一班朋友食飯,緊係要坐得舒服食得開心,於是朋友book了尖沙咀大同私房菜。這間係前廣州知名食府,用自己嘅秘方做粵菜,亦有西餐提供。聽老闆講之前係九龍城只做熟客,上年9月才搬到尖沙咀接受街客。餐廳修裝好有格調,只有2張大枱,所以一定要預約。另外老闆好殷勤,會親自上菜和講解菜式嘅歷史👍燕窩鷓鴣粥雖然這個懷舊菜有個粥字,但唔係用米煮成,用上燕窩、鷓鴣肉、金華火腿。而"粥"口感綿滑、鮮甜入味蟹粉豆腐用上季尾嘅大閘蟹肉和豆腐以清蒸方式烹製,保留豆腐和蟹肉嘅原汁原味。蟹肉香氣濃郁,豆腐則帶著細膩口感自泡味菜炒肚尖 鹹酸菜係自家醃製,味道酸香爽脆,豬肚入味軟嫩彈牙,送飯一流清炒涼瓜先用水沖洗2小時,令苦味除去,而且味道清爽,適合夏季消暑大同炸子雞炸子雞外層酥脆,肉質鮮嫩多汁。濃味鹵水汁係反複煮滷味而得出嘅濃汁,配埋一齊食更滋味蜜汁火方源自杭州菜,這裡做法比較創新,選用菠蘿代替蓮子,食落有甜酸感,配搭鹹香嘅火方,再用麵包夾住嚟食,減低火方嘅鹹味廣州荔灣豉椒炒蟹螃蟹肉質鮮美,用艇仔古式方法,有少許辛口,香濃惹味咖喱小羊肉羊肉腍滑入味,自家制咖喱濃郁,又唔會被辣味掩蓋大同荷葉飯啖啖荷葉香氣,加左雞肝、蝦肉和冬菇,老闆建議可加少許紅醋,令味道更有層次感蟹油撈麵用上炒蟹所剩餘嘅蟹油加入鹼水麵,挑起整個麵嘅靈魂二十年陳皮紅豆沙最期待嘅甜品,紅豆軟綿,清香可口…Read More

母親大壽,想找一家體面既酒家,親友識人,推薦呢間廣州甚有名氣與歷史、主打傳統粵菜既大同私房菜,因為會所只有兩圍圓桌,所以預約是必須的入面佈置華貴,靛藍為主色,一洗平時酒家慣性紅紅白白既俗氣房間滿佈藝術畫作第一道:燕窩鷓鴣粥呢樣係傳統手工菜,傳統做法係將參薯/木薯攪成蓉再加鷓鴣肉煲勻,但呢度用左冬瓜,食起上黎較清熱同埋無咁黏稠第二道:大蝦多士我想像中的蝦多士係多士係底蝦係面,但呢個做法係,多士包覆住整個大蝦,然後開炸用刀切開一半,可以一半點喼汁,一半點茄汁,兩種風味第三道:自醃味菜炒肚尖咸酸菜係店家自家醃製,酸香味齊全。而每隻豬既豬肚尖只有3-4人份量,呢個部位既豬肚,厚實、柔韌,過鑊爆炒一下,食落嫩滑又爽口第四道:清炒涼瓜呢道菜,負責人甚至話係招牌菜,睇落以為簡單野,背後功夫野十足:先係將苦瓜汆水兩粒鐘,然後唔落油水直接生炒,上碟時灑上少許胡椒粉調味,口感爽脆,甘而不苦,一片一片吃著非常上癮第五道:蜜汁火方做左幾廿年人第一次食呢個,睇餐牌時都有d期待原來係道傳統浙江菜,雖然並非粵菜但都係店家招牌之一,用多士夾上用蜜汁煨過既金華火腿、並以菠蘿最代本應為蓮子及腐皮,旨在減少肥膩感及火腿鹹味雖然未食過正裝牌本,但我非常滿意菠蘿呢個配搭有種蜜瓜火腿既果種感覺第六道:廣州荔灣豉椒炒蟹用豉椒、蔥加醬料爆炒肉蟹,肉質爽嫩鮮甜,幾惹味,店家特別提醒一定要食埋蔥段,因為條蔥係將整碟菜嘅精華吸收左第七道:大同咖喱牛腩呢個牛腩不得了,店家用自家方法炮製,牛腩炆到好淋,軟軟嫩嫩,又不失油脂甘香薯仔更是出色,盡吸收曬咖喱精華,白飯可以送兩碗第八道:蟹油撈麵啱啱食完仲回味緊?仲有驚喜留係最後,店家將剛剛炒蟹用剩嘅蟹油同配料留起,再送上粵菜常見嘅鹼水麵,撈埋一齊食簡直不能更加好味,尤其係豉椒,同蔥段一樣都吸收晒炒蟹既鮮味,記得量可以逐點添加,因為味道實在太濃郁了第九道:臭草陳皮綠豆沙終於食到甜品,呢碗綠豆沙加左臭草同陳皮煲,店家話臭草係廣州常見植物,又名芸香草,其實一啲都唔臭,好多時都會用於烹調調味或醫藥用途。店家貼心地提供白砂糖同埋羅漢果代糖俾食客自己加,適合要減肥既女士們,亦可以俾客人自行調較甜度我覺得少少驚訝係呢到仲有間卡啦ok房!「天下為公,世界大同」為孫中山先生既理念整體黎講好滿意,尤其喜歡佢既裝飾,氣派不落俗套…Read More
