今次阿妹帶我去食私房菜,想話懷念下童年回憶。餐館位於觀塘鴻圖道,位置尚算放便;裝修沒有坊間食肆的奢華。餐牌上看見的多是懷舊菜式。百年煙燻太爺雞新鮮雞以煙燻手法去處理是我初次品嚐,而廚師的心思是以另類的烹調來突顯自家品牌是欣賞的。👍惟煙燻做法會因惹味而搶了雞的鲜味是有點可惜,但整體來說是OK。👌薑蔥醬爆魚瞟煲用薑蔥爆魚瞟可除去腥味和惹味非常,口口魚膘膠質濃;而今在其它食肆是很少找到的。梅菜蒸菜心兒時曾食過但已遺忘,難得在此食番。食材雖簡單但極具人情味。砂鍋脆米扣肉炒飯以為是一般炒飯,但食落居然有驚喜。因為廚師把飯分開炸和炒兩部份,混入大量扣肉粒和葱粒;所有材料再用熱鍋盛載,除了香口惹味外還有咬落脆卜卜。…Read More

之前刨 magazine 知道得龍大飯店係觀塘搞咗間私房菜,因為壽星想試,我地5大2小就決定去呢度開餐。得龍係新蒲崗時,我都食過一次,但我自己覺得味道無傳聞的好,不過人有失手、馬有失蹄,加上壽星要求,我決定俾多次機會自己。因為打電話無人接,於是透過whatsapp 聯繫。菜館聯絡人也經 whatsapp 發 menu 給我。之前睇到openrice 既飯評都算ok,於是膽粗粗預訂咗6位份量既私房菜A餐 (因為細路食力少,所以少叫1人份)。講下飯店環境,佢係麗港城附近大坑附近,夜晚係幾清幽。飯店係1/F,要行樓梯上,係假的,上到都5會開門。上到飯店樓層,右邊係黑媽媽,左邊有燈光,見到有2個房間,一間係放幾張大檯,另一間就係放小及中檯。檯與檯之間都幾貼近,幸好當晚食客不多,隔離張大檯無人坐,所以還算ok。伙記都有禮,但後來發生一件事,我就大打折扣。是日A餐有10道,位位$480,包加一及茶芥:1. 翡翠花枝炒帶子:味道ok,只係走咗“花枝“,變成西蘭花炒帶子。因為無落單紙係手,當刻都無留意炒漏咗俾我地2. 上湯焗本地龍蝦淮山麵:調味好,麵質都好,龍蝦比平時食的少肉,多腳仔3. 砵酒焗生蠔:好味,但有一隻竟然有沙。呢個5關廚師問題,係食材問題4. 脆奶拼山楂咕嚕肉:其實份量5多就5好用大碟上,搞到賣相5好睇。脆奶好味,但咕嚕肉就真係咕嚕肉,無山楂味5. 鮑魚燉佛跳牆:有8隻鮑魚,好闊綽。湯也分到12碗,但。。。佛跳牆同雞湯係兩碼子事。我真心覺得呢個似燉雞湯多d,無佛跳牆既咸鮮味。翻開湯料有鮑魚、雞、豬肉、少量螺片、陳皮、龍眼肉、杞子、淮山。呢個真5值6. 清蒸大海斑:條魚蒸過龍,“鞋鞋地“7. 百年煙燻太爺雞:不愧為賣點。呢個係好味,好香煙燻味,雞嫩滑,但多油8. 北菇蝦子柚皮扒生菜:北菇破壞咗呢碟菜,因為它係無。。。味。。。。9. 砂鍋脆米扣肉炒飯:扣肉份量係少,脆米應該係飯焦混埋軟飯一併炒,所以口感幾有層次。美中不足係。。。點解用雪藏雜豆?一下子將這道菜降級了。一來5好睇,二來5 match10. 桃膠燉紅蓮:每碗都有幾粒仔桃膠飯後埋單,竟然收7位錢。我話訂餐時講明6位份量,伙記話我有7人,係煮7人份量(孰真孰假,我真5知)。其實如早講明私房菜係按人頭計,我地好樂意叫7位份量或者轉叫散吃。但飯店事先無講明,whatsapp 訂座也說明係7位,訂餐時也清楚係 whatsapp 寫咗係6人份量。如覺得不行,應事先講明,5係到付錢時才要求收7位。結果伙記用d 討厭既嘴臉看著2位細路,然後不忿地改為6人收費。其實我地預咗佢會收第7位菜芥及加一,但佢又無收。回家後再看 menu 才發覺除了走“花枝“,還走了我們6罐汽水差d 5記得。。。如可忍尿就5好用佢地廁所。。。…Read More

看到網上報導得龍總廚來了百年,立即訂座,用餐前三天還有人特地聯絡我,提醒我要預訂一些菜式,於是訂了沙薑雞及杏汁燉豬肺湯。山渣咕嚕肉 - 沒有山渣味,份量少得可憐,肉細細粒,感覺只有粉漿,跟茶餐廳質素差不多砂鍋脆米扣肉炒飯 - 炒飯味道不俗,扣肉郤沒有整熱便舖在飯上面酸菜浸班片 - 咸酸菜略鹹,本身味道不錯,但卻加入醋,即時大打折扣太爺雞 - 還是有一定水準,可惜醃得不勻,雞胸不入味,但雞脾味道濃香頂訂了的杏汁燉豬肺湯及沙薑雞,剛坐下便告訴我,暫時未有沙薑雞,著我改要太爺雞。之後端上金銀菜豬肺湯分給我們,我立刻制止,我點的是杏汁,有一位侍應來跟我說我沒有預訂,著我改要金銀菜豬肺湯,再隨意拿一張A4紙說沒有我任可預訂記錄。我預訂的全部菜式都沒有,其實早幾日叫我預訂是什麽意思呢?接著想叫的醬爆魚鮫、魚腸,全部都沒有,魚亦不新鮮,實在不能評論大廚的功架。招牌菜(金錢雞、鴨腳包、杏汁豬肺湯)沒有了,剩下只有總廚和依舊欠缺的服務,表面的私房菜預訂流程,和普通中式酒樓的菜式。硬要把我本不打算叫的金銀菜豬肺湯和太爺雞推銷給我,這是經營私房菜的手法嗎?…Read More
