即叫即燒肥鵝。極脆椒鹽鮮魷。刁鑽魚肉藕餅。抵食,美味,很讚! 不能去南瓜兄辦的窮L飯局,但仍立即Mark實這裡。數前天便在惠風和暢的一晚和三位友人來試一試。店舖坐落在文英樓地舖。在隨變雞煲附近。樓面是街坊飯店格局, 枱與枱空間充足。佔了兩個舖位,把文英樓前後貫通。原來這舖已不算舊, 和記以前在八文樓另一舖位經營, 算起來應和街坊和衷共濟超過三十年。 選擇繁多。其實肉類菜式好像比海鮮菜式還要多。可能是職業病發作, 餐牌一頁直排,一頁橫排,有時跟據材料來排,有時跟據烹調方法來分類,有時沒有分類,我看得頭昏腦脹, 用了相當多的時間才能循名和實,點好菜式。 最後叫侍應介紹招牌菜, 心想海鮮飯店應會介紹海鮮, 但侍應反而說是燒鵝! 我們一行四人點了半隻燒鵝和其他菜式。 先來胡椒豬肚湯。顏色比一般的白。胡椒味不重, 反而豬骨湯的鮮味更出。豬肚新鮮,又不會韌。第一道菜已令大家一團和氣。 接著是椒鹽鮮魷。看炸漿的顏色已覺得會很美味。果然炸漿極為鬆化, 厚薄適中, 絕無半點油膩感。炸的時間掌握得剛好,魷魚原全不韌。大家吃得和顏悅色, 激讚的一味! 突然有位廚師走出來很有禮貌地告訴我們說燒鵝即叫即燒,要等半小時, 我們當然答應。摘米滋蓮星的餐廳都絕小有廚師這樣做。所有服務員都很和藹可親,有禮貌和待客的熱誠, 再有廚師出面, 服務立即由四分轉至滿分。店主和員工確深得和氣生財之道。 之後到的是蒜汁蝦球。比起蒜味,其實葡汁味道更加重。蝦球新鮮,肉厚彈牙。用葡汁來製蝦球很特別, 和蝦球陰陽調和, 不錯的菜式。 啫啫雞煲: 啫啫雞煲內有豬潤還是第一次見。雞件夠嫩滑, 有大量洋蔥粒和蒜子帶出鮮味。可能豬肝的鮮味亦被逼進雞件內, 感覺上這啫啫雞比一般的更有鮮味。比較之下,豬潤便有點老, 只是倍襯的綠葉, 抑或這是特別的製法,是曲高和寡? 那就不得而知。 這時燒鵝已到。 大家看見這顏色富有光澤, 把大碟排得滿滿的燒鵝禁不住喝彩。 皮脆肉嫩, 鵝肉與脂肪比例甚為標準。比一般燒鵝健康, 肉厚嫩口之餘有脂香, 但又不會有肥膩感。連燒鵝醬也不用點,轉眼間已被掃光。這燒鵝的質素,和性價比絕對比深井X記和中環鏞記優勝多倍。果然是招牌菜! 很讚。絕對是八文樓的隋珠和壁。燒鵝和店內發售的$238和$88枝葡萄牙紅酒很匹配。(老實說,$88那枝其實不比另一枝差。) 侍應說貴點的較好, 我們只隨聲附和。 吃得意猶未盡, 再加兩道菜式:豉椒蟶子賣相可以但不太新鮮,亦有頗多沙。為何海鮮飯店這樣失準,我是丈二和尚,模不著頭腦。 最後的煎藕餅則很有特式。竟然用上鯪魚肉混豬肉! 大家覺得如有多一點藕絲會更有口感, 但這藕餅味道清新不油膩, 魚肉亦新鮮彈牙, 和豬肉可說是魚水和諧。 是令人滿意的一道菜式。 四人點了以上菜式再加兩枝大啤和兩枝紅酒每人盛惠$250。性價比很高! 抵食, 美味 - 必定會翻吃。曾有想過私下收藏這店,最後決定和盤托出, 誠意推介! 9/10 …Read More
