與一班老友聚餐的地點,今次選於較遍遠的屯門三聖興記,是最令人興奮的海鮮餐。頭盤是燒鵝。雖然今晚的主角是海鮮,但是興記的燒鵝是特別不容錯過的。皮脆肉嫩不在話下,而且脂肪極低,整隻鵝的皮下脂肪都是極少。最最最難得的是牠的味道很清,沒有一般燒蠟店的濃烈,可以清楚吃得出鵝的味道,絕對令人回味。之後是冰鎮鮑魚。雖然鮑魚是相當明貴,但由於牠味道不濃,賣點是爽口彈牙。一般鮑魚的腸胃部份都有點沙石,吃起來會很麻煩。不過由於這些鮑魚已經吐沙,所以可以吃得盡情一點。接下來是我最喜歡的海中蝦,分別作為兩道菜,美極煎蝦碌及蒜蓉蒸開邊蝦。由於蝦本身十分新鮮,因此味道十足,兩種做法都極具滋味。如果喜歡味道濃一點,會喜歡美極煎蝦碌,因為以蒜蓉清蒸的味道較為清甜。豉椒炒蟶子王加炒米粉底 - 蟶子味道不容多說吧,不過幸好豉椒的獻汁不太濃烈,以免不會令人太容易食膩,更難得是蟶子下面的炒米粉。米粉乾身,將多餘的獻汁吸收,既脆又惹味,而且還可以飽肚,十分超值。蒜蓉粉絲蒸帶子 – 這味是海鮮餐中十分常見的菜式。帶子鮮甜爽口,粉絲及蒜蓉的份量又十分足量,唯一令人遺憾是每人只有一隻XD。一魚三味 – 芹菜炒斑塊、蒸魚腩及炆頭腩。我本身並不太欣賞魚類,但仍然忍不住吃了很多口。首先炒斑塊,主要賣點是沒有骨,啖啖肉,最合適怕骨的我。我想不用多說蒸魚腩的優點,可以說最能表現魚鮮味的烹調方法,一口就能知道一條魚新鮮與否。至於魚頭及魚骨部份,先以麵粉炸至乾脆,然後用蚝油炆一下。其實味道層次並不複雜,但是就十分適合用來作下酒物。哈,所以最後我們一行人都全清這碟。…Read More

現在香港食海鮮,雖然唔少地方,但底食大件新鮮唔呃秤的已經少之有少,三聖算是自買加工少數中比較呃得少又算平秤的地方。今晚來到興記,但這間出名偏偏是燒鵝一睇就知好肥的燒鵝,諗住皮脆肉嫩,第一口食胸就十分失望,肥就十分肥,皮硬唔係脆,肉唔嫩,髀肉還可以,不過味道唔差,酸梅醬幾好食。又是出名唔一定好。之後都是自買加工的,除了豉椒蟶子比較濃味外,其餘都偏淡味,由其蒜蓉粉絲蒸扇貝。今次海鮮都十分滿意,在碼頭買了$1990海鮮。結帳是9斤加工費加燒鵝$1044,價錢算正常價。服務員都肯換碟,環境有點迫,不過都接受到。入屯門食海鮮,當然是三聖,燒鵝?算啦…Read More

拜訪金童玉女的清雅新居後,晚餐決定在吃地道風味的興記搞掂。週六來幫襯的人大排長龍,辛苦兩位等位的猛男了;等到拎到位,海鮮格價隊又回歸,時間已是差不多九點,好在上菜神速: 燒鵝-雖然數天前鏞記的出品鵝肉甘香嫩滑,但講真我還是不太吃得慣軟皮鵝;興記的燒鵝肉質不能同鏞記比,卻勝在皮脆又多肉,一班餓鬼還是很受落的。鹽酥鮮魷-如Oli所言,炸粉多是此店特色,我估計是用來掩蓋不太鮮味的食材吧。鮮魷一點不鮮,加上厚厚炸漿後,初吃十分惹味,再吃就會感到很膩。咕嚕肉-味道一般,肉質偏下,相比之下菠蘿更顯吸引西檸雞-炸漿過多情況最為嚴重,而且醬汁極酸,是最差的一味清炒西蘭花-清淡不油膩的綠葉腐乳炒通菜-水準一般,可能就是差那麼一點鑊氣叉燒炒蛋-炒蛋算滑,叉燒亦不會太瘦太乾,是最快清碟的一味粟米班塊-厚漿班塊味道一般,反而粟米汁不錯,我拿去撈飯了! 自家出品中,我較欣賞燒鵝及西蘭花,其他普通吧。而要數最驚喜,一定是自帶海鮮,雖然油料$38/斤,但興記絕不呃秤,份量充足的上檯:椒鹽珍寶瀨尿蝦王-我們特登揀了軟殼瀨尿蝦,果然比一般硬殼的輕薄,已經夠巨型的瀨尿蝦也更顯得啖啖肉;由於用貨極度新鮮,每啖咬下去都鮮味滿溢,十分滿足!豉椒珍寶蟶子-其實豉椒製法會減卻鮮味,不及加蒜茸粉絲去蒸好吃,當然吃到最尾清蒸菜式就不太合直啦。由於巨型蟶子鮮美霸道,未被豉椒味掩蓋,也是一道美味! 這頓地道風味+海鮮餐,埋單比預期中平了好大一截,十分抵食,值個笑臉的!…Read More
