大肥爸爸牛一話想食壽司,由於限聚令仍未放寬,一家四口唯有襯週末放半晝才一訪設有下午茶市嘅酒店壽司屋「鮨一魂」。皇冠假日酒店位於銅鑼灣核心地段,除咗比較塞車之外,交通都算方便,不過自從做咗隔離酒店後就冇咗代客泊車服務。由於座位不多,貴客必需預先訂座、定好菜單及全數預繳。抗疫階段,用餐時間只限中午十二點或下午三點四十五分兩輪。食物方面可選午市或晚市嘅廚師發辦套餐,兩頁餐牌合共即有四款。日本清酒、紅酒、白酒、氣酒或烈酒之開瓶費為$700一樽720-750ml及$1,500一樽1L,一啲都唔平架!幸好新張期內,每叫一樽酒牌上嘅酒可免一樽開瓶費。準三點九抵達,即由聯絡開嘅Minxxx妹妹接待,帶領步入餐廳。酒店樓層樓底高高,相當有氣派。以木為主嘅裝潢簡潔樸實,配上零星嘅小擺設已覺和風味濃厚。圍繞著師傅大舞台有九個吧位,每二人就有塊膠板隔開,四口子同住都冇得例外,衛生水平絕對符合標準。如果想要更多私人空間的話,走廊通道右方其實隱藏咗一間可容納四至六人嘅壽司吧廂房。另用餐大堂嘅吧位背後亦設有可容納二至四人嘅半廂房式卡位。吧枱席上有齊備嘅自用餐具及口罩套。據悉,於去年十二月一日正式開張嘅新店從東京邀請到黎坐鎮嘅井上渡先生乃米芝蓮星級名廚,堅有來頭,當真令人期待!為大肥慶生又點可以不備佳釀呢?!為感恩這次的難得一遇,XO仔特意揀咗枝「醸し人九平次Le K rendez-vous純米大吟釀」襯托一番。四人點咗午市「桜 お任せ」($780/位)及「梅 お任せ」($1,080/位),兩款分別在於後者多三貫壽司。下午茶時間亦可視作為早鳥晚餐時段,講真肚肚唔係咁餓,細佬就試咗寿司12貫嘅「桜 お任せ」。套餐均由精美嘅前菜拼盤作序,內含五款都幾重口味嘅小食,食用次序可隨心所欲。方形靚盤中嘅五條小鯷魚乾甜脆冇渣。最輕巧係個鮮甜清爽嘅蟹肉蘿蔔卷。個人略嫌腍身嘅昆布希靈魚卷同爽脆嘅希靈魚籽偏咸咗少少。甜甜嘅金箔黑豆剛好可以中和口腔殘餘嘅咸味。「向付二種」係指兩片透光嘅平目魚刺身,簡單捲入紫艷嘅紫蘇花,再點上豉油,兩件DIY紫蘇花平目卷芳香鮮美。壽司均由師傅預先調好味,故餐桌上並無擺放任何醬油或山葵,盤上只有辣辣嘅薑片。上壽司前每人先派發濕巾一張,放便食客於抹手後可以傳統和式方法進食,亦即用手食。打頭陣為銀邊白肉嘅千葉縣針魚壽司,師傅巧妙地以辣蘿蔔蓉點綴,成功刺激到味蕾但又唔會過火,效果既醒神又醒胃,即「雙醒」!半𠝹成小方磚嘅小肌魚壽司質感爽潤,伴上同樣帶少少辣勁嘅薑蓉,可承接辣蘿蔔蓉嘅惹味之餘,仲提升埋小肌魚嘅鮮味,設計者明顯花過心思。意外地,真鯛魚壽司及左口魚壽司雖然只塗上薄薄嘅秘製醬油,但都一樣咁鮮爽甜美,毫不失色!反而白雪雪嘅魷魚壽司嘅鹽味過激,混入咗青檸汁感覺有啲似「食」緊Margarita 雞尾酒咁。嘩,此件北海道帆立貝壽司厚肉得黎超級爽嫩,食落口腔即洋溢著柚子嘅芬芳,清新得很!十二件壽司中,最有驚喜必數紅潤光滑嘅鰹魚壽司!因為之前食過嘅鰹魚唔係煙燻過都會係燒過,今次竟然係原汁原味咁食喎,柔軟油潤嘅鰹魚肉不再嚡口,頂面加配香濃嘅薑蔥有助增添魚魚嘅鮮甜,神來之筆令鰹魚更堅,冇得頂呀!接著色澤粉嫩嘅中卜口壽司厚潤肥美,慢慢溶化於舌上,美妙窩心極!鮮橙奪目嘅海膽壽司由師傅直接擺放於貴客嘅手背上,嘻嘻,XO仔排最尾,好彩手機食咗三次後終於成功影到一輯滿意嘅大特寫,輪到自己時可迅即讓鮮濃嫩滑嘅海膽壽司入口,堅掂!源自青森嘅三文魚籽壽司其實應該叫迷你三文魚籽丼先貼切,因份量真係有成隻碗仔咁多架!橙艷圓潤嘅三文魚籽不單粒粒晶瑩亮麗,每粒於口腔爆裂出嘅鮮與香確真令人精神為之一振!正當其他人可品嚐穴子壽司時,師傅為怕骨骨嘅小肥改咗件爽潤彈牙,肥厚潤澤嘅九州深海池魚壽司。壽司環節以輕盈健康嘅四式齋卷作結,其中醃青瓜卷及牛蒡卷十分爽脆,而乾飄卷及紫蘇蘿蔔卷最為清香。接著嘅蛋蛋「玉子燒」外型好挺身,咬落軟綿香潤得黎極富彈性,深啡色嘅皮層尤其甜美,好似蛋糕仔咁易口入。飯後有碗暖胃嘅味噌湯。知悉當日係為爸爸慶祝壽辰,好客嘅Minxxx妹妹專登安排咗個心太軟俾佢許願,仲幫忙拍攝靚靚嘅全家福,極之體貼!甜品鯛魚燒夾入醇香嘅綠茶雪糕及紅豆蓉,巧脆清涼且不溜滯。銅鑼灣酒店壽司屋「鮨一魂」環境優雅闊落,服務生友善周到,酒杯可保持常滿狀態可謂酒鬼嘅恩賜,午市廚師發辦套餐高質豐富,每件刺身及壽司當真全部由日籍星級大廚親手備製,酒店高企之價格能於短時間內成為城中熱店絕對有理!…Read More
