那次在源興吃午飯時看過其他客人的私房菜單,基本上已包括店內多款男人味十足的拿手小菜,九月份的飯局不如就在這地道小店裡舉行,讓大家跟壽星爸一起來個非常男人生日宴。穿過街上不少正在等待"朋友"的花枝招展女子後,再次到達街市裡的源興美食,是晚除了我們還有另一席更多人數的訂座,因而大家也要坐得親密一點,晚市基本都是招呼已訂位的客人,沒訂位的客人在此吃晚飯真的要看彩數。長桌上早已安放好碗筷及兩壺熱水,目測所有餐具也清潔乾爽,沒有什麼油跡或食物殘渣出現,清潔程度是令人安心的。從開放式廚房中看到老闆正為是晚客人忙碌著,吊著的幾隻大燒鵝及幾條鮮魚,想到稍後時間我們就可享用這些美食,口水不期然狂流了。咱們被安排如吃西餐的西式長桌關係,除了蒸魚之外,其他菜式都每款兩碟的送到,這方面店方也相當週到。先行送來是兩款冷盤前菜,其一是蒜拍青瓜海蜇,看到那層有著紅辣椒的辣油以為會很辣,實際卻沒有想像中的火辣,微辣醬汁讓人胃口即時大開。青瓜沒有如一般拍青瓜般拍碎,吸汁程度沒有那麼利害,對我而言則剛好,青瓜爽脆多汁之餘還可清熱氣哩;海蜇爽彈如一條條橡皮筋,兩者中個人會喜歡清爽多汁的青瓜多一點。名為惹味醉鳳爪卻沒有太重的酒味,反而有點像室溫版白雲鳳爪,沒酒味程度連在座小朋友也能吃過不停。大大隻帶有鹹味鳳爪肉爽的不會太軟綿,味道可以只是有點名不符實而已。吃過雞腳板,再來是白汁鵝掌翼,所謂白汁應是鹵水另一名字吧?!鵝掌翼外皮及肉質煮得較軟淋,沒鳳爪那麼有咀嚼勁,白汁味道也相對有點偏鹹,用來配啤酒會很合適的送酒小吃。鎮店叉燒皇外表如平常見到的叉燒相若,可是味道卻很不一樣,肉質鬆化的帶有燒烤焦香,黏黏蜜汁帶來絲絲蜜味,有一點肥的半肥瘦叉燒每件厚切更有口感,常吃叉燒的我們也評之為好吃。小時候吃叉燒通常有蜜豆在碟底,不懂吃的孩童時代會不屑一顧,現在則甘之如飴。本身是黃豆的蜜豆煮得有點像日本納豆的黏連,可是味道卻大不同,甜甜的汁醬跟軟軟黃豆絕對令人停不了口;不知道在這買叉燒飯會否有蜜豆相伴呢??全晚唯一不吃的就是這道蜜汁燒鰻魚,十件燒鰻魚切得骨子,根據朋友們的評語為味道像叉燒,相信都是醬汁有點甜的關係吧,唯一是魚皮燒得不夠脆而已,看似純魚肉的燒鰻魚原來某些也有魚骨的,客人們進食時別掉以輕心。老闆上次曾推介給我的秘製家傳豬手,據聞是老闆的外婆的家傳秘方,看到這碗連皮豬手件,單憑視覺也覺得應該會很好吃。豬手炆得皮爽肉軟,筋腱部份更有嚼勁,有點甜度及花椒八角香料味的醬汁比一般以南乳汁或柱侯醬的特別一點,豬手本已膠質重,稍冷後有如豬腳凍般凝結,用作補充骨膠原一流。剛才的叉燒配著蜜豆,這碗炆豬手也配有不少花生作伴,大大粒花生被豬手汁煮至鬆化入味,別以為放在碗底是水準普通而浪費哦!!糯米釀雞翼每隻釀得肥大飽滿,炸得深色的賣相吸引得很;雞翼外皮炸得香脆也超熱!第一口如一般炸雞翼般脆皮,再吃下去便發覺雞翼裡面的是腊味糯米飯!!粒粒分明的糯米飯有著腊味香,爽口米飯不覺得油膩,飯香雞皮脆的超好吃!!明爐古井燒鵝每碟半隻的大大碟,看到半個有肉髻的鵝頭,證明如假包換的燒鵝。 剛燒好不久的燒鵝外皮還是飽滿閃亮,脆卜卜的鵝皮下是仍有肉汁的厚肉鵝件,微暖鵝肉不韌還很入味,大家幾經努力也餘下不少,份量真的足夠。剛才在廚房中看見的其中一條魚就是這條古法醬汁蒸老虎斑,古法醬汁如蔥花豉油,調得甜鹹剛好的,喜吃蒸魚豉油的我相當滿意。 大大條老虎斑蒸得剛熟,有彈性的魚皮及滑滑魚肉,配上好味古法醬汁,令不太吃魚的我除了吃蔥花豉油也要多吃一點魚肉。最想推介給各位的源興咖喱羊腩竟然沒上次的香辣勁道,總不是因為等白飯而冷卻的關係吧??今次的羊腩比上次更肥美,連吃兩件也是帶脂肪的羊肉,肥美肉質但沒羊味,結果碗底薯仔比羊腩更快地消失。這道咖喱羊腩要配白飯才最搭配,可是店方原來用上家庭式西施煲來煮飯,結果咱們要等飯熟才有飯吃,剛煮好的白飯熱得驚人,連碗仔也是燙手的,只是那時候羊腩已經冷卻了....... 私房菜單有兩款,貴一點的一款多了一窩杏汁白肺湯及齋煲,我們這一款則只有椒絲腐乳炒通菜是唯一蔬菜菜式,喜歡吃肉多過吃菜的會較對味。用顏色較淺的水通菜炒成的炒通菜很夠香氣,通菜也很爽脆不老,心理上有點蔬菜到肚是好一點的。隨餐甜品是上次吃過的碗仔芒果布甸,店方將十碗布甸一半加了花奶而一半沒加,喜吃原味的我還是選了沒有花奶的一碗。 甜美芒果粒仍舊密麻麻的在布甸上,羊腩比上次失色,芒果布甸卻比上次的更香滑更彈動,美味的飯後甜品令感覺更圓滿。阿姐們百忙中也有求必應,店子雖小但仍細心安排凳子給我們放手袋,很多比她更高檔的餐廳也未必如此細心,讚!…Read More

今日同幾個fd行下行下行到街市附近,見有間新開燒味店,望到企理乾淨,就諗住快快手食埋個晚飯返屋企唔洗煮!點知......竟然係大驚喜 ^^雖然叫左唔多餸,但係樣樣都係水準之作!尤其推介:蒜拍青瓜海蜇 -- 個青瓜醃得入味但仲係好爽口,平時青瓜我都唔太食,但係呢度真係整得正!招牌叉燒 -- 呢係真係真係要推介!叉燒做得一D 都唔老,好嫩好juicy,燒得色澤岩岩好!同出面gei 叉燒比真係好食好多!(因為佢我竟然好快食晒成碗飯 - -)明爐古井燒鵝 -- 呢個又係另一推介!皮脆肉嫩,上菜仲係熱熱的,唔太肥得泥又有少少脂肪香!真係好好味雖然其他地方都會搵到燒味呀小菜呀,但係呢度真係做得有水準唔馬虎!而且量足夠得泥價錢仲要好公道!絕對係想食抵食又好味燒味小菜gei 好地方!一定會再幫襯P.S 臨走個時見到有人叫左咖哩,見到佢竟然係巴基斯坦個類"傑撻撻"gei 咖哩 原來都係鋪頭另一招牌菜好似好好味咁!等我下次多D 人一齊叫埋先…Read More
