人總會喜歡懷舊,雖然不時也有吃中菜,但懷舊菜就不常吃,今晚是應約專誠來到九龍城,但不是吃泰菜,而是到訪「粗菜館」,吃吃特色街頭風味小炒。雖未至於時光倒流,但店內很有一股古早味道,裝潢滿有懷舊氣息,原來,這裡已有超過30多年歷史。細閱餐牌,先有菜館的起源,更介紹了名食家「蔡瀾」的提字。至於食物方面,選擇十分之多,可說應有盡有,當然,目標就放在「蔡瀾推介」一頁之內。廣東人最喜愛喝湯,所以,先來「老火例湯」,分了大煲$148、細煲$108及碗裝$58,我們這個是細煲,一來到熱氣騰騰,而是晚是青紅蘿蔔粟米煲豬骨,甚有住家風味,而湯頭深沉色,味道非常濃郁,湯料十足,真好喝。相信有不少客人是為了其「招牌炒豬雜」($118)而來,我們也是,這是蔡瀾先生的大力推介,來到已感受到那股鑊氣,裡面已包含豬肚、豬腸、豬潤、豬心……等等,清理得宜,完全沒有豬臊味,以豬油、薑蔥、醬油來炒,又怎會不好吃呢。外出吃飯,當然要點些在家中難作的菜式,就好像這道「山楂醬排骨」($95)是一例,太多功夫了。排骨入口保持外脆內軟,咬下去肉質鬆化,而其靈魂在於這山楂醬汁,真有山楂在內,酸酸甜甜,而那份酸味很沉實,一點也不嗆喉,亦不會太甜膩,平衡度恰好。另一道心水菜是「籠仔梅子蒸大鱔」($148),其實這道菜可選梅子蒸或豉汁蒸,當然前者較少有,亦具特色。大鱔十分新鮮,完全沒有泥味,肥大肉厚,質感嫩滑得來有少少彈牙感,陳年梅子醬有解膩之效,而這個梅子醬味道比山楂醬酸度稍高,吃出了不同風味。在「粗菜館」不能錯過的還有極度邪惡的「豬油撈飯」,一碗要$20,人多倒不如點一客細桶,才$60,可分到四碗左右,豬油及自家製豉油可按個人喜好加添,米飯在豬油、豉油的包裹下,變得香氣十足,加上飯粒分明帶爽身,變成很不一般的白飯。吃罷,侍應幫忙收拾枱面,還加句慢慢坐,而且,不知幫恨添茶,招呼十二分之好,又有禮貌,這才是做飲食之道,讓我們也吃得很稱心。…Read More

每次去九龍城都很自然會想起泰國菜,但今次想轉轉口味,於是選擇了一間聞名多年但又未試過的客家菜老店。這餐館以客家小廚見稱,提供了多款傳統小菜,更有美食家蔡瀾先生的推介,令我急不及待要試試這個廚神的功夫。第一次來到這店,當然試一試廚師推介:招牌炒豬雜這個招牌菜非常惹味,材料包括豬心、豬腸、爽肚、豬潤等,以豉油老抽簡單調味,加上薑葱爆炒,令整個菜式充滿鑊氣。薑蔥炒魚腩 這個除了是蔡瀾其中的一道美味推介,也是我最喜愛的菜式。由於魚腩需要新鮮即煮,所以每天供應有限。脆炸後的魚腩外脆內軟,香口非常,肉質鮮嫰,最滿意是魚腩啖啖肉,吃得很暢快。惠州梅菜扣肉梅菜扣肉是客家菜的不二之選。菜式以煲仔形式呈現,剛送上來的一刻旁邊還有滾滾的氣泡,新鮮熱辣,一層肥一層瘦的扣肉,配以厚厚的梅菜墊底,肥而不膩,簡直是撈飯好拍檔。客家炒粉絲粉絲炒得非常乾身,簡單配上蛋絲、冬菇片及芽菜兜炒,美味爽口,看得出廚師的功駕。試過幾道菜,每款都各具特色,而且都很美味,下次要再留肚多試其他精美小菜。…Read More

今晚來到九龍城覓食,決定試試名食評家蔡瀾先生推介的粗菜館。食店歷史悠久,店如其名,以粗茶淡飯作招徠,主打傳統廣式小炒。可能服務員對店舖有歸屬感,他們對食客都很有禮貌,更會不時為客人添水。🐷招牌炒豬雜~這款小菜是蔡瀾先生的重點推介,店內更有他親自題字的「炒朱什」牌匾。豬肝、豬腸,豬腰及豬肚等配上薑葱爆炒,鑊氣十足。難得是豬雜完全沒有豬臊味。聽老闆講,這道炒豬雜特別之處,是用上不同size豬隻的內臟:豬肚來自大豬,豬肝來自中豬,豬腸則來自細豬。難怪吃出來的口感較坊間選用同一豬隻內臟去炒的更突出,更入味。🐟招牌炒魚腩~魚腩只有一條大骨,啖啖肉,外脆內嫰,十分香口惹味。🐦秘製煀乳鴿~乳鴿用上以多種材料淆成的高湯及滷水去煀,非常入味,肉嫰骨香,真正做到令人齒頰留香😋😋。🥣老火例湯(細)~蓮藕豬骨湯用料豐富,每日限量二十煲,難怪味道鮮甜,火侯十足。🐷🍚豬油撈飯(細桶)~白飯以木桶盛載,上枱時連豉油及豬油各一樽,食客可按個人喜好隨意決定豉油及豬油的份量。拌上豬油及豉油的白飯油脂濃郁,色澤吸引,每啖飯都充滿油香。平日無飯癮的我也吃了兩大碗呢!粗菜館見證了“食材不需名貴,烹調用心才是皇道”!…Read More

雖然平時都鍾意煮番兩味嘅我,家常便飯還可以,但真心吾叻煮風味小菜,所以唯有出街搵番間有口碑嘅菜館,叫番兩三個粗菜小炒,滿足一下口慾。咁啱趁住屯馬新通車,今晚一於走一轉九龍城覓食。呢間位於九龍城衙前圍道的「粗菜館」,看來歷史悠久。門前張貼著大大張蔡瀾十大推介,睇相都已經流曬口水。店舖雖不大,但分有上下層。晚上7:00已經開始要等位了,我們兩人等了一會便安排入座了。望住十大推介,樣樣都想食,經過一輪深思熟慮,終於有定案了。介紹番是日精挑細選小菜有:惠州梅菜扣肉、豬油渣炒菜、薑蔥炒魚腩、招牌炒豬雜。配埋碗綿滑白粥,真係冇得輸。「惠州梅菜扣肉」- 唔使多講,呢款菜自己煮真係有排攪。梅菜咸甜度要較得啱啱好,扣肉要夠淋,豬皮及脂肪又要炆得綿,真係又要功夫、心機和時間。呢個小菜味道入口非常舒服不油膩,送飯送粥一流。「豬油渣炒菜」- 本身想食豆豉鯪魚炒油麥菜,但一場來到,沒有理由不試試呢款推介「豬油渣炒菜」㗎。沒想到咁啱又係炒油麥菜。油麥菜配豬油渣,再加埋蒜子、蝦米、冬菇片。炒菜炒得好絕不容易,火喉掌握很重要。呢碟菜不單入口不老,而且爽脆可口,仲要保存到菜的翠綠,色香味俱全。「薑蔥炒魚腩」- 食薑葱魚腩最緊夠多薑葱,呢個就啱晒我心水了,薑葱炒得夠香夠多,魚腩足足有六件,每件都炸得很鬆脆。連魚翅骨咬落都脆卜卜,裡面魚肉仍十分嫩滑,件件皮脆肉滑,真係食到唔停到口。「招牌炒豬雜」- 呢味菜真係好少會自己屋企煮。豬雜有豬潤、豬肚、豬腸、豬心,香口惹味,炒得火喉十足。我同阿仔又係食到舔舔脷,我哋表示好好味。總結今晚呢四款小炒,真係各具特色,正正程現了「粗菜精炒」嘅功夫。只需一些普通常見的食材,經過廚師精心製作,一樣可以係佳餚美食,令人滋味無窮,真係食過番尋味😋。…Read More
