本身就係潮州妹嘅我,真係細細個食潮州粥、潮州餸大。近年因為媽媽不在,已經少了很多機會食到家常潮州便飯。自從加入潮州菜關注群組,攬到我心思思食日想食,終於今晚約埋家姐去九龍城食潮州菜。八點左右去到,已經坐滿座要等位。老闆娘都好好拎咗啲摺椅比我地坐住等。大概十五分鐘左右終於有檯了。入座後即刻睇吓食啲乜。潮州人家常飯餸 《潮州春菜》,呢個食番兒時屋企的味道。細細個屋企一定有一煲坐鎮,春菜要煮到又淋又入味,放入鹹豬肉,春菜吸收鹹肉香,送粥一流。《胡椒豬肚湯》呢個都係童年回憶,記得細個試過幫手洗豬肚,又要粗盬去潺又要白鑊炒完先煲,工夫都係唔少。另外胡椒最緊要煲夠時間先會爆開,湯先夠胡椒香辣味,飲完十分暖胃有益。加埋潮州酸菜,成個湯鹹鹹酸酸辣辣,又係一個湯,啲豬肚酸菜又可以做一個餸。:)《滷水鵝片》滷水鵝以前好矜貴,記得細個每逢過時過節,媽媽先會買一隻鵝返嚟自己劏。整滷水鵝要搞足兩日,都算是功夫菜之一。食鵝點都要有少少肥至好味,滷水夠味,入口有花椒八角香。呢間嘅鵝肉嫰甘香,片片厚薄均一,啖啖鵝肉令人齒頰留香。《煎蠔仔餅》真係潮州菜最受歡迎熱門菜之一。香脆惹味,蠔仔鮮甜,加埋芫荽蔥同魚露,大人小朋友都鍾意食。《韮菜豬紅》呢間韮菜夠嫩,吾會好老好多筋。豬紅整得幾出色,又夠滑又夠味,真係好好食。普通食材都煮得好昧,呢個先利害。《高手反沙芋》係潮州經典菜式。每逢農曆新年媽媽都會整。不過因為生芋頭會令皮膚痕癢,所以冇學過整。依家相信都越嚟越少人識整,所以幾飽都好,家姐堅持要食。芋頭好靚夠粉,師傅真係高手,每件芋頭都均勻沾上沙糖,真心十分欣賞。最後,我哋當然食唔曬,吾好浪費,打包咗返屋企比阿仔宵夜,等佢都品嚐一下潮州傳統飲食文化。老闆娘同高手師傅都好有善,知我哋兩個係潮州妹,一有空閒就走埋嚟坳水吹,仲話請我哋飲多支青島咁話喎,真係感受番兒街坊的人情味。臨走仲要比我見到肥美鹽焗烏頭魚,今次無食下次一定要食。…Read More

九龍城除咗多泰國菜館之外,其實都有好幾間高質素嘅潮州菜館,仲要係越傳統越冇裝潢嘅就越高質素越正宗。今日有個朋友就發起去九龍城打冷,我哋一行四人,相約7點喺新城潮州飯店門外等,估唔到平日晚市都座無虛席,等咗一陣先有位。一入門口就見到好多傳統嘅潮州菜食材,凍蟹、滷水鵝等等,全部都好吸引。一坐低店員就會奉上三款調味醬汁,包括有配搭滷水鵝嘅醋汁、魚露同潮州辣椒油。我哋先嚟一碗咸菜胡椒豬肚湯清一清個口腔,呢個胡椒豬肚湯望落清澈,估唔到胡椒味勁度十足,配合埋酸菜嘅味道,飲幾啖非常精神爽胃。食潮州菜我就最鍾意食滷水鵝片,上裝起片啖啖肉就最正喇,鵝肉肥美但又唔會有太多肥膏,亦都唔會滷得過鹹,而鵝片之下仲有豆腐同花生墊底,我同朋友唔使5分鐘就已經清晒成碟鵝片。另一個食潮州菜必食嘅當然就係炸蠔餅,蛋漿炸得金黃香脆,而入面嘅蠔仔粒粒飽滿,我就鍾意配合魚露一齊食,更能帶出炸蠔餅嘅鮮味。今次難得四個人一齊嚟,所以就叫咗條人多先試到嘅烏頭魚,店員會預先將烏頭魚打開,一上枱就見到白滑無比嘅魚肉,老店果然功架十足,烏頭魚處理得非常好,所以唔會過熟,啖啖肉夠鮮味。原本打算叫豉椒炒蜆餸啤酒,不過咁啱蜆賣晒,就改為豉椒炒蟶子。蟶子比蜆更好肉,隻隻新鮮肥美,食落更滋味。總覺得叫番碟招牌小炒皇先夠大排檔風味,而且因為每家店嘅小炒皇材料都不盡相同,所以每次都可以比較高低。新城嘅小炒皇除咗有韮菜花作主調,配菜種類及比例同樣豐富,大大隻蝦乾同粒粒香脆嘅腰果確令呢道菜生色不少。老闆娘介紹我哋食潮州春菜,原來即係平時食嘅芥菜,起初睇見咁平凡嘅賣相都冇抱太大期望,不過一食之下真係不得了,經潮式製法煮過嘅春菜完全冇印象中芥菜嘅苦澀味,而且鹹度適中,我自己一人食咗超過半碗,絕對係我嘅私心推介!蠔仔粥材料豐富,我起初以為蠔仔粥就只有蠔仔,而新城嘅蠔仔粥仲有魷魚、冬菇、鹹魚、肉碎,再加入冬菜蔥花,口感豐富而味道有唔同層次,真係好驚喜。食過潮州菜都知其中一道好出名嘅甜品就係反沙芋,呢度真係每道菜都大大碟好抵食,連呢個反沙芋都唔例外,熱熱嘅芋頭配合砂糖真係好好食!呢間雖然係非常傳統嘅老店,但吸引到好多年輕嘅食客三五成群咁嚟幫襯,又有好多已經係光顧多次嘅熟客嚟捧場,就知佢嘅吸引力。而且每個店員都好親切,又會聽取客人嘅意見,聽老闆娘講呢度已經接近30年歷史,所以真係充滿着無限嘅情懷。…Read More
