花多眼亂、百花齊放,真係堅多小炒、煲仔菜選擇,而且價錢實惠經濟。貪吃的我當然樣樣都想食啦,雙眼發光。鱆魚豬骨湯,其實飲完真係唔知係咩湯,見湯渣估估下。質素不過不失,味道甜美濃郁,熱騰騰既湯一定好飲。青紅蘿蔔豬骨湯,又會有粟米既?熱騰騰送上,裡面係銻盅而外面用膠盅套著,有好強的保溫作用。先嚐幾口,果真熱到燙嘴,最喜歡這溫度啊,特別好飲。味道清淡,食材味道未見突出,要睇湯渣先知係咩湯呢。無味精落足料,雖然有點淡,最緊要無味精啦,清清地都幾好飲 ﹗花膠燉響螺湯,燉湯夠火喉,落足料清甜美味 ﹗花膠並不是什麼上等貨色,預料之內,幸好膠黏而嫩滑,合格架喎。而且加有杞子、椎山、瘦肉,使到湯汁更加美味添。食神照住先有機會飲得到架乍。嬸嬸提議如果可以先打電話留燉湯架,但我地經常未到最後都未決定去邊度食呢。沙薑雞腳,損腳指為最佳娛樂,消磨時間良伴,未齊人囉 ﹗清爽的沙薑味,咸咸的泛著獨特清香,付在雞腳上損得津津有味,雞味濃濃,雞皮爽脆啊。招牌咪走雞一隻,幾乎每次都係必食既主打菜色 ﹗我除左係牛魔皇外,仲係個不折不扣既雞蟲呢 ﹗味道似足菜膽雞、沙薑雞、鹽焗雞既變奏,直頭係混合體添啦 ﹗肥雞大大隻,物有所值。聽到吱吱咋咋的聲音接近,就知道咪走雞出場喇 ﹗熱騰騰出晒煙又起晒泡用砵仔送上,百斬雞排得精緻有序,加椰菜底連大量芡汁,賣相有點似菜膽雞呢。雞肉嫩滑啖啖肉,肉嫩帶淡淡咸味,有著沙薑雞同鹽焗雞既味道。雞髀肉滑溜、雞胸軟棉不會鞋,係不喜歡隻雞太肥多肥膏,雞皮肥又厚,扣一點點分數。椰菜本新已非常清甜,再吸收雞汁味道,好好味啊 ﹗連肉帶汁撈白飯食,甜美如甘露,飯都食多兩啖呀 ﹗沙嗲本菇肥牛煲,本菇、金菇爽爽甜美,不過我唔食芽菜的,要挑開化啊。肥牛質感鬆散軟腍不太肥膩,吸盡甜味濃濃不辣的沙嗲汁,尚算滿意既。鮑汁琵琶豆腐,味道十足特濃蠔油喎。外層炸得香口非常,不幸地嫩滑感不足,免強過得去啦。醬汁味道重重,撈飯一流,如淨食有點咸喇。益菌炒脆肉瓜,只有雞髀菇、冬菇及脆肉瓜乍喎。脆肉瓜爽而多汁、雞髀菇彈彈、冬菇滑滑。味道都幾單調,不過勝在清淡有益。無鑊氣可言,好快已經凍晒。黎到咪走雞晚飯已經十點半有多,就連例湯都收左檔喇,無湯飲添,十分失望啊。腰果山渣咕嚕肉,酸甜味道平衡而恰到好處,開胃不嗆喉。豬肉炸得剛剛好,依然外脆內嫩,保存可口肉汁。啖啖肉不乾不硬不鞋,高質好味道 ﹗魚湯花蛤豆腐粉絲煲,食家最緊要有求知慾、要有冒險精神,發現新菜色梗係要即刻試啦。明火煮唔怕會凍啦,罐頭魚湯普普通通,加點香菜及配料使到味道好多了,一試無妨。要食得快速,否則花蛤會因過熟變得橡膠一樣勁韌,或是先撈起放在一旁慢慢享用吧。花蛤雖小,但肥美滿意、乾淨無砂,鮮甜味非凡。豆腐?魚腐黎架喎,本身比較咸,吸收香甜魚湯後就剛剛好。入口先是嚥韌,繼而彈滑可口。粉絲就浸到發脹,斷晒碎濕濕,好難夾喎。了能骨煲,什麼來頭啊?New lung 骨、刁鑽骨、新肺骨嗎?真身原來係排骨煲,自家醬油排骨煲。醬汁味道似足甜甜的紅燒汁,不過比紅燒更豐富,醃味開胃,炸過的肉排香口鬆化,肉質結實帶彈有趙勁,不錯不錯。豆腐斑腩煲,這就是硬豆腐嗎?真的好硬喎,十足豆腐乾既味道,就連質感都一模一樣,係用黎墊滷水鵝底那款豆腐,生水味加油溢味,不喜歡。斑腩魚肉滑而滲著丁點肉汁,外層炸粉好棉,厚厚的粉像滑潺潺的魚皮十分有趣。在濃味芡汁遮掩下,依然食得到微弱魚腥味,幸好整體不過不失,食得過的。還有恩賜的兩片冬菇,最好食就係他們了,爽彈多汁味道甜美。茄子黑椒牛仔骨煲,吱吱咋咋鬼殺咁嘈,老遠已聽得十分清楚,使我興奮莫明 ﹗熱騰騰噴煙地出場,勁有氣氛,好型呀 ﹗芡汁依然生猛地跳動,彈到我手臂之上,痛得黎又有快感。我即刻兜多幾下,讓香料更加出味及更加均勻,又可避免黐底呢。茄子炆得軟棉棉、滑溜溜,吸盡牛汁芡汁,正到震呀 ﹗我十分喜歡食茄子,現只得四五條囝囝,如何能夠滿足到我呢?師傳太重手喎,牛仔骨醃味強勁,微鬆但極咸 ﹗要塞多兩啖飯先得。畢竟安格斯牛仔骨好食多倍,不過經常都沽清呢。海味什菜煲,先淺嚐兩口湯底,點解味道跟常相聚大白菜豬骨湯幾乎一模一樣?大量什菜,白菜、菜芯、小棠菜、娃娃菜、西蘭花,爽嫩甜美,好喜歡。海味其實只得蝦米同粉絲囉,有點削喎。馬拉盞肉碎炒通菜,成斤通菜大大碟,抵食又好味。夠鑊氣有氣勢,熱力迫人,香氣正面來襲 ﹗通菜爽嫩不硬亦無渣,馬拉盞辣辣地夠惹味,炒得香口嘴郁郁。雖然不是我最愛的大大碌水通,但難得高質,熱騰騰不停塞入口,正呀 ﹗清蒸桂花魚,BB 魚都比您地搵到,有我手掌心般大細,係勁喎。原本我想試試冬菜蒸,因為未試過麻。但朋友仔堅持一定要清蒸,亳無求知慾、毫無冒險精神,只是個倪食家矣以 ﹗無所謂,點煮我都一樣受樂。食過野生桂魚真係返唔到轉頭,鮮味、魚味、肉質都跟養魚有天淵之別。蔥粒代替蔥絲,使到香氣大打折扣,連食慾都大減。用筷子夾出大大舊背脊肉滾上魚汁豉油,實淨有點乾,質地未算太鞋,肉汁欠奉,魚甜味還可以,免強合格啦。發覺咪走雞好種意將魚割幾刀先蒸,不輪大小、不輪種類。雖然可以更易熟、更易入味,但會令肉質變鞋、肉汁流失呢 ﹗咁鬼細條細洗咩割呀,原條蒸咪得囉,您估蒸厚肉石斑或蒸斤幾兩斤大魚咩。豉汁蒸倉魚,實在太求其,馬虎得過份,真的嬲嬲豬 ﹗師傅您好忙又極趕時間嗎?豆豉醬整篤隨便撻係條魚某小部份就算,並無搽勻成條魚,依家蒸好係要我自己撈混?還是當點汁食呢?不論條魚或大或小,師傅都要界幾刀喎。雖然易熟,但會使到肉汁流失呢。魚味、調味都不錯,不過魚肉實淨偏乾,滑溜感太削。咪走雞只有三款魚提供,烏頭、倉魚、紅鮋,全部都係魚仔來的,跟手掌大細差不多啦。…Read More
