成,加上忍廉芝士,鹹鮮味豐富,口感細滑香濃。😋黑松露白身魚薄切 $98呢款白身魚本身魚味已經好濃,再加上黑松露,令刺身嘅鮮甜味更加突出,刺身口感好彈牙。👍茶壺海鮮湯 $48茶壺湯材料好豐富,唔會太咸,湯嘅海鮮味好清新自然,味道唔錯。鎮店之寶(和牛雲丹) $238呢款叫"鎮店之寶"嘅菜式係和牛雲丹,由我最愛嘅兩款食物,和牛同海膽加上脆口嘅紫菜,估唔到味道配搭得咁好,和牛入口即溶牛味超濃郁,油脂豐富,加上海膽嘅綿滑口感同香濃鮮味,配合脆口紫菜,卷埋一齊放入口,超級美味。👍燒大蝦 $180大蝦超大隻兩個人share都好夠食,外層燒得好香,蝦肉鮮嫩多汁,醬汁味道剛剛好,已經預先開邊,食得好方便。😋季節雪糕 $20最後食埋呢款季節雪糕做飯後甜品,呢餐非常滿足。😄…Read More

鹽是煮食不可缺少的元素,優質的鹽可以大大提升食物的味道,現代飲食亦愈來愈注重鹽,海鹽、岩鹽、喜馬拉雅山粉紅鹽大行其道,高尚食肆標榜選用優質的鹽,今晚我來到以鹽名命的塩玉居酒屋,主理人更相信是鹽人生的寶物。本來以為餐廳會掛出自己用什麼什麼鹽的標語,原來只是輕描淡寫,反而強調自己烹調的方法是保持新鮮食物的原味,也許沒有說出的話就是,若然食物新鮮上乘,只需加少許鹽便已經是佳餚。居酒屋一貫的作風,什麼食品都有,新派沙律、刺身、傳統壽司、串燒等,每個類別選一兩款,二人飯局已經足夠。黑松露酢海葡萄沙律配魚生 主角是沖繩的海葡萄,晶瑩卜脆,長壽的秘訣。帶子及番茄新鮮汁豐,生菜爽口,反而黑松露酢,我認為可有可無,不過有黑松露油就多添一份香氣。黑松露白身魚薄切  我一向認為黑松露香太霸氣,跟新鮮刺身並不合拍,但凡事亦有例外,白魚本身魚味淡,甚至有時會有些腥,松露油成功補充不足,令白魚味道昇華。蒽呑拿魚腩薄脆  這一道抵食且美味,豐腴的吞拿魚魚腩與薄脆米通成強烈對比,口感一流。飛機壽司拼盤(8件)講明是飛機新鮮貨唔會假,但刺身都有分質素,居酒屋的自然不能與壽司專門店相比,算足料,不過不失。茶壺海鮮湯 細細壼,奇怪地可以喝到十小碗有多,而且海鮮材料豐富,魚、蜆、帶子、香菇等都有,鮮甜熱辣,吃完刺身暖胃真窩心。黑松露甜蝦卷 兩種獨特的味道共存,黑松露不用重覆,甜蝦刻意加料,嚐到討好如蜜糖的甜。黏稠的蝦膠配合爽脆的卷物,效果理想,一客六件,美味飽肚。燒佐賀產和牛 燒功果然得,見到師傅慢工出細貨,非常耐心地工作。只需加少許鹽便帶出味道,完美的佐賀產和牛,本身質素肥美,脂肪豐富可見,入口半溶,再加上一些嚼勁,完美的效果。鵝肝釀雞翼 聽個名就已經鍾意食,肥美行鵝肝釀入香脆的雞翼內,外脆內肥美,口感極好。下次再來的話,我會多試幾款串燒及香口脆物,因為我認為這些是塩玉的強項。…Read More

走到銅鑼灣這條街,很多時候都是想著這裡的拉麵,但原來這裡有間居酒屋呢,很有feel,跟朋友在這裡吃餐日本菜聊聊天也真的很不錯!頭盤先來一個日本溫室蕃茄田園沙律,上菜的時候沒有很大期望,以為是一般的沙律,怎料這裡的蕃茄真的鮮甜無比,平常真的沒有吃到這麼鮮甜的蕃茄,不是糖水的味道,而是原汁原味,配上沙律菜真的很開胃。蔥吞拿魚腩薄脆,這裡的招牌菜,價格親民,米通上放上滿滿的吞拿魚,吞拿魚入口鮮味軟腍,與米通的脆形成對比,每一口都是滿滿的吞拿魚蓉,更是滿足。卷物點了黑松露甜蝦卷,上面是甜蝦漿+黑松露,黑松露的味道突出,蝦的味道偏淡,但整體是不錯的。飛機壽司拼盤,廚師根據每天新鮮的食材製作,每款壽司各有特色,甜蝦更是肥美,連海膽都有呢!居酒屋怎少得串燒,這串燒雞翼外層相當香脆,內裡肉汁依然保留得到。燒香蔥蒜牛肉,牛肉上面鋪滿蔥粒,牛肉沒有想像中的腍,不過調味是不錯。茶壺海鮮湯,以茶壺裝著湯,很特別,用一個小杯裝著湯,幾口就喝完一杯,蜆的味道特別出。打開茶壺看原來除了貝類還有魚呢,很足料。…Read More
