筆者由小一向鍾愛越南菜,每當想起蒜蓉牛油炸雞翼、越南春卷和越式蒸粉包,定必食指大動,可惜近年很多老字號都相繼結業,稱得上好味的越南菜已買少見少了。上月行經荃灣千色匯, 敞見一間新進駐的越南菜館,筆者的食慾又立即高漲起來,碰巧又是晚飯時段,遂和朋友一起 入去試一下。此店裝潢設計行悠閒田園路線,門口以粗糙的原木裝飾,外面放著一 架傳統藤籃單車和一個古老旅行皮箱,甚有懷舊風味。店內以開放式裝修連接商場,地方寬敞闊落,設計充滿著熱帶風情,木餐枱配上懷舊款式金屬餐椅,滿佈周圍的仿綠色植物,一張張仿戶外的帳幕餐桌 ,加上柔和閃爍的星星燈光,一貫戶外田園感覺,清新舒適。細閱設計精美,以木板製成的餐牌,一目了然的按菜式分門別類,裡 面彩色精緻的相片,清晰吸引,讓人食慾大增。筆者分別點了最喜愛的越式三寶:牛油蒜香雞翼、越南春卷和越式蒸粉包, 還有水晶香芒軟殼蟹米紙卷、拉娜燒牛肉和越式釀墨魚。牛油蒜香雞翼是筆者每次食越南菜必點的越菜三寶之一,那牛油蒜香實在是百吃不厭!而這店的牛油蒜香雞翼,足有差不多半隻手掌之大,雞翼裹上蛋漿麵粉炸得金黃香脆,配上蒜蓉牛油的誘人香氣,令 人忍不住大啖大啖咬下去,雞翼熱辣燙嘴,入口外脆內嫩,蒜茸牛油味雖很香但不算太濃,而雞翼底味亦偏淡,個人覺得尚可再濃一點,味道會更加突出和完美,雖然這樣說,但其實也算是近年試過較出色的一道越式蒜蓉牛油雞翼了。嚐越脆春卷,現時外面大多數越式店舖都是以米網春卷冷藏行貨濫竿充數,已比較少會像這裡以傳統越式春卷上碟,看賣相似是自家包製,以越式米紙包著豬肉碎、米粉及香料炸脆,外皮入口酥脆之餘帶點煙韌,肉香滿滿。以生菜和九層塔包著,點上越式魚露來吃,除去了熱氣油膩感之餘,清新爽口得來帶點肉香鹹酸,實在不錯。南越蒸粉包,一個木盤子放著四件粉包和四件扎肉,粉包上放滿了炸乾蔥蒜、花生碎和油蔥,粉皮略嫌厚了一點,口感帶點煙韌,裡面包有豬肉碎、蝦米、木耳絲和沙葛粒,鮮甜肉香而不膩口,炸蔥蒜和花生的香脆,加上油蔥的清香起了提味之效,增加了惹味口感,蘸上開胃酸香的越南魚露,滑嫩鹹香,醒胃清爽。 而伴碟的越南傳統扎肉亦不錯,爽彈得來帶肉香,感覺像在吃清淡版Cold cut。水晶香芒軟殼蟹米紙卷,薄薄晶瑩的米紙包著香甜的芒果、酥脆的軟殼蟹,還有檬粉、青瓜絲和生菜,用料豐富,感覺清新。軟殼蟹炸粉不太厚,鬆脆帶蟹香和蛋香,青瓜絲和生菜增加了爽脆口感,加上芒果的清甜,再點上越式酸甜醬汁,大大減低了油膩感,整道菜清爽中滲出濃濃蟹香,賣相味道均不俗。拉娜燒牛肉,班蘭包雞的變奏版,以班蘭葉包著牛肉炸香,揭開班蘭葉後濃香撲鼻,牛肉醃得入味,嫩滑多汁,入口味道濃厚之餘帶著淡淡的班蘭香,頗有驚喜。越式釀墨魚,原隻墨魚桶釀進肉餡再燒香,切開一件件上碟賣相頗精緻。墨魚燒得剛好不會過熟,彈牙有嚼勁;中間肉餡略嫌鬆散,一夾上已有點散開,加上味道不夠香濃,未能帶出魷魚鮮味,就算點上隨碟的綠色酸汁增添了開胃酸香,始終還是味道偏淡略欠海鮮應有的鮮味,有點失準有待改善。淺嚐的筆者又怎會放過一試越南啤酒的機會呢?!這裡採用正宗越南進口啤酒,口味偏淡較清爽,與越式小食十分配襯。整餐來説質素頗為出色,餐廳環境悠閒舒適,食物水準亦不俗,雖然份量不算大,但亦算合理;味道雖說不上驚喜不絕,但細膩技藝中亦呈現出傳統越菜風味,加上價錢亦不算太貴,無論三五知己偷閒談天,又或越菜癮起要一解相思之苦,這店都可算是合適之選。這樣有質素的越菜個人覺得絕對不妨一試。…Read More
