甘棠燒鵝係以創辦人甘先生同燒味師傅棠哥命名。甘先生是鏞記甘氏家族的一份子,棠哥則是舊時鏞記酒家的燒味部師傅,延續了鏞記的質素和要求,出品自然不在話下。我已經回訪過甘棠數次,尤記得初次拜訪時品嚐的甘一刀叉燒,簡直震撼了味蕾。😮甘棠的叉燒,採用了西班牙黑毛豬製成,肉香更為突出。而🔸甘一刀叉燒🔸則選擇了肥瘦相間的部位,厚約5釐米,燒得外焦內嫩,邪惡至極。每一口都充滿油香,不用太多咀嚼就融化於口中,是一試難忘的口感與味道。甘一刀叉燒,是暫時吃過最好的叉燒,即使一些摘星的米芝蓮中菜廳,也未必去到如此水準。但一塊就剛剛好,多了就會膩🤣除此之外,🔸琵琶鵝🔸也是令人振奮的一道菜式。琵琶鵝以特別的方法燒成,呈上碟時鵝身打開,鵝頸翹起,恰似一把琵琶,故此命名。琵琶鵝的皮比一般燒鵝皮來說更為香脆挺立,那程度簡直如薯片一樣!肉質也是嫩滑,十分出色。嚐過鵝肉,來到甘棠必須要試的還有🔸一品鵝雜煲🔸。鵝雜煲叫價不菲(與一隻燒鵝差不多價錢),但值得一試。煲內有鵝腸、鵝紅、鵝肝、鵝翼等材料,燜煮過後與醬汁融為一體,如果愛豬紅的朋友,你一定會愛上鵝紅,因為它的口感十分順滑,說不出的美妙的感覺。不過鵝肝稍微失色,長時間烹煮後略嫌過老。以上菜式切記提早預訂!另外出色的菜式還有🔹蟹肉桂花炒瑤柱🔹大班叉燒🔹蝦子扎蹄🔹金錢雞…Read More
