我未走勻全世界,但都踏足過不少城市,講到食海鮮,都係香港做得最好,海鮮除了新鮮之外,烹調技巧其實非常重要,經典經驗是在智利吃海膽,價錢便宜,一杯海膽份量十足,但就是吃了一半已經吃不下!西貢衆多海鮮飯店中,只有兩家取過或依然是米芝蓮,成功在於味道,而「勝記海鮮酒家」在賣相及環境方面,相比另一間更勝一籌,我兩間都鍾意。大紅燈籠高高掛,三層獨立建築物,旁邊有泊車位,地下寵物友善,一看就知道「勝記海鮮酒家」夠份量,請客適宜,據說最多可容500人,招呼過不少大集團宴會及政府部門。我們一行五人,上了一樓貴賓廳,雅致舒適,有個露台。「勝記」不停鑽研新菜式,卻又不失傳統風味,最重要是保持海鮮的鮮味,這次我們吃了這些:大蝦沙律 $340新鮮大蝦,肉彈鮮美,配合新鮮多元的水果,是一款令人吃得開心的前菜。花雕醉瀨尿蝦 $750這日我最喜歡的菜式,花雕醉汁調得出色,醃製時間掌握得好,恰到好處,瀨尿蝦肉質保持結實,洋溢著酒香,亦有少少甜甜的味道,鮮味隨之提昇,已半起殼,吃得輕鬆,啖啖肉,這款佳餚極品,真心推薦!西貢地道海鮮湯 $268足料久熬,不敗之作,每口鮮甜,餘額悠久。蒜蓉粉絲蒸蟶子 $538蘇格巨型蟶子,以最基本及傳統的蒜蓉粉絲蒸,我認為是最美味。三蔥炒肉蟹 $618用了三款蔥:乾蔥、洋蔥及青蔥炒,因此香氣四溢,兩隻肉蟹五個人分,吃得滋味滿足。花甲茶碗蒸 $340花甲份量多,出色蒸蛋,香滑鮮味。清炒荷塘上素 $188炒得相當好,夠鑊氣,蓮藕、豆及菇爽口味豐富。鮮元貝蔥油拌麵 $240今日的另一佳作,蔥油非常香,卻又一點也不油膩,粗身的麵條吸盡豉油及蔥油香,加了一粒鮮元貝更是昇華版,面頭的蔥絲亦是一絕。自家製糕點-桂花糕.益力多糕 $68首創10多年的益力糕,歷久常新,百吃不厭,半透明的桂花糕亦很清香。#勝記海鮮酒家 #西貢 #粵菜 #廣東 #海鮮 #西貢海鮮…Read More

想吃到「現撈現煮」的海鮮,勝記海鮮酒家會是西貢的首選之一。依然是熟悉的紅屋外觀和位於幽靜的街角,不過二訪的心情頗為期待。畢竟同一款海鮮,使用不同的烹調方式,往往會帶來截然不同的滋味和驚喜。這次先點一道肉質爽脆彈牙的 涼拌蟶子,配上蒜蓉與芝麻,吃落很清爽開胃。隨後的 西湖花甲豬肉羹,入口帶淡淡芫茜香氣,花甲的鮮味更為突出。再加上香菇、豆腐和蛋白,讓口感層次更加豐富。接著上桌的是 酥炸桶蠔生菜盞。外層炸得很香脆的桶蠔,一口咬下去就能吃到蠔肉的鮮嫩多汁。建議拿生菜連同紫蘇葉、蠔包起來吃,再加上一點酸香的他他醬更有層次感。之後的 酥炸茄子 也很有驚喜。平時常見的茄子做法多半會連皮炸,入口時多少會帶點纖維感。但這裡的有將外皮去掉,令茄肉吃起來更加香軟綿滑。這道 三蔥鮮鮑魚煲,上桌時熱氣騰騰,一打開蓋就香氣撲鼻。鮑魚肉質厚實彈牙,吸收了醬汁的鹹香味道,濃郁卻不會過重而覺得膩口。不論是蔥段還是洋蔥,入口帶點鍋氣,非常惹味。要說到最驚艷的,我會選 秘製斑馬瀨尿蝦。將大大隻的瀨尿蝦酥炸,面層有鹹蛋黃,入口鹹香得來帶點微辣與蒜香。肉質亦很彈牙,咬開後還能看到飽滿的蝦膏,吃起來更惹味。吃完海鮮後,來一道 清炒荷塘上素 平衡一下。不同用料 ,口感層次分明。我自己頗喜歡爽脆帶甜的蓮藕片和濃郁的菇菌。平衡過後,再來一碗 鮮蝦球蔥油拌麵。每一條麵條都均勻裹上蔥油,很香很惹味卻不顯油膩,搭配炸蔥絲增添層次。放在麵上的蝦球亦很大隻,肉質也十分爽彈。最後以勝記海鮮酒家的自家製糕點作結尾。充滿乳酸香味的 益力多糕 和帶微酸清爽的 柚子糕,正好為一頓豐富的海鮮大餐劃上句號。…Read More
