一個月總有幾餐想食日本菜,無他嘅因為覺得日本料理比較健康,少啲濃油赤醬。於是今晚收工就黎一轉味覺日本之旅。原條伊佐木刺身。一黎就吸引咗我地嘅目光。美食當前都唔可以忘記打卡呃LIKE嘅精神,哈哈。雪白通透肉質,入口柔軟帶啲啲脂香味。輕點醬油就已經好夠味。胡麻豆腐沙律。想食得健康就一定要點返啲蔬菜平衡返,香酸又帶點奶油味嘅胡麻醬就最啱了,配上豆腐,個味道真係無得彈。日本香魚燒。估唔到小小嘅一條香魚,燒得好香好好食。簡單灑上岩鹽再燒製,因為本身魚油好豐富,令到肉質入口時依然嫩滑。點點鹽分增添風味,食時仲散發住香魚獨有嘅橘子香味,真係連骨都想食埋落肚。哈哈。蒜蓉牛油燒蟶子。蒜蓉同牛油永遠都係最佳拍檔,兩都香味突出但又唔會搶咗對方味道,鮮甜蟶子加咗佢地,味道即時提升更多。實在太邪惡啦呢個組合。清酒煮蜆。個湯好甜酒味好香,應該係煮完後再加入少少清酒吊一吊味。時間掌握得恰到好處,令到蜆肉食落飽滿而又無沙。最後連少少嘅蜆湯都清埋,絕不浪費。明太子玉子燒。非常有份量嘅一道菜式,明太子多到滿瀉出黎。玉子鬆軟有彈性,配埋微熱嘅咸香明太子,一啖入口甜中帶點脆脆顆粒感,好滿足。唔係因為聽日要返早,一定點返支清酒黎慢慢品嚐。食物質素好固然重要,但食嘅時候放鬆,暢所欲言都係要同啱KEY嘅朋友一齊先過癮。…Read More

收工同朋友食飯,近近地就銅鑼灣。坐低傾傾下樣樣都想食就叫個懶人set。 開波就先食個三文魚牛油果沙律。雖然沙律菜同牛油果先係主菜,但三文魚既質素同量並沒有揸流攤,每一啖都食到三文魚+牛油果+菜。 食完菜就係時候食刺身。原來每日時令刺身都唔同,老闆今日推介原條伊佐木,仲話香港唔係度度都有新鮮既伊佐木添。本身魚身唔係大,入口爽脆,清新,味道唔會停留係舌頭太耐,等你ready食下一道菜。 頭三道菜味道都係比較清新,味蕾完全放鬆曬,係時候食下熱野喇,食日本菜當然唔少得清酒煮蜆. 清新完味蕾就到燒物出場,聖子大隻嫩口,加埋牛油去燒,又香又有淡淡既鮮味。 好似我呢啲咁注重健康既人,燒豚肉聽見都怕。但當用上較瘦既部位,加上蘋果嚟燒。呢味豚肉蘋果卷完全冇油淋淋既感覺。 最後就到牛肉鍋同明太子飯糰。明太子飯糰係香港少有可以咁有日本味道。出色之處就係老闆唔會落過多香料,等明太子自然咁散發佢獨特既香味,鮮味香味控制得剛剛好。 食完後感覺到老闆對食材好有要求同好有信心。每一道菜都唔會同過多既調味去吸引你,反而係用食材本事獨特既味道互相配合,恰到好處。…Read More

喜歡遊日的我們,吃日本菜已經是首選。每次到日本都發掘很多美食。回到香港,想找質素高,價格合理確實很少。估不到今晚竟然有一間「貼近日本的味道」。餐廳位於銅鑼灣的旺街,登龍街永光中心7樓「鮨和」,全個大廈食肆林立日本居酒屋也相當多。近年以「鮨」字為名,大多以廚師發辦為主。此店除了有吧枱可親自看到師傅的刀法外,亦有二人至四人及六人位置。地方不算大,座位亦相當舒適。餐牌上的種類其多,包括:刺身、壽司、丼飯、卷物、手卷、A5和牛、燒物、串燒、天婦羅、揚物、漬物、飯類、鍋物、甜品、飲品等,令人花多眼亂。日本時令魚-笠子刺身 $280笠子是宮崎名物,估不到今晚可以吃,其供應量少所以特別矜貴。刺身每片肉質如斑類般實淨,油分恰到好處不帶腥。原片刺身不需要任何醬料,也能夠提「鮮」。吃過後更可以將魚骨熬湯,連同昆布、豆腐製成熱湯。廚師發辦壽司拼盤(特上) $580一上桌相當吸晴無論食物與用品,何其吸引。十貫壽司廚師發辦分別有:拖羅、牡丹蝦、呑拿魚、三文魚籽、海膽、火炙金目鯛、帆立貝、油甘魚等。吃過一口過後,驚覺貼近日本築地「壽司大」的味道。飯粒的軟硬度適中,配上新鮮的食材非常出色。其中拖羅、三文魚籽,海膽、火炙金目鯛也令人一試難忘。厚切帆立貝,頂層加入魚子更顯其矝貴。清酒煮蜆 $85吃過一連串的刺身及壽司,來一客「清酒煮蜆」可以暖身亦可當作小食。蜆的份量適中,沒有起沙並帶陣陣清酒香。店員更放有一小碗,給客人放下蜆殻可見其細心。木魚絲炸豆腐 $75終於找到貼近日本味道2,普通的軟豆腐化作不平凡的食材。豆腐炸至熱騰騰,金黃色脆並帶大量木魚絲,香口惹味。豆腐一共有4件,份量十足做到外脆內軟,令人回味無窮。鰻魚白燒 $140將原條鰻魚燒得外脆而且肉質肥美,沒有帶點油腻感。原條關係份量其多,而且有3種食法。一食其原有味道、二食添加檸檬汁、三食則配合少許鹽便可。如果追加一杯酒,應該更加美味。…Read More
