今年聖誕節都未能外遊,於是約定好友在本地盡情吃喝玩樂。今次我們的主題是要尋找日本美食,大家立即想到Omakase。我們聽聞這間位於上環蘇杭街地舖的「鮨燐」質素高、服務好,於是預訂了午市時間到來。中午時段座無虛席,廚師很有熱誠地和客人互動。我們點選了兩份壽司14貫定食的廚師發辦。茶碗蒸首先是茶碗蒸,蒸蛋口感嫩滑,與雲耳和蟹柳一起食用,非常滋味。鮮菜沙律沙律菜新鮮清爽,加上醋汁,令人開胃。壽司14貫定食廚師說會用上時令食材,食用時將會由淡至濃味。北海道帆立貝廚師說要先用刀拍打帆立貝數下,讓其神經收縮,食落肉質更爽口。鯛魚這款是愛媛縣養殖鯛魚,膠原蛋白高,比一般鯛魚營養價值還多,食落味道較淡。深海池魚表面經過炙燒,迫出魚油甘香,肉質爽口;放上柚子胡椒醬,加添微辣味道。赤貝廚師用刀把赤貝𠝹至八爪魚形狀,並在表面放上靜岡柚子皮,柚子味十分出眾,帶出清香口味,爽滑有嚼口。鰤魚即大條油甘魚,廚師解釋80 cm以上才叫鰤魚,口感柔滑細膩。池魚相對深海池魚,這種較細條,肉質較軟腍,魚味較濃,表面放上碎蔥,加添香味。北海道牡丹蝦爽口甜美彈牙,廚師把蝦膏拆出微燒,香氣撲鼻。秋刀魚表皮𠝹開放上蔥花,肉質較軟腍,肥美甘香。中吞拿魚腩肥美腍身,油脂味濃,入口即溶。馬糞海膽海膽味道非常鮮甜,鋪滿壽司面層,口感十分creamy,齒頰留香。日本梭子魚即竹籤魚,肉質清爽,炙燒表面將魚油逼出,食落更甘香。醬油漬赤身即瘦吞拿魚,經過醬油醃製,肉質較實,有嚼感。 鯖魚長崎縣養殖鯖魚油份較重,魚味香濃。卷物黃蘿蔔紫蘇葉吞拿魚茸卷:黃蘿蔔爽脆,紫蘇葉清香,加上軟綿吞拿魚茸,多了一份層次感。乾飄卷:即冬瓜乾卷,味道帶微鹹,還加添wasabi辣味。腐皮昆布絲麵栗子雪糕最後還有香滑腐皮昆布絲麵和栗子雪糕,非常豐富。值得一讚的是廚師細心講解每一道壽司,讓我們加深認識 ; 態度有禮,常與客人互動。店員亦不時加添熱茶和更換毛巾,得悉我不吃菇類,便通知廚師不要放在茶碗蒸內,非常貼心。食材新鮮,性價比高,這次享用Omakase的體驗真的不錯。…Read More

食過佢哋個lunch,覺得都不錯,於是試埋晚餐一位$1380嘅Omakase,有前菜、7款刺身、1款和食、6件壽司、湯及甜品,食完飽到不得了!前菜有隱元豆即係日本豆角,本身已經好肚餓,加上落咗芝麻醬,好快就食晒成碟;仲有大學芋,即係炒過嘅番薯,加少少黑芝麻,大大塊又超級甜刺身鮫鰈切成5薄片,加咗柚子皮及蔥,放喺岩鹽板上碌兩碌,鮮味大大提升石垣貝而家係season,上菜前拍一拍,肉質更加彈牙,海水味濃郁蠔北海道蠔加上醋啫喱及海帶,好大隻而且滑溜,食落微酸開胃帶子用紫菜包住帶子,肉厚而且唔加任何調味更加食到帶子嘅鮮甜鯖魚輕輕燒過後加咗柚子汁及一片白板昆布,身形厚實不過油脂唔算多,酸酸哋啱夏天食秋刀魚雖然香港仲熱辣辣,不過日本已經秋天喇,咁就梗係要食秋刀魚啦!加咗自家製梅醬及芝麻,不過我鍾意唔加任何野嘅秋刀魚多啲中拖羅乜都唔加,就咁食,食到原味又鮮甜嘅味道大拖羅輕輕燒過後,再用紫蘇葉及紫菜包住,冇就咁食咁膩,一咬開入口即溶,油份比中拖羅豐富得多青檸柚子啫喱食完刺身,食個啫喱預備食壽司嘞壽司分別有深海池魚、赤貝、池魚、筋子、根室馬糞海膽及右口魚邊。其他就成日食,筋子就要睇季節先有喇和食係煮咗4個鐘嘅鮑魚,肉質軟綿好彈牙食多碗比較少食嘅中華冷麵,啱呀咁熱食冷麵!柚子雪葩最後食多個雪葩,飽晒!…Read More
