越南菜在香港雖不算是主流受歡迎菜式,但其粉絲相信確實也不少,觀乎衆多越南餐廳很少冷場已知一二。前陣子就造訪了一間落戶於又一城的越南餐廳,一嚐在香港「非一般」的越南菜。 🔹門面設計以Tiffany Blue為主調,富格調得來又吸睛,店內佔地頗廣,裝潢揉合了東方及法屬殖民地色彩,牆上掛滿了很多越南風情的油畫,配上特色吊燈和典雅裝潢,柔和燈光下散發著獨特的法越優閒情調,雅緻舒適。 🔹餐廳主廚擁有逾四十年主理越菜經驗,以超凡造詣呈獻南北中越多款經典菜式,讓食客盡享越南地道美食的精髓與真味。 🔹菜式當然以越南風為主,大廚更融入了鄉土菜和東南亞的風味做法,跟市面上一般食到的越南菜有所不同,特色美味。 🔹收費算屬中高檔定位,但部份菜式也是貼近市價的,而且有如斯舒適情調的用餐氛圍,論環境食質素其實也十分合理。 安南春卷 $128,近年外面食到的越式春卷不知怎的大多是米網或厚皮的,已經不是舊日的味道。難得這店沿用了傳統米紙包著蝦蟹碎豬肉和粉絲餡炸脆,皮薄餡足,脆口豐盈,包上生菜蘸上大廚特調的酸魚露同吃,減膩開胃。 雙色扎肉粉卷 $128,軟滑粉皮包著用雲耳蝦肉扎肉和豬肉碎拌成的餡料蒸熟,面頭灑上蔥油和炸蒜,蘸點酸魚露同吃順滑惹味。 順化浮萍餅 $98,外邊少見的一道菜式,米漿蒸成薄薄如缽仔糕般的米糕,面頭放上牛肉蝦肉碎和油蔥,食用時在邊緣位拌入少許酸魚露將米糕起出,口感軟嫩幼滑,入口即溶帶鹹香,十分美味有特色。 柚子沙律,金柚肉和蝦仁拌上酸香微辣醬汁,清新醒胃,是一款到位的開胃前菜。 安南椰青大蜆 $198,另一道特色菜,大蜆以椰青水、香茅和薑片一同煮熟,入口鮮甜滲著淡淡香茅椰香,最特別是薑味也十分突出,湯汁帶微微的薑辣,啖啖暖心。 炭燒大頭蝦伴濱海 $298,大頭蝦件頭十足,蝦頭堆滿了蝦膏,面層鋪上了以部份蝦膏和椰水煮成的醬汁,入口鮮味膏香滿瀉,撈上伴碟的濱海掛上蝦膏汁,加點魚露添上鹹香吊出鮮味,香濃軟糯,更顯越式滋味。 安南燒雞(半隻) $198,賣相金黃富光澤十分對辦,熱辣辣份量十足,入口外脆滑嫩帶焦香,有點中式炸子雞的影子,但相對沒有太油膩;蘸點南乳汁佐食又是另一種風味,鹹香惹味。 明爐珍珠𙶘酸鍋 $278,鑄鐵鍋內放上了原條珍珠𙶘和鮮茄香菜熬煮成湯,端上來已酸香撲鼻;湯汁微酸富魚香鮮味,掛上越南米粉同吃開胃暖心。最驚喜是𙶘魚完全沒有散開原條可以夾起,肉質更是軟綿嫩滑沒有預期中的粗糙,蠻有驚喜,控制火候的功夫值得一讚。 馬拉盞炒通菜 $98,翠綠通菜以馬拉盞炒香,鹹鮮惹味爽口,吃得那樣豐富來點菜蔬平衡一下,好味健康。 自製椰子雪糕 $58,雪糕帶濃厚的椰子清香,順滑中夾雜了椰絲肉增添口感,冰爽豐盈中滿有奶香,不愧為店內名物之一。 甜品拼盤 $108越南咖啡奶凍,個人覺得是另一款必試甜品,入口滑溜微甜,襯托著濃濃的咖啡香,那份濃滑讓人欲罷不能。 椰汁紫糯米,香滑椰汁撈上軟糯帶嚼勁的紫糯米,比一般的相對稀身,微甜輕盈。 西米斑蘭糕,糕身軟糯不像傳統的煙韌口感,而且能吃到一粒粒的西米增添了口感,甜香中滲著怡人班蘭香,別有一番風味。 法式焦糖焗蛋,入口滑嫩富蛋香,焦糖味算突出,甜度亦剛好。 整餐質素頗有驚喜,尤其有些菜式如浮萍餅和明爐珍珠𙶘酸鍋是外面較少見的,特色美味。而且用餐環境舒適,招呼亦算到位,值得一試。…Read More
