有幸抽中出席於名苑酒家舉行之試食晚宴,當晚得到酒家方面熱情招待,試食了多款酒家出名既菜式。清宮明火雞煲翅首先上場既係清宮明火雞煲翅,雞湯及翅分別上檯給眾人拍照後再加熱。酒家負責人解釋因為佢地係新派粵菜,所以是晚像吃西餐般,先喝湯。雞湯加有大量雞腳去煲,本身已經十分濃郁,含有豐富骨膠原,單喝這個雞湯已經十分美味,加上爽滑的排翅,果然係酒家既招牌菜。加拿大冰海帝皇貝介紹既時候負責人這個帝皇貝因為體積較大,所以會煮得外層剛熟而中間半熟,以免太熟會入口會韌。可惜當晚我及隔離的openrice攝影師吃到的都是全熟,帝皇貝的肉比較乾了一點。意大利砵酒珍寶蠔珍寶蠔份量巨大,脆漿做得夠薄及脆,配上的醬汁辣得來又很惹味,加上蠔的生熟控制得剛好,肉身仍有肉汁,不錯。伴碟的麥芽糖裝飾很有藝術feel,我們每人也分吃一點,結論係呢個裝飾好睇,但欣賞價值比食用價值高,哈哈。蠔皇扣三頭鮑魚大廚先後花六日炮製的三頭鮑魚,食入口帶點黐牙及黐刀,大廚的心思加功力應記一功,伴上的玉掌也不能錯過,本身我係唔鍾意"損腳指",但呢個玉掌做得很淋滑,加上鮑魚汁十分美味。頭抽皇生煎澳洲大老虎蝦大老虎蝦差不多有整隻手掌般大,炸得連殼也可吃入口,肉質也十分彈牙。乾坤沙巴海東星班炸的頭腩做得咸香脆口,十分欣賞。炒球就一般,肉質淋了一點,但同炒的蘆筍十分爽口,不容錯過。黃金脆皮雞新鮮的海南雞炸得皮夠脆而肉仍嫩,只是調味方面略為咸了一點。金柱鮮竹泡菜苗食過咁多濃味的菜式之後,這味金柱鮮竹泡菜苗正好用來清一清味蕾,可惜個人唔太接受皇帝菜既味道,所以此道菜式只淺嚐了一點。生拆龍蝦肉泡西施飯湯底帶濃郁的龍蝦味,負責人說是拆肉後的龍蝦殼煮成的,加入龍蝦肉及白飯,上檯時再加入炸米(炸過的白飯),果然係視覺及味覺既享受,而炸米亦為這個泡飯加添了口感,是一個十分喜愛的菜式。蛋白杏仁茶杏仁茶的杏仁經過三次的磨及隔渣,入口十份滑,而味道也不會過甜,是個十分討好的甜品。燕窩流沙大壽桃本身已經接近十分飽,但眼前這個壽桃真係好吸引,香滑的奶皇流沙中夾有份量不少的燕窩,再飽也要吃下去。呂宋香芒布甸呂宋香芒十分香甜,相比之下布甸就顯得清淡了一點。負責人說此甜品本來是用日本的3.6牛乳,但因為日本的核事故而改用荷蘭牛奶,相信用3.6牛乳的會更好吃。宮廷貴妃糕這個甜品是由桂花糕及椰汁糕層層相隔而成,椰汁味香濃但桂花香味稍淡了一點,不太吃得出桂花味來。吃到這裡已經十一成飽,謝過Openrice及名苑酒家的安排後,抱著飽飽的肚子回家去。…Read More

各位開飯朋友:今次和大家分享一次開懷鮑參翅肚的新派粵菜。有幸獲邀出席名苑 豪華鮑翅 試食晚宴,一試名苑的鮑參翅肚和甜品。名苑位於大角咀新九龍廣場1樓,裝修華麗,是一中菜館。看見是晚菜譜,甚為豐富,共十三道菜餚,很後悔自己吃了一個下午茶!先來明火雞煲翅,湯底好香濃甜美,翅爽彈牙味美,人吃人讚!冰海帝皇貝是別緻之作,以紫色生菜包燒汁元貝,賣相醒目,元貝新鮮大粒豐盈。意大利砵酒珍寶蠔是又一水準之作! 珍寶蠔經炸配辣汁,香口味濃,真的好吃!配生菜也是健康之選。 好味一浪拉一浪,蠔皇扣三頭鮑魚,蠔皇扣鮮鮑是傳統吃法,鮑魚不算很大,難得的是它一點也不韌味道濃郁,不俗。頭抽生煎澳洲大虎蝦,味道鮮味,適合愛蝦人士如我。海東星班,-人分到約四片,伴以小雪耳蒸,味道不錯,魚肉很滑。黃金脆皮雞,愛它不韌有雞味。金柱鮮竹泡菜苗,健康菜一道,味道合格。龍蝦肉泡西施飯有特色,經油炸的飯香口好吃。共四道甜品,先來養顏蛋白杏仁茶,甜度剛好有口感。燕窩流沙大壽桃即流沙飽,多流沙汁。有燕窩感覺矜貴。香芒布甸做的滑而清香,我喜歡!貴杞榚也是滑而清香。飲品有紅酒白酒 加可樂 ,還有一種自家製西柚汁,清甜開胃。整體環境、服務(服務員面有笑容)食物皆不錯,推介大家母親或父親節可以一試!謝謝開飯網的邀請,讓我和食家可以品嚐如此盛宴。…Read More
