自從Jimmy’s Kitchen 關門大吉之後,我都沒有到過這個位置吃飯。上年曾經訂過這裏一次,但朋友臨時工作改行程,而取消了飯局。今年生日飯,父母要求吃中菜,本來我想到二星米芝蓮欣圖軒的新版麗晶軒,可惜預訂得太遲,臨時打電話到廚魔名人坊,幸運地訂到僅餘的大堂散座。廚魔名人坊的環境並沒有與其他為摘星而生的高級中菜浮誇Fancy,反而有一點點平實高雅的感覺,不會令人吃得太侷促。今晚酒樓用屏風分隔了散座及另一邊壽宴區域,散座區枱與枱中間的距離還可以,不會太過接近。我們一行四人,根據餐牌內廚魔推介或富哥推介,點了八個餸菜。以下一一介紹:燕窩釀雞翼,雞翼是新鮮的,並不是雪藏雞翼,內裏燕窩豐富,皮脆內嫩,沒有絲毫的油膩感,強烈推介。琵琶炸豆腐,這間中菜的炸物做得很好,不會油膩,但是由於釀雞翼太出色,這個琵琶豆腐顯得比較普通,平平無奇。百花炸大腸,皮奇跪無比,絲毫沒有肥膩感,入邊釀了海鮮滑,令炸大腸更有口感,外脆內彈牙,另一個必食推介。黑蒜豆豉雞,用砂鍋上,香氣四溢,父母喜歡,我個人覺得略為油膩。椒味酸菜魚,點了小辣,內裏用去骨龍躉腩做主角,我第一啖吃落去覺得最好吃的,是吸收了酸菜湯的銀芽。酸菜湯完美地遮掩了龍躉是養魚的弱點,絕大部份平時的龍躉的養魚味都可以成功地掩蓋。焗蟹蓋,身為焗蟹蓋的長期fans,我去每間高級中菜都會點這道菜。這裏的焗蟹蓋蟹肉豐富滿瀉,再加上濃濃的芝士味,都做得好好。富哥咕嚕肉,佢個咕嚕肉用肉片上炸漿鮮炸再用咕嚕汁包面,鮮跪不膩,底下是紅黃綠椒、洋蔥及新鮮菠蘿。都係水準之作,適合不喜歡食生炒骨的人。富哥炒飯,本來仲想點蟹肉炒粉絲,經理Louis 溫馨提示嗰個都係炒嘢,叫我哋只叫其中一樣就可以。炒飯做到粒粒分明,碗入邊不會有剩油,加埋瑤柱XO醬吃,令我忍唔住食了一碗半。甜品蛋白杏仁茶香滑甜味適中。最後食埋桂花椰汁糕,父母高興我高興,就成為完美的一餐生日飯。…Read More

終於可以一試由廚魔同富哥合作既粵菜餐廳, 必點既當然係幾款富哥招牌菜, 餐廳比起其他米芝蓮級中菜價格算唔錯,又易book位 encore機會好大😁 燕窩釀鳳翼拼琵琶豆腐菜式只留下少量雞肉,其餘位置都填滿燕窩, 入口清新味道偏清淡. 另外仲拼左一件琵琶豆腐, 都係招牌菜之一. 兩者都係外脆內軟非常夾,個人更推薦琵琶豆腐家鄉蒸龍躉腩(一客)蒸龍躉腩一放入口就覺得好surprise, 龍躉腩夠爽滑,調料同家鄉醃菜都提升左整個口味富哥咕嚕肉 $240咕嚕肉係以肉片既方式去整, 炸粉好薄加上切成一片片,食落香脆而肉質又彈牙,好鍾意富哥招牌炒飯 $280炒飯粒粒分明又乾身,稱為招牌炒飯一D都唔過份, 不過唔算太有驚喜,屬於相對好食既炒飯…Read More

中環新開中菜廳由兩位米芝蓮星級大廚 ─ 鄭錦富(富哥)及廚魔梁經倫(Alvin Leung)坐鎮,今次聞名而來,試試中菜fusion的味道。兩位廚魔攜手合作令人耳目一新的新菜單,將香港中菜帶來新味道及口感。 1)本人十分喜愛吃海蜇,這碟青瓜拼蔥油海蜇特別新鮮,沒有急凍的味道,而是以室溫存放,不會有死凍的口感,更能嘗到汁的味道。 2)這碗杏汁燉白肺湯,杏仁味道剛剛好,不會太濃,適合抗拒杏仁味道的朋友。湯的質感十分豐富,加上白肺真材實料,營養價值很高。3)燕窩+雞翼真是第一次嘗試的組合,雞翼外皮煎成金黃色,很飽滿很香,去了骨吃得很方便。內包著暖暖的燕窩,吸了肉汁的鮮美。非常推薦!4)對咕嚕肉的刻板印象就是很酸很硬!但富哥做出來就是一啖一爽口,酸甜的分配很完美。富哥把肉切成一片片,無骨也無多餘的肥肉和生炸粉,吃起來咬勁十足!5)新鮮鮮甜的龍躉腩啖啖都係肉!嫩滑富魚香,配上陳皮絲、榨菜、蔥花,惹味不腥,加上掛汁,真是絕配的享受!6)脆皮炸子雞的外皮吃起來脆到有聲!外皮不會太厚太肥,肉汁鮮甜豐富, 鬆軟到適中。7)時蔬很新鮮和鬆軟,加上湯汁很配搭,帶出時蔬的鮮甜,雲腿的咸味剛好調整了整道菜式,有口感,且味道豐富。8)富哥招牌炒飯是全晚最高分的一道菜!粒粒分明的米飯,加上配菜很有心思,鍋氣十足卻沒有多餘的油,吃落很爽!難怪富哥的朋友說這是他們吃過最好吃的炒飯!希望下次來可以試試炒米粉!9)甜點以蛋白杏仁茶作結, 蒸燉滑溜潘的蛋白作底,撈一撈杏仁茶保持蛋白質感香滑,豐富口感, 滋養健康!晚飯過程中,從食物的烹調過程和味道都體驗到富哥和廚魔對食材的堅持和創意,把平凡的菜色加入熱誠和心思,創造出與吃不同的味道,實屬難得,值得尊重和嘗試!…Read More
