在五花八門的串燒當中,今晚有幸來到尖沙咀的「燒鳥」食日本傳統的串燒。「燒鳥」由經驗豐富的日籍料理團隊主理,用日本烤爐,以備長炭燒烤不同的雞肉部分和野菜。步入餐廳,只見燈光柔和,充滿日式風情。一大張L形長枱和高椅,能讓客人一邊食,一邊欣賞大廚的功力,真是賞心樂事。今晚的大廚是「佐藤博之」,服務員介紹他擅長用濃煙來燒烤,所以燒出來的食物會有淡淡的炭香煙燻味。我們選了餐牌上的10道串燒,每位$698,服務員禮貌周道,細心地講解每道菜式的獨特和食法。枱面放了黑白兩瓶調味粉,黑色瓶是七味粉,白色瓶是山椒粉,客人可先嚐一口食物的原味,再嚐加了調味粉的味道,就能品嚐不同層次的美味,非常細心啊!🍒濃香雞湯配免治雞肉先來一碗湯暖暖胃,這湯用了慢煮的方法,非常清甜,內裡有一大舊免治雞肉,鮮甜嫩滑。1.🍒 雞柳 ~ 加了魚子醬,更顯矜貴2.🍒 黑薩摩雞胸 ~ 紫蘇葉包著雞胸肉,散發獨特的香味,能帶出雞肉的鮮味3.🍒 雞頸 ~ 軟腍中帶點煙韌,燒得焦香惹味4.🍒 鹽燒雞腎 ~ 爽脆入味5.🍒 黑薩摩雞腿 ~ 連皮的雞腿肉燒得真正的皮脆肉滑,放入口即爆汁油香🥕清舌餐點 ~ 有青瓜、車厘茄、紅蘿蔔、燈籠椒食到一半,來碗酸甜的蔬菜清清口舌,接著就是較濃味的醬燒串了6.🍒 雞尾 ~ 脂肪豐富,油香十足7.🍒 生麩機邊燒 ~ 日本麵根,像芝士年糕,夾著紫菜一齊食,又脆又腍。8.🍒 醬燒雞腱 ~ 雞的小腿部位,夾著大蔥一齊燒,煙煙靭靭並滿有蔥的香味。9.🍒 燒日本銀杏果~ 銀杏果即是白果,我們常見是黃色,而日本的銀杏是綠色,細細粒的果仁如翡翠般碧玉,口感帶著微苦的甘甜,風味絕佳。10.🍒 燒和牛西冷~ 和牛西冷牛味極重,口味軟嫩,食了多款雞肉串後,突然來一串牛肉,頗有驚喜。🍒 自家製月見免治雞肉先試一口原味,再試沾上蛋漿的雞肉,肉味濃厚而同時有蛋黃流心的口感。🍒 雞白湯拉麵自家手打拉麵配雞湯,看似簡單,食落就能看出廚師的功力,無論是拉麵的口感,還是湯汁的味道,都令人回味無窮。🍒 雞肉茶泡飯白飯上面鋪滿雞肉絲和蛋絲,再把熱騰騰的茶湯倒入碗內,自由加入紫菜絲和柚子胡椒,食到一滴都不淨。🍒 夾餡雪糕花形的餅皮夾著綠茶雪糕和甘甜的紅豆,又吸睛又好食,再次證明了日本人對食物的一絲不苟。🍒 自家製布甸迷理布甸上有一層脆糖漿,配兩塊軟糯的黃豆蕨餅,甜而不膩,滿足的一餐。…Read More
