香港人對海鮮的熱愛程度可算是數一數二,講起食蟹,大家也會想起銅鑼灣。只要行入鵝頸橋,謝斐道一帶,一陣陣辣蟹香味冲天,真的離遠也能聞到。謝斐道一帶其實還有很多出名的辣蟹店,但我們依然選擇到財記吃,是因為上個月試了他們的辣蟹套餐,吃下卻意猶未盡,念念不忘,這晚我們專程走來是為了試他們其他的菜式。辣酒煮花螺: 平時吃花螺不外乎白灼和辣酒料理方式。花螺放在鍋裡一片辣椒湯中,這辣螺是開胃菜必選,花螺有大有小,賣相相當吸引而且份量也不少。螺肉吃下豐腴細膩,味道鮮甜,螺吸收了辣椒的滋味,色澤鮮紅,辣汁和酒香完全滲進了每粒螺內,十分入味,吃下也不會過份辣。油鹽水煮蜆: 這道菜可以當成一味湯水,很喜歡它的湯底,吸收了蜆肉的鮮甜味道,蜆肉非常新鮮,吃下彈牙而不靭。火候掌握得好,蜆不會脫離殼現象,配合了粉絲同煮,粉絲吸收了湯的鮮味,十分滋味。豉汁炒蜆:炒蜆端上桌時芳香撲鼻,給的份量也不吝嗇,整碟滿滿的蜆殼和蜆肉,蜆肉非常甜美而且不會韌,豉椒味道帶著微微的辣,而且獻汁做到不會搶過蜆的鮮味,每隻蜆也黏附著香噴噴的豆瓣汁,吃下刺激味蕾,舌尖傳來的辣一直伸延到喉嚨裡,惹味十足。黃金蝦:用了新鮮的海蝦加了咸蛋黃炸香, 每只蝦殼也沾滿了蛋黃碎,而且蛋黃的份量亦不少。蝦肉咬落爽口結實彈牙,鮮味夠搶,蛋黃味也不會蓋過鮮味。其精髓其實在於蝦殼,炸得脆身香口,黏附著蛋黃越吮越滋味。鹹香味濃的黃金蝦實在吸引,吃完一隻又一隻,食落比一般麵粉炸蝦更加香口美味。椒鹽鮮魷:賣相就比較一般,而且份量略為少,鮮魷切得比較細件。以椒鹽和糖調味,在魷魚上撲上一層薄生粉,鮮魷炸至金黃色,外層吃下微微鬆化香脆,乾身不油膩。椒鹽味道𣎴算重,可惜鮮魷比較韌了點,反而曬在鮮魷上的炸蒜,微微的吃下也是很香口。沙薑雞:沙薑和我們平時用開的生薑口感是不同,這種薑甜中還帶點脆,大廚將它切或細末,與麻油、醬油等調制成醬汁,其香味主要來自它所含的揮發油。沙薑汁滿滿黏在雞皮上,咸鮮均勻。雞肉雖則是嫩滑,但欠缺那種結實的雞肉口感,但味道卻沒有雪藏味。還以為這裡只有汽水和啤酒,想不到還有凍檸茶喝,吃完這些香濃美味的海鮮後,來一杯檸茶,既消膩又醒神!…Read More
