灣仔美食之多可謂數之不盡,但令小妹我最印象深刻和難忘的美食,一定是祥興記的生煎包。 細小的生煎包,外脆內軟,而且超多湯汁,輕輕一咬, 慢慢把湯汁吸入口中, 熱辣辣的湯汁吸收了肉質的精華,簡直令人再三回味,絕不容小覷,而將它的香脆美味比起小籠包簡直有過之而無不及。說起生煎包, 其實它源於1920年的上海,一般店門口立著由柏油桶改制的爐子,上面置一口鑄鐵平底鍋, 裡面是一張長條形的台板,這就成為了典型的生煎包店鋪。很多人未必知道生煎包分了混水生煎和清水生煎。 混水生煎即以新鮮豬肉和皮凍為主,皮凍是指將新鮮豬皮切絲,加入適量的適味料(例如:蝦乾,花生碎等),用清水長時間熬煮,將其中的膠原蛋白熬煮出來,之後冷卻,湯汁即凝固成皮凍。至於清水生煎即在餡料不添加皮凍。個人認為混水生煎比較常見,亦美味得多。生煎包一般配以辣椒醬或鎮江醋來吃, 但祥興記的生煎包,個人覺得不需要配醬料已十分夠味。除了生煎包外,小妹我亦點了蔥油拌麵,大量的蔥絲配以上海粗麵和醬油來吃, 炸過的香蔥與沾滿醬油的粗麵,香味濃郁,令人食指大動。至於價錢方面,招牌生煎包和蔥油拌麵價錢相宜,而其他食物,價錢合理,但味道則不及這兩款,所以個人還是比較推介這兩款美食。…Read More
