初訪在2021年8月,食物及服務皆是一流,是一次美好的用餐回憶。二訪其實是上個月底的事情,食物一貫保持水準,是次在包房用餐,服務當然更好。相距不夠半月,今天三訪選擇這裡,是為了再一嚐巧手醋香黑豚肉,我真的很愛這道菜式。香脆的口感,黑豚肉juicy,酸甜的醬汁美味。其他食物亦保持水準,值得前來一嚐。奈何員工服務欠佳,完全與高級餐館不符,今天是平日,大廳沒有滿座。我們入座時暫時只有4台客,離開的時候大廳好似是連同我們8台客人。由一開始,請服務員點餐,他說:「轉頭」然後就走開了。當我以為他忙完會回來,又或者請另一位同事幫忙,結果他轉過頭就完全忘記了,他又在我們面前晃過,毫無為我們點餐的打算,所以我們需要再次呼喚他。普通酒樓見到茶壺開蓋,服務員都會很自然懂得取壺加水,我見那位服務員經過幾次,他明明上菜的時候都有看到,都是沒有幫忙加水的打算,當然又要叫喚他,請幫忙加水。隔了好久都沒有回來的茶壺,奇怪之下發現原來茶壺就這樣放在中島桌子上,還是完全沒有加水。到最後突然殷勤跑來問我要不要點其他食品,甜品之類。其實我很愛吃明閣的蛋白杏仁茶及烏梅糕,但他突然反差地問我需要,我真的不想再點餐,然後就走了。用餐時有留意了他一下,究竟是他一向沒心上班,還是剛好有心事,一邊上班一邊見到他按手機很多次。管理層需要了解一下員工狀態,神不守舍很容易發生意外。…Read More

難得和好友歡聚,這晚選擇了「明閣」的灣仔分店嘆嘆高質中菜。「明閣」位放鷹君中心的2樓,一上電梯便看到招牌。餐廳裝潢設計時尚優雅,甚有空間感。桌子之間有一定距離,給予客人一定私隱度。一進餐廳大門口,更是有一個酒吧。在中菜廳內設bar實屬少有,可惜疫情之下暫時休業,未能觀摩。否則的是,一試這裡的特色中國茶cocktail也是不錯。素來愛吃叉燒的筆者,又怎會錯過一嚐米芝蓮食府出品的這個機會呢?明爐叉燒燒至色澤金香。半肥瘦叉燒厚切,入口是肉香和脂肪油香並存著。一件過後,蜜汁的香味餘韻久久未散,令人忍不住再來一件。造型華麗的焗蟹蓋,放置在蟹形碟上,甚具打卡度。蟹蓋有2款做法可選,分別是芝士焗又或香酥,這次試了芝士焗。蟹蓋面上舖滿烤焗的焦黃的芝士,看得吸引。芝士之下是滿滿的蟹肉絲,也夾雜了白蘿蔔絲去加添口感。蟹肉的鮮美配上芝士,是一道香口美味的佳餚。能夠成為米芝蓮星級粵菜餐廳,殊不簡單;這個雞絲羹更拿下旅發局的美食賞金獎,再錦上添花。湯羹足料,啖啖都充滿著花膠絲、雞絲、木耳絲。以老雞和金華火腿熬成的湯底鮮味也頗為濃郁。值得一提的是,湯羹還加了陳皮絲熬煮,進食時隱約感受到陳皮的芳香。吃時還可以配上咸香的南乳薄脆。「明閣」分別在旺角和灣仔有設店,2間各有特色,有些菜式只會在個別分店出現。這一道巧手醋香黑豚肉就是其中之一,只能在灣仔店才得以一嚐。黑豚肉先以炸的方式處理,口感香脆,咬開後是鎖在裡面的肉汁,豚肉香十足。外層蘸上了焦糖和黑醋煮做的醬汁,味道酸甜開胃,夾起時更有拔絲效果出現呢。平時吃的都是上湯浸時蔬居多,用鮮杏汁的還是頭一回品嚐。菜蔬新鮮,再配上杞子、雲耳、百合等。每一口都滲透出杏汁的香味。炒飯加了蝦肉、帶子肉和瑤柱等海味,再下鮑魚汁一起炒香,面上灑上蔥花作點綴。入口惹味,飯粒又粒粒分明,煙韌夠穫氣。奶凍以3.6 牛奶混合魚膠粉,放入雪櫃雪好,之後再放上桃膠。奶凍非常香滑,牛奶味濃郁。而且因為桃膠用了黑糖和薑汁煮香,牛奶味外又會多了一分薑汁辣香。好吃又養顏的甜品,絕對會成為女士們的最愛。…Read More
