今晚相約好友吃飯,慶祝她的生日。好友素來愛吃潮州菜,於是挑選了這間「潮藝館」。餐廳位於尖沙咀iSQUARE的6樓,地理位置相當方便。「潮藝館」走的是新派風格,入門後更有bar枱位。從它的裝潢就知道是有別於一般的潮州菜館,予人滿滿的現代感。潮州菜必點的滷水菜式,採用獅頭鵝入饌,鵝味和肉質都會比其他品種優勝。鵝件肉質細嫩,滷得入味,帶有八角、丁香等香味。而鵝件下面還舖有豆腐片,非常索滷水汁,但空口食有過鹹之感,用來佐飯更佳。翠綠中帶着一點皎白,菠菜蟹肉羮質感偏濃稠。蟹肉彈牙,湯羹入口味道清香,不會有過鹹的感覺。碟旁伴著一堆經油炸的菜葉薄片,相信就是菜名中的碧綠。雞肉質感嫩滑,帶有微微的川椒麻味,十分惹味。潮州人的家常菜常見款式之一,煲內分別有春菜和排骨。春菜清爽帶甜,還索了排骨湯汁的鮮味。蠔仔肉碎泡飯是筆者喜愛的潮州菜式。例牌的份量都很多,湯頭鮮香濃郁。蠔仔粒頗為肥美,配以肉碎、香菇絲等其他食材,口感甚為豐富。甜品點了一客桂花糕,餐廳把它做成了玫瑰花的形式。口感帶少許軟糯感,微甜不膩,咀嚼間滲出清新的淡淡花味。最後來一壺龍井清茶,一消膩滯之感。…Read More
