好友讌請,當中有人極有興趣食一餐懷石,在無異議下就決定找一家有水準的店,由於人數也不少,找上這店可安排已是不容易,而菜式更是徵詢了幾位友好,一改再改才定下來的。說實的,從太古廣場行上去真是較為複雜,門口只有一個小燈箱招牌,比較難找,但又給人一種隱世店的感覺,這晚人數不小,故一早安排了一個獨立廳房以便大家可以無拘無束地開懷暢飲,高談闊論。菜單是一早訂好的,八道菜的懷石料理令人期待,但去到坐下後,人未齊之際,店方送上了一個驚喜,就是不在餐單內的餐前佐酒小食,炸蝦頭,小小的蝦頭原是一些'下欄',經過師傅處理後,炸得極香脆,入口香脆如炸小魚干,味道微咸,佐酒真是一流。第一度菜,相當別緻的三款前菜,一款用蝦混上沙律醬配合蠶豆,再加上一小片海苔,口感中混合了蝦的爽和豆的淋,在口做成強烈反差配合,味道由海苔和沙律醬帶出了鮮甜味;另一款用新鮮海膽放於腐皮上,加上適量的日式芥末,入口由淡淡的腐皮來襯托出濃郁的海膽鮮味,口感更是非常嫩滑細膩;還有一款用炸蟹肉拆絲後,炸至香脆,口感清脆,放於雜菜之上,美觀十足,雜菜下還放了不少韮王,濕潤的雜菜和雜菜味道清香,配合香脆的蟹肉絲,味道清新,口感爽脆而帶濕潤,十分令人回味。第二度菜,刺身,吞拿魚食的是赤身部位,味道鮮甜,肉質鮮嫩,口感軟而有彈性;竹簽魚,應該是類似針魚一類的梭魚,味道較清甜,口感略為結實,可惜其中有三位朋友食到有骨,日本菜的刺身食到骨,已是完全失敗;喜之次,口感嫩滑,魚味濃郁,甜美非常。第三度菜,蒸物,用簡單蒸煮方法,先將日本人叫的大根,即白蘿蔔用醬汁煮好,再將鯖魚(即馬鮫魚)放上蘿蔔上一齊蒸熟,魚肉入口口感如食嫩雞肉,味道鮮甜嫩滑,加上面頭的蔥白絲,口感清爽而味道清新,下面的蘿蔔吸收了魚的鮮味和頗濃郁的醬汁,整體配合得恰到好處。第四度菜,天婦羅配炸物,炸櫻花蝦餅,炸漿不油不膩,入口鬆化味道香濃,咬開後見到裏面的櫻花蝦相當多,所以蝦味甚濃;天婦羅露笋,天婦羅漿甚鬆化,而露笋粗大爽嫩,入口清脆口感,味道清新甜美;另一天婦羅松茸更是一難得的佳餚,松茸味道香濃,入口天婦羅漿香脆的同時松茸軟嫩汁多,味道濃郁的同時口感細膩多變。第五度菜,酢物,當中的凍蕃茄是應其中一位坐上客特別指定所選的,可能不太合時,覺得平平無奇,汁液不算太足,也不覺特別鮮甜,口感偏爽,或者是因為我們特別要求,所以師傅花了點心思,特別配上了一道拆肉毛蟹,好讓這平凡的蕃茄發揮其最大作用,將毛蟹的清香味道突顯出來,毛蟹肉再拼入青瓜一齊食,口感更清新爽口,味道更倍加清甜。第六度菜,燒物,肝汁鮑魚,這是我非常期待的一道菜,紅燒的鮑魚上面再配上師傅特制的肝醬,據說此肝醬是用了鮑魚的肝做成,味甚濃郁,鮑魚入口淋軟彈牙,嫩滑有咬口之餘又完全不覺韌,再配合師傅的秘制肝醬,味道甘香濃郁,鮮甜的鮑魚混合略帶咸香的肝醬,更顯出鮑魚的美味。第七度菜,輪到飯和湯了,櫻花蝦釜飯,櫻花蝦略炸,混和用正宗日本米煮出的釜飯,口感香軟中帶半點脆口,味道香甜可口,再配以清香而爽口的山藥和青瓜及海帶等小配菜,更令人胃口大增;跟附的味噌湯,味道雖然香濃但入口也絕不過咸,作為伴釜飯的湯,味道恰到好處。最後一度菜是甜品,我選擇了綠茶配紅豆和果子,和果子非常粘軟香滑,內裏紅豆蓉濃香甜美,入口甚甜,但配上略帶甘味的香濃綠茶,却是絕佳甜品,可謂甜而不膩,吃完整個甜品後,不單沒有甜至膩口的感覺,口中還有回甘的味道。不能不提的是餐廳跟足正統日本料理的做法和禮儀,臨尾主廚還親自出來與我們作溝通,查詢客人對這晚的食品是否滿意,對其不足之處作出真誠的歉意,其風味規範完全做到一間正統日本料理的水準。…Read More
