不來不知道,原來上環還有這樣一處潮州菜聚集地。托友人的福,有機會一試尚興的潮州菜。這一試,一掃以前對潮州菜麻麻地的印象,深深的愛上了潮州菜<3進店穿過窄窄的樓梯來到二樓找了張臺坐下。店面比較老舊,像是老式私人住處裝修而成。剛坐下翻開菜單準備研究菜式的時候,一個略上年紀的適應伯伯就拿來幾個品茶的杯 倒上濃茶,喝上去像是烏龍茶(未知是否普洱)。叫了潮州菜必有的滷水菜式--滷水鵝,另外炸蠔餅,古法腌蝦菇,再來一個素菜炒三鮮,最後以芋泥作為完美的結局!!! nice!!滷水鵝實在是贊贊贊! 皮薄肉嫩,肉質好到完全不用擔心會塞牙的問題,點上配的白醋醬汁,味道一級棒!!忍不住要多夸一下!! 炸蠔餅亦水準了得,厚薄適中,外酥內軟,肥嫩的蠔仔十分足料,好味到就算熱氣也想再吃一塊!哈哈。不得不提的是這道古法腌蝦菇,典型的潮州菜,令人一試難忘。試過上海的醉螃蟹,韓國的腌蟹,這道潮州腌蝦菇絲毫不遜于前兩樣。首先,研製的蝦菇一定要夠新鮮,才會好味。再次是腌製的醬料,不會死咸,有些許辣,亦有酒味,但已經深深的滲入蝦菇的每一寸肉里。單吃兩三塊就已覺得有點重味。於是叫了白粥來配,據適應伯伯說這是潮州人吃這道菜的好搭配呢。略為重味的腌蝦菇搭上淡淡米香的白粥,更加突顯其鮮香的味道,猶如紅酒與cheese的完美搭檔。炒三鮮清清淡淡,味道恰到好處,剛好中和一下前幾道菜式。最後叫了一個芋泥,水準值得稱讚。芋泥不會太甜,芋香濃郁,加上本人對芋頭的無限愛意,熱乎乎的吃上一口,齒頰留香,頓時幸福感爆燈。飯後還送了一碗綠豆爽,不是很喜歡。綠豆爽太甜了,雖然配有陳皮汁可以稍稍中和甜味,不過都還是覺得過甜,個人不喜歡。簡簡單單的幾道菜傳遞出的是潮州菜的精髓。難怪這樣一個老舊的店鋪卻能夠人潮不絕興旺至今呀。這一餐超住家feel的潮州菜徹底改變了我對潮州菜的觀感。強烈推薦尚興,保留了潮州好味道同時性價比也十分良好的一家店!!! 潮州菜必試餐廳之一--尙興!!!!!…Read More

之前很想吃潮州菜, 約了多時終於成行了一上桌有功夫茶跟鹹酸菜, 鹹酸菜很好吃, 很快就吃光了功夫茶也沖得夠濃夠甘, 朋友很喜歡喝這個 (其實這個朋友是樓下那篇食評的Margie鵝腸拼豬紅我不吃韭菜, 所以點了這個鵝腸蠻爽口的, 裡面的油脂都被去掉了豬紅滑嫩入味, 比外面某些潮州菜館做得更好鵝片拼鵝肉很喜歡吃鵝片, 這裡的鵝片跟鵝肉被鹵水鹵得很入味但肉質上比較柴一點蠔仔烙尚興的蠔仔烙做得不錯, 外層煎得夠脆而不油裡面的蠔下得不少, 蠔味十足, 裡面的烙還是軟身的蝦棗蟹棗一讚的是尚興的煎炸類都不會做得太油, 處理得很好比較喜歡蟹棗, 吃得到裡面有蟹肉絲兩者都有蝦蟹的鮮味, 不錯吃兩面黃之前在這邊吃過兩面黃印象很不錯這次吃有點退步了, 面層煎得不夠香脆, 還是帶點軟身芋泥這個芋泥芋香很足, 不會過甜過膩但黏度再強一點會更好清心丸豆爽這邊送的甜品, 也是不會太甜, 但清心丸不夠彈牙, 軟軟的不太好吃綠豆爽粉粉的蠻好吃尚興比之前水準下跌了, 沒有以前的好吃, 外面也有不少潮州小店急起直追了筆時的兩天後被邀出席潮州商會之局, 很期待呢…Read More

約去尚興,說了整整半年有多,是夜終於吃到了。椅未坐暖,阿叔端來一盤功夫茶。呵呵﹗茶甘,比樂口福的好多了。結果…友人未拍照,我已喝了三杯。我們三個不知不高地厚的臭小子、黃毛丫頭想要學人家點凍蟹。問阿叔一隻凍蟹什麼價位,立時被嚇住。最後決定,讓牠們繼續乖乖掛在門口好了先出場的是一碟鵝腸拼豬紅。其實我也不明白為什麼是豬紅,而不是鵝/鴨紅。不豬紅很滑,沒有熟過頭的洞。鵝腸都挺爽口。潮州菜,少不了的是鵝肉。因淨鵝片太貴,所以選了鵝片拼鵝肉。鵝肉味道不錯,但口感不是很軟滑,個人還是比較喜歡紅磡生記的。而附在骨上的鵝肉比鵝片更好。想吃烙,朋友沒有試過,交由他們決定要什麼烙。友人說想要感覺豐富點,選了蠔仔烙。這兒的烙餡多,但沒有一咬就斷,不會過粉。面層煎得脆,但內裡軟滑。蝦棗蟹棗又是另一道潮州菜必點之選。炸得脆脆的蝦球/蟹球,小孩子最愛。這兒的蝦棗蟹棗有絲的呢﹗友人最後還點了一個兩面黃。可惜這兒的兩面黃煎得不香口,麵本身也太稔。已經很飽,但甜品依然照吃。芋泥一碗。不太甜,但我喜歡再黏一點的口感。最後送我們一碗清心丸豆爽。清心丸不彈牙,偏較。早知聽說清心丸有膨沙所以才彈,可能因為這樣,所以現在吃得到的清心丸都不是那回事。綠豆爽甜甜厚厚的,很滿足。…Read More
