自稱是傳統潮州人的男友又帶我去吃傳統潮州菜。這次,他帶我來到上環的潮州名人飯堂 - 尚興。 一間店開到一連三間,可想而知它多受歡迎。老店全滿,我們來到旁邊的分店。 功夫茶 - ★★☆☆☆  甫坐下,店員立刻送上功夫茶。茶還算濃,但不夠香、不夠滑。是全餐飯唯一美中不足之處。 鹹酸菜 - ★★★☆☆   鹹酸菜口感爽脆,鹹中帶甜,夠開胃。 滷水鵝 $138 - ★★★★☆  打冷必備的滷水怎樣不吃?滷水鵝香濃入味,鹹甜適中。鵝皮軟熟但不肥,肉質軟硬適中而且蠻嫩。 潮州蠔烙 $78 - ★★★★☆  實在太愛吃蠔餅,食剩兩舊才記得影相。 喜歡它蛋漿份量適中,有點濕潤,不像平時的「炸蛋」。蠔仔非常足料,啖啖蠔仔很滿足。 菊花石榴雞 $88 - ★★★☆☆  平常吃打冷,不是滷水乜乜就蠔仔乜乜,要吃更多正宗的潮州菜式,必定要到這些潮州老菜館。今次我們就試了菊花石榴雞。每棵石榴雞都包到脹卜卜,賣相吸引,亦見大廚手勢。作為潮州手工菜式,也只是$88,價錢非常宜人。 蛋皮厚薄剛剛好,但有點鞋。內𥚃餡料滿滿,雞肉、冬菇、芹菜⋯⋯ 非常豐富。芡汁濃而清新,與餡料配合得宜。美中不足的是雞肉有點鞋。 綠豆爽 - ★★★★☆  吃飽飯,還有糖水送 綠豆爽濃稠適中,很甜。加點菊花蜜,甜度更有層次,更好味。 雖然是傳統老店,但服務一點也不差劣。店員都很友善,服務也很周到。跟我們有說有笑,絕不高竇。就是是第一次來也有種家的感覺。…Read More

不來不知道,原來上環還有這樣一處潮州菜聚集地。托友人的福,有機會一試尚興的潮州菜。這一試,一掃以前對潮州菜麻麻地的印象,深深的愛上了潮州菜<3進店穿過窄窄的樓梯來到二樓找了張臺坐下。店面比較老舊,像是老式私人住處裝修而成。剛坐下翻開菜單準備研究菜式的時候,一個略上年紀的適應伯伯就拿來幾個品茶的杯 倒上濃茶,喝上去像是烏龍茶(未知是否普洱)。叫了潮州菜必有的滷水菜式--滷水鵝,另外炸蠔餅,古法腌蝦菇,再來一個素菜炒三鮮,最後以芋泥作為完美的結局!!! nice!!滷水鵝實在是贊贊贊! 皮薄肉嫩,肉質好到完全不用擔心會塞牙的問題,點上配的白醋醬汁,味道一級棒!!忍不住要多夸一下!! 炸蠔餅亦水準了得,厚薄適中,外酥內軟,肥嫩的蠔仔十分足料,好味到就算熱氣也想再吃一塊!哈哈。不得不提的是這道古法腌蝦菇,典型的潮州菜,令人一試難忘。試過上海的醉螃蟹,韓國的腌蟹,這道潮州腌蝦菇絲毫不遜于前兩樣。首先,研製的蝦菇一定要夠新鮮,才會好味。再次是腌製的醬料,不會死咸,有些許辣,亦有酒味,但已經深深的滲入蝦菇的每一寸肉里。單吃兩三塊就已覺得有點重味。於是叫了白粥來配,據適應伯伯說這是潮州人吃這道菜的好搭配呢。略為重味的腌蝦菇搭上淡淡米香的白粥,更加突顯其鮮香的味道,猶如紅酒與cheese的完美搭檔。炒三鮮清清淡淡,味道恰到好處,剛好中和一下前幾道菜式。最後叫了一個芋泥,水準值得稱讚。芋泥不會太甜,芋香濃郁,加上本人對芋頭的無限愛意,熱乎乎的吃上一口,齒頰留香,頓時幸福感爆燈。飯後還送了一碗綠豆爽,不是很喜歡。綠豆爽太甜了,雖然配有陳皮汁可以稍稍中和甜味,不過都還是覺得過甜,個人不喜歡。簡簡單單的幾道菜傳遞出的是潮州菜的精髓。難怪這樣一個老舊的店鋪卻能夠人潮不絕興旺至今呀。這一餐超住家feel的潮州菜徹底改變了我對潮州菜的觀感。強烈推薦尚興,保留了潮州好味道同時性價比也十分良好的一家店!!! 潮州菜必試餐廳之一--尙興!!!!!…Read More

同事們都未諗到午餐食乜,記起有同事話未到過這兒食飯,於是決定去這店子。6個同事每人點一味餸,我地盡可能點未試過的菜式。滷水鵝、楜椒豬肚湯、潮州小炒、海蜤手撕雞、雜菜煲、反沙芋。滷水鵝裡還有滷豆腐,豆腐很滑。楜椒豬肚湯很好味,湯底有很多楜椒粒。潮州小炒就有魷魚,海蜤,肉絲,茜芹,紅蘿蔔絲等,想不到味道非常好,很有鑊氣呢。海蜤手撕雞,粗身的海蜤加上好滑的雞絲,好味。小妹最鐘意食海蜤,是日剛巧有多款海蜤做配菜的餸,so lucky。雜菜煲裡的芥菜有點苦,但整體味道都不錯。反沙芋就令我有點失望,芋頭外披着一層厚厚的糖,但當一口咬下時,糖片即時整塊掉下,芋頭又不淋。我在舊公司時常和同事往一間樓上私房菜,該處的潮州菜做得很出色,尤其是超正反沙芋,好味得很。每次都送的綠豆爽同功夫茶,都是一慣的不錯。下次再來會試其他菜,希望亦有驚喜。…Read More
