邊個話深井淨係得燒鵝?深井仲有間打邊爐,而且唔拍得住城市嘅水準架!📍滾得棧招牌蕃茄蟹湯底 $368 🥘價錢 7/10味道 8.5/10餐廳選用肉蟹,size都有一隻男人手咁大,蟹蓋仲有少量膏痴住,其他滾哂落鍋,肉質鮮甜,但個湯底就唔係好食得出蟹味,可能下次會叫返蕃茄薯仔湯底(平成三舊水呀)。📍招牌手切牛頸脊(大)🥩價錢 7.5/10味道 10/10一上菜,個碟仲大過個煲,牛肉舖到滿哂,個個都爭住影相打卡。一向都話靚嘅牛肉係唔洗6咁耐,呢塊當然都係烚一烚就得啦!食落牛味好濃,好淋得嚟有嚼口,肥瘦分佈齊中,入口嚼兩啖感受下牛肉嘅鮮味就即溶,正。💌總結當日仲有叫好多其他嘢食,例如墨膠釀油條、牛脷托、西班牙黑豚肉等,都好好食好新鮮,但最值得推介嘅都係牛頸脊。…Read More

我會用狂風掃落葉來形容今次的火窩飯聚,用膽生毛來形容我們這班葵青友,夠膽在可預見的八號波裏,踏上開往深井的小巴裏長驅直入。幹勁這回事並非人人能體會,尤其是有過獨特的經驗。冒著大雨走進火窩店,天氣冷了自然會多人打邊爐,被安排坐在偏廳,環境闊了,心情亦開了!不時聽到狂風在店外嘯不休,大樹的樹梢也在猛烈拍打,霹拍霹拍霹靂拍,偶爾狂風捲起的落葉會從偏廳頂上散下來 (幸好沒有跌進火窩湯內)。滾得棧十多年來都是口碑載道,以火窩料新鮮及大碟而盛名;不讀不知原來只要是四位以下,所有生料都可以雙拼,而且連 $ 79 以下的湯底也可以雙拼呢,真是靈活無邊界!茶醬芥每位$13,雖然只供應簡單的蔥、蒜、辣椒及豉油 (或者可以額外叫一碟店家自家炒製的 XO 醬 $18),食材新鮮又何需點紅點綠!XO 醬滿是粗身瑶柱條條,甘香少辣,提升食材美味!滾得棧不單止滿足滾友的慾望,對於不太好此道或是飲酒作樂,口痕需要有口果時,這版「廚師推介篇」幫到各位!  我們決定點幾款送啤酒......自家製腐皮卷 $73 ... 炸起即送上檯,腐皮內裹入由手打三滑打成的餡,三滑即是魚滑、蝦滑、墨魚滑。墨魚滑釀油條 $79 ... 炸過的墨魚滑,夠彈牙和濃味,不是油條卻不如我預期,不夠脆,腍滋滋。脆皮咕嚕肉 $78 ... 很久也沒有吃過脆身的咕嚕肉,但是這兒的脆並非咕嚕肉應有的那種薄而輕脆,咕嚕肉下墊了多片炸脆雲吞皮,加上醬汁的那種酸甜味,拼在一起吃,有幾分似錦鹵雲吞。酥炸美國生蠔 $159 ... 上檯後引起一陣小騷動,生蠔實在是太豐滿了,我不能客氣甚麼呢,首先要鯨吞一隻,薄薄的炸皮外層,一咬「咔嚓」......肥沃的蠔汁從蠔囊處盡散在口腔內,新鮮的蠔甜味實在令人讚嘆不已!吃過熟食倒要返回正題吃火窩,我們一舉通過點了「正在游水的麵包蟹」所煮成的招牌蕃茄蟹窩底 ......窩底與蟹是分開上的,滾滾紅湯不單止只有鮮蕃茄、薯仔味道,還有一種似曾相識的....茄醬味。 把麵包蟹分階段放進湯裏小心煮,看啊→煮至僅熟的麵包蟹蓋,蟹膏油脂還是軟柔的,入口甘香豐腴,肉香軟滑鮮味。至於火窩生料,各人首選都是牛肉招牌手切牛頸脊 ... 脂肪分佈平均,顏色嫩紅,只需放入湯裏灼幾秒,灼至自己喜歡的熟度便可以,牛味濃郁、鬆化亦不韌,好味到想一塊接一塊地吃。鱔片拼脆鯇片 ... 看似薄片但灼熟後,肉纖維一縮便厚起來,吃著有魚味又彈牙的魚肉,它們的鮮味是偽裝不來的,但是要留意有小小骨在魚片內。花鵰醉蝦 ... 新鮮生猛的海蝦倒插在花鵰酒內 (左),確實是有點殘忍因為它們的腳爪還是有動作的,這種看著蝦兒喝至醉生夢死的醉蝦法,很久也沒嘗試過,通常外邊的醉蝦都是「被喝醉」才奉客,還是把這杯清晰的花鵰醉蝦放在一旁。    直至不知道何時,花鵰酒混沌了(右),把一串海蝦拿起觀察,腳爪不再動而眼神亦呆了,看得出是個醉蝦樣,快手把它灼熟並剝殼把它吃掉,海蝦本身鮮甜兼且花鵰酒味並非流在表面,是留在全身,可以肯定地說海蝦的確有把自己喝醉來。中途叫了杯酸梅湯,冰冰涼涼、酸酸甜甜一大杯只收 $12蘇格蘭竹筒蚌 ... 是逐隻計,新鮮貨是誰都會喜愛!黃油雞腸拼雞肉片 ... 已很久沒有在食肆裏吃過新鮮黃油雞腸,最最最重要是沒有浸過蘇打粉,很討厭那種味道兼口感。  始終只有新鮮貨才能吃出它的粉嫩與雞油香,實在令人難以忘懷!豬腰 ... 處理得妥當,一點尿素味也沒有,灼的時間不用很長,見到變色堅挺便可以吃到鮮美嫩滑的豬腰了。我們狂風掃落葉地滾至九時有多,侍應生通知各食客天文台大約會在十時三十分掛上八號波,叮囑各人要小心之餘還提示顧客店方並不會趕收工,員工會待所有顧客結帳離開後才關門下班。葵青友為怕公共汽車會在八號波掛正時停駛,因此多謝了侍應生的厚愛,我們要更瘋更狂地把食物全掃掉以便結帳離場,乘著「海鷗」飛回家!…Read More
