一整個季度,大家都在艱難中苦苦支撐。是,困境總會過去,但我又能捱到太陽再出來的日子嗎?「要活下去」,想「生」,就會有「機」。把自己多年受主顧們喜愛的菜式,變成放題「盡地一煲」,就是這坐擁多年「米記」稱譽老店的招數。最初反應淡靜,後來經媒體曝光,便引來不少初試的客人,也不乏忠粉撐場,總算有了成績。今天連假,便把補祝和預祝生日、母親節等一次過同慶 - 就四個人!我們甫安頓不久,已經有菜式上桌!不用點,送的:每人一隻新鮮炸起的乳鴿!四人中有兩位不吃,那我不客氣,多吃一隻了!熱騰騰的脆皮,咬落滿有肉汁,對餓著肚子到中午的我,真是及時的慰藉。除了乳鴿,放題還有幾款每人一份的菜式,包括羹湯和粥,把這些都吃完,您大概已飽了一半!接著是「當店自慢」、每枱必點的生炒排骨。既是一饗老饕的「名物」,評鑑的水準自然要提高一些。個人覺得若汁少一些、排骨炸得更脆身,效果會比較好。我心中的標竿,是原位於中環金華燒臘旁商廈樓上的革新會,其貌不揚、售賣兩餸一湯、白飯任裝的打工仔套餐,但做出連食慣好嘢、那天「紆尊降貴」陪我們同去的主管,都大讚「好食到耳仔郁」的生炒排骨!可惜金華現在已經消失,至於革新會,還是當日去吃飯那個模樣?接下來是吃齊放題內的「三雞」:南乳碎炸雞、招牌鹽焗雞、東江沙薑雞。一直都是吃肉,不吃到撐才難!這放題難得的是,把一些平時不易吃到的菜色,都放到任點清單之上:梅菜扣肉固然是令人又愛又不敢亂來,還有蝦子柚皮!席上長輩說自己做得比這更好,不過畢竟是工夫多,我們還是乖乖先吃完面前這碟,不欲老人家辛苦了!云云菜式中,值得特別一提的是兩款魚類菜式,特別是煎黃花魚,店方選用了較細條的魚,做出來效果相當不俗,甚至超越了凡到小南國等上海菜館必點的小黃魚!腸胃已傳來訊號,但還有些想吃和「翻兜」的,要勞煩一下肚仔再接再厲了⋯由頭帶到尾,盡興的代價是:食滯了,之後胃脹了幾天!下次再去吃,會點多幾碟菜吃,做好平衡⋯哈!…Read More
