$398 共18品,CP值高!「鮨政 x 大湖」親民版的廚師發辦,質素如何?試過方有發言權!喜出望外,組合富心思,款式全面,製作認真,調味恰到好處,份量足夠食得飽。面積不大,全店只有一張壽司枱,可容12人,必須訂位。金菇茶碗蒸造型幾靚,見到已經好想食,面頭啲金菇似瑤柱,入口富鹹香更似,蒸蛋非常滑溜,內藏冬菇、肉粒、銀杏,足料製作,味道豐富。白身魚刺身.油甘魚刺身北海道水八爪魚色澤雪白,蘸少許竹炭鹽吃,一片比較爽,另一片有適量嚼勁。油甘魚已配上鼓油,回甘味甜,很討好,可加日本芥末添辛香。磯煮鮑魚伴肝醬配合自身鮑魚肝汁的做法無得輸,豐腴滋味,跟一口飯最完美,鮑魚伴肝醬菜式,永遠都是亮點。吉列帶子伴他他醬吉列帆立貝、他他醬、三文魚子及紫菜的組合,呢道真心好好食,夠熱夠脆,層次豐富。帆立貝酥脆味鮮,他他醬添潤澤,以紫菜包著增層次。角煮豚肉.蘋果蓉,青椒非常懂得配,鹹甜味道、果酸與肉平衡得很好。有肥膏的豬肉上、添加蘋果蓉有助平衡肉膩且添食味,仲有湯汁,又係甜甜的,滋味不膩,最後咬一口青椒,少許辣而已。壽司每一件皆已調味,用上酸度正合我意的赤醋米,刺身新鮮,有鯛魚、深海池魚、赤蝦、鯖魚、帆立貝、真鯛。炸沙追魚熱辣辣,如薯片般薄而香脆,炸醬超薄。招牌飄雪鵝肝吞拿魚壽司招牌菜,在吞拿魚赤身壽司上、刨下大量紅酒煮鵝肝,吃法很有新鮮感,鵝肝以紅酒浸醃過已減膩感,再刨成碎粒,輕盈得多,肥美感卻保持,溶化在吞拿魚壽司上,食味大大提升。角切魚生卷我認為是角切魚生飯的迷你精華版,有兩三款魚,口感鮮美。海膽甜筒想不到與雪糕甜筒配,更加甘香超甜,極之美味。海鮮湯真材實料久熬而成,奶白湯頭,味醇厚。季節甜品即係新鮮水果,超甜蜜瓜,完美的結束。…Read More
