是晚去咗觀塘搵朋友,問佢附近有乜嘢好食,佢推介咗呢間餐廳,所以我哋去試下。大約7點半左右去到,本來唸住要等位,點知原來間餐廳只有一半人入座。入門口之後,就見到一排排鵝吊咗喺度風乾,跟住見到個燒鵝爐同埋個燒豬爐,即時對呢度嘅燒味信心大增。打開個餐牌,發覺選擇很少,但是由於只有 J 同 E 兩個人食飯,所以盡量叫少d。我好鐘意飲湯,所以叫咗個是日例湯:椰子雞湯(小)$98,本來以為係例牌行貨嘢,點知有驚喜,椰子味道香濃,睇得出廚師落足料。欣賞餐廳將湯渣同湯分開上,所以一小煲湯也可以分成5碗。本來想叫半隻燒鵝,但係喺 J 大人阻止下只叫咗份燒鵝(例牌)$138,一如所料,由於不是叫全隻嘅關係,d燒鵝係已經凍咗,所以打咗折扣,但係我可以估到如果隻燒鵝係熱辣辣嘅話一定好好食。侍應姐姐推介特價上湯加拿大龍蝦,任叫任食只係$68一隻,所以我哋叫咗2隻,龍蝦肉質彈牙,食得出係好新鮮,不過個人還是比較喜歡芝士焗口味。仲有細心嘅 J 大人發現嗰 4 份半隻開邊龍蝦並非出自兩隻龍蝦,除咗大小不一之外,仲有3份係左邊而1份係右邊,所以話呢,女仔真係細心d,唔到你唔服。呢度服務一流,侍應姐姐有禮之外亦很勤力換骨碟、加茶水,值得一贊。飯後贈送了紅豆沙甜品,雖然係免費,但係食得出係足料之作。可以改善之處為所有餸菜不應一次過送到嚟,令我們食得燒鵝嚟又食唔切龍蝦,白白睇住d美食攤凍浪費。…Read More

因為只得三個人,沒有訂位,六點去碰吓運氣,只有近門口燒鵝風干櫃前一張細枱。招牌燒鵝例牌先上,我同老媽每人食兩大塊鵝髀肉,其他部份阿女清哂 (因佢遲到), 非常甘香滑溜,反映風乾過程做得非常專業, 一絲不苟。籠仔豉汁蒸大鱔, 大大碟(籠)有超過10両白鱔,材料費街市自己買都要過百,這裏才收一百四十八,取價算很克己。 阿女 唔俾老媽同我食得太鹹,貼心地將豉汁洗淨先比我地食, 但仍然覺得好鮮味, 證明係用新鮮材料唔係急凍貨。冰梅骨, 係源自潮州菜梅羔骨, 但係加入左廣東燒味元素 ,味道更上一層樓。, 係改良自潮州大芥菜煲,湯底咸鮮味濃,用一個小火爐上, 效果非常不錯。另外也要了味菜鵝腸同鮮蝦荷葉飯,前者用新鮮鵝腸,味道不俗。後者用料很夠,但蝦肉有少少蘇打粉味,不過老媽也連盡二碗。值得一提是這裏的每碟菜份量都很大方,我最怕一些"小家"歺廳,令人食得很寒酸。大厨團隊應有潮州菜同粵菜既大師傅,希望佢地更進一步, 多做一d跨菜系既fusion 菜式。…Read More

觀塘的鱷魚恤中心餐廳林立,是搵食的好地方,而且由apm直接可走捷徑過去,非常方便。釣魚翁當晚客人很多,部長嘗試把客人分流到樓下三樓同一個集團的北斗翁頂尊火鍋料理,我們則堅持在這邊等。飯店的裝修跟傳統酒樓不太一樣,至少地下不是鋪上那種大紅地氈,改用黑色雲石和原木地板,配上天花一堆堆圓形的手工燈,感覺很優雅。檯與檯之間空間感亦足夠,而且就算是兩個人也不用跟人搭檯。先來一枝德國Erdinger的黑麥啤(500ml 酒精含量5.3%),它僅僅使用麥芽、啤酒花、新鮮酵母、水四種天然原料進行精釀,更選用高營養價值的小麥,投入比例是50%以上,當中沒有添加其他香料及副原料。發酵方法也有別於主流啤酒,同時使用了「上層發酵」和「瓶中二次發酵」兩種方法,於裝瓶前再次添加新鮮酵母,讓它在瓶中持續發酵。黑麥啤的外觀呈褐色,有一陣陣果實香,味道帶點甘甜,酒精味跟其他牌子的黑啤相比較輕,氣泡順口帶有淡淡的麥香,女孩子喝也很適合。等待上菜的時間,邊喝啤酒邊吃餐前小吃,也是一種享受。是日小吃是花生小魚乾,兩者口感都非常爽脆,作為餐前小吃真是一流。這種在乾貨店可以買到的鹹魚仔,蛋白質含量高,買一堆回來深炸至金黃硬脆,沒有餸的日子,單以它來拌飯也覺得香口美味。蒜蓉粉絲蒸元貝不錯,去了內臟和裙邊,只取貝柱的部分。蒜蓉不會太鹹,配粉絲味道剛好,元貝肉質柔軟而且絲絲分明,口感像蒸魚肉一樣嫩滑,$16.8/隻算是抵食。沙巴龍躉仔一條差不多也有大半手臂長,它屬於龍躉和老虎斑的混種,身上有黃色和黑色的斑點。沙巴最先發明這種人工繁殖,因為養殖時間比一般斑類快近一倍便可推出來賣,所以後來養殖的人愈來愈多,令產量增大。它的魚味很濃,蒸出來效果不是特別嫩滑,但肉質結實有彈性而且鮮甜。最喜歡是那碟蒸魚豉油,想用來拌飯,叫了老半天白飯都沒來。結果催了五次有多,魚都吃了大半才來,真是叫人暈倒。來這兒很大原因是為了吃燒鵝,價錢方面,例牌$128,半隻$208,全隻$398。廣東燒鵝雖然各師各法,但都不離醃製、上皮、風乾、燒烤等基本步驟。除了要花時間醃製鵝腹內,還要用醋及麥芽糖塗在鵝身「上皮」。飯店入口處有個大玻璃窗,內裡吊著一排排的鵝,那是個裝了空調抽濕的房間,鵝隻會在入面吹風扇一整晚,待乾後隔天才移去隔壁的燒爐內燒。我們點的是例牌,斬件後的擺盤尚算整齊。燒出來的皮呈棗紅色,色澤均勻,皮脂不算多,但皮脆酥香。鵝皮薄而透亮,燒出來的那個格仔紋非常好看,拔毛處理得挺好。之前試過去荃灣太興吃燒鵝飯,一整片鵝皮都是處理不好的鵝毛頭,非常倒胃。碟底的滷汁同樣美味,不過肉質有點過於結實,而且比較乾身,這點非常可惜。當日飯店有部分海鮮有推出優惠,其中果皮蒸大連鮮鮑魚6隻才售$168。離開時看見飯店的大魚缸養滿了鮑魚,大大隻的,那個畫面挺吸引,心想剛才做推廣的是不是這些鮑魚哦?2013年的飲食記事,以這篇釣魚翁作結。去年的這個時候偷懶了好一陣子,有些去過的餐廳都沒有好好整理和紀錄,感謝他一直陪我增肥,也陪我到處去到處吃,感受不同的風景。感謝他縱容我有時只顧拍照,把食物都放涼,也包容我只顧即場記下一點感想而忘了要好好跟他對話。2014年,希望仍然能相愛如初。…Read More
