久仰蜆勁村大名,只是位處大埔一直沒有將她列為聚會選擇名單裡,反而易放姐姐來過幾次,對其出品大加稱讚,結果造就一次蜆勁村大人飯局。星期一晚上,位處翠怡花園較靜一邊的小店也被各方客人訂滿,要是星期五或週末週日,相信訂座更有難度;只有一面的餐牌裡都以海鮮、鮮雞為主,煮法也跟坊間的不太一樣,果然讓人有點期待的盧爸爸私房菜。當客人就座後,應是盧囝囝的年輕男孩即時送來一壺香茶,茶味清香滑溜,質素相當不俗,莫非就是用上釘在牆壁上像是裝飾其實是茶葉所泡的??名為蜆勁村當不會不點炒蜆,招牌爸爸炒蜆($88)真的好大盤,大量蒜粒及辣椒把蜆仔炒成一盤讓人一邊說很辣很辣但卻不能停手的食味,香辣味道跟常吃的豉椒炒蜆更有特色,個人認為幾株芫茜更是畫龍點睛,讓炒蜆更具香氣及更為特別。據聞爸爸會將每粒蜆仔以人手刷乾淨,所以我也大膽地把蜆殼上的辣汁吮光,不要浪費嘛!!蜆肉不算很肥美但真的鮮味無沙,吃光整盤也沒有發覺有半隻不能打開的死蜆,要是發現仍像緊合的蜆仔,只要用手將其打開就可以了。後來看到鄰桌食客要求長竹籤來打開蜆仔,果然比用手打開更方便!不過如honhon所言:食蜆用手開心D!言之有理,那我們繼續用手來吃好了。在餐牌中寫道賣一隻蝕一隻的蒜茸鮮油粉絲蒸扇貝($42/隻)果然好大隻,沒有什麼花巧只是以蒜粒同蒸,味道卻意外地好。帶子已去除不能吃的內臟,除了外殼外什麼也可以吃進肚裡去,帶子厚肉有彈性,隱約吃到其鮮甜,尤其那爽口裙邊更是精彩,不能忽視是那吸滿蒜香的粉絲也是超好吃的耶。餐牌裡蔬菜款式很少,我們選了較濃味的椒絲豆腐乳炒包心菜($68)來增加纖維,所謂包心菜就是椰菜嚕,平時椒絲腐乳通菜吃得多,炒包心菜反而是第一次。 爸爸已用上較淡味而不是只有死鹹的腐乳,炒出的包心菜其實也偏濃味,因而吃不到包心菜的味道,反而像吃腐乳汁多一點,故此場內客人多點較輕怡的蒜蓉炒包心菜也不無道理。客家惹味鮮雞半隻($248),上桌時份量奇大!只因除了雞件外還用上大量紅蔥頭、唐芹及薑片同炒,要是點一隻份量一定更有看頭。如假包換的用上新鮮雞來生炒,只因新鮮雞的彈性肉質及雞皮是冰鮮雞無法取代的,就算用上稍鹹及濃味醬汁炒過也不能掩蓋其雞味,這道菜用來伴飯真的最好。主角雞件炒得嫩滑入味已很讚,配料同樣也很出色!幼幼芹菜煮得軟身,那芹香實在吸引,圓鼓鼓的紅蔥頭甜甜爽爽的也很好吃,吃不完的大半碟雞外帶給我家大人當宵夜,最後只餘一個吉盒及雞骨,只因什麼薑片、蔥頭、中芹也完全被吃光,沒有浪費一點食物只因這道新鮮雞實在出色。易放姐姐大力推介的爸爸炒飯($128)應有一湯碗的份量,要不是有這道菜,一早已點了白飯去配美味炒雞了。材料只有蛋花、蔥花及瑤柱看似普通,炒出來的飯卻不普通,吃了第一口後不期然會"嘩"一聲的。飯粒少油的炒得香氣十足及乾爽,用上很多乾貝絲帶出海味的鮮甜,平時的炒飯多兩粒叉燒和蝦仁稍大隻已像賺到了的食客,看到這盤用料十足又美味的炒飯更覺值得,我也要大力推介才成!盧爸爸的菜式普通偏濃味及偏鹹,因而店裡有著不少不同品牌的啤酒及白酒供應,看來用它們來配爸爸私房菜必定更讚。…Read More
