睇電視未必感受到,真人見真章!「頂爺」不愧為一位「威猛廚師」,不只因他廚藝精準、有武術指導背景、高大身形及娛樂圈知名度,他口若懸河地導說故事,一餐飯可以變成話題不盡的一堂課,不得不令人敬佩!今晚有幸遇上頂爺現身解說菜式的淵源,有趣的背後故事、歷史、文化等等,增長了不少知識,不只大飽口福!話說回來,本來威猛的大男人頂爺,點解又會識煮餸呢?原來有段古,頂爺本生於富裕家庭,家族經營酒樓及食材生意,在苛刻的嚴父教導下,養成什麼都要識、刻苦及認真的學習態度,加上「唔輸得」的性格,造就了今天能煮能武的他。傾情手工粵菜,因為自少耳濡目染,承存了祖傳手藝、不嫌工序多的烹調方式,在租金昂貴人工貴的香港早已在一般餐牌中消失,反過來做就了「鼎爺私房菜」價值之所在。但咁又即係有咩食呢?「鼎爺私房菜」建議菜單價錢由每位$888起至$2888,並可隨口味調教菜式及價錢,預訂就可以了,我們今晚微調而成以下: - 春花卷 • 龍穿鳳翼 • 秘製話梅蝦 • 泡椒蓮藕- 古法豬網油炸松葉蟹鉗- 原個椰皇燉嫩雞湯- 魚香茄子燴杉斑- 紫氣東來 (紫水晶生炒骨)- 珊瑚錦繡球- 鮮淮山杞子浸時蔬- 招牌手工脆皮糯米雞- 鮮果冰花燉蛋  精選前菜:春花卷.龍穿鳳翼.秘製話梅蝦.泡椒蓮藕 春花卷父親祖籍順德,大良野雞卷自小吃過無數,卻首次認識春花卷,原來民初時代重男輕女,男人才可吃到處理功序更多的野雞卷,女仕只能吃簡單些的春花卷。 我認為兩種卷物相同之處是皆以豬油網捲起餡料上粉然後炸透,功夫必須了得。但餡料就完全不一様,味道自然有別,野雞卷有肥豬肉及臘腸,相對惹味,又真的比較男性化;而餡料只有梅頭、沙葛、韭菜及蝦的春花卷相對清甜及溫柔。 春花卷內餡紅綠相間,亦正是命名春花之原因,口感清爽甜美,酥而不膩,不失為滋味炸物。 龍穿鳳翼與春花卷相比,我更喜歡龍穿鳳翼,名字威威有肉食,釀入雞翼的材料更豐富,有甘筍,唐芹,金華火腿等,炸至金黃焦香,皮脆惹味。備以自製酸甜醬作這兩款炸物之用,用意減膩感。秘製話梅蝦把新鮮海蝦浸在話梅汁兩天,入口鮮甜、輕輕的酸甜話梅香透出,討好開胃。 泡椒蓮藕蓮藕要靚才做到如若花之效果,口感微辣爽脆。古法豬網油炸松葉蟹鉗 這晚我最喜歡的菜式之一,材料新鮮上乘,炸得焦脆,原來有兩種吃法。 頂爺教我們可把蟹鉗切開一半,一半不醮汁吃,吃出鮮香甜美,酥脆的外皮提升蟹之鮮味,口感一流。 另半只蟹鉗先加醋、再加芥辣,口感截然不同,口中變化,複雜得來簡單,依然鮮甜卻在演變辛香,真的唔錯! 頂爺醬料全部自己製,不說不知,芥末原來是以芥菜子磨成,因為自製,相比坊間濃郁而且無酸味。原個椰皇燉嫩雞湯 吃過中最甜的椰皇雞湯,湯清味醇厚,每一口皆滋味悠久,舌頭受寵!識食記得用匙挑出果肉吃,白滑香嫩。 成功之道,椰皇當然要靚,薄肉及厚肉的椰皇分別需燉三個鐘及四個鐘;再加上落了香茅之秘訣,能倍增果甜! 我愛飲湯,今晚我最回味是這一道。魚香茄子燴杉班 鹹魚味出衆是其特色,據說需用上有六斤重的馬友才能製作靚鹹魚。 魚香茄子惹味,汁濃,佐飯實在一流。 杉班皮脆肉嫩,份量十足,不過魚頭的皮過韌不能吃。紫氣東來 別於一般生炒骨,頂爺出品是鮮紫色的,而且味道與別不同,酸酸甜甜,味道自然,不感油膩,既脆亦多汁。祕訣之一在於秘製醬汁,以紫火龍果、酸梅、青檸、片糖、等多款天然食材即製而成,最後再塗上麥芽糖,靈魂在青檸。其二是選材,紫火龍果帶有花果清香,來自中國的細小菠蘿果味特別香濃。珊瑚錦鏽球 考驗細緻手工的珊瑚錦鏽球並非名不虛傳,外表是晶瑩的錦鏽球,通透的蛋白皮包著脹卜卜的餡料,頭頂一點蟹皇紅,一束綠紥帶,仿似美麗珊瑚。 這道菜刀功和手工都非常講究,把蛋白煎成薄薄的蛋白皮,然後用此蛋白皮包裹豐富配料,蒸煮過程中不能破,餡料必需切至細細粒及除去多餘水份。 配料多元且味道鮮美,有蟹肉、瑤柱、北菇、金華火腿、雞肉、蝦、大白菜及芫茜等,入口鮮甜美味,每一口皆是享受。鮮淮山杞子浸時蔬爽口多汁配脆綠時蔬,簡單稱職。招牌手工脆皮糯米雞鼎爺另一得意之作,工序方面,想想如何把骨肉起出而保留雞皮外衣完整無缺已經非一般,然後釀至滿溢不破,再成功烤至皮薄如蟬翼!沒有皮下脂肪,只有惹味的糯米飯,皮脆內軟糯,口感非常好;脆雞皮限量,聰明地每份多配一片蝦片,把它填滿糯米飯同吃,脆軟對比再次感受,咬落脆破之聲更加響亮。鮮果冰花燉蛋冰花燉蛋配芒果未吃過,芒果味甜不酸,黃糖燉蛋沒有過甜。 運作暢順,出菜有序,經理熟習菜式,上菜時均有解說,環境光猛舒適,私房菜形式,必須預訂及議定菜單,有兩間私人房。  …Read More
