靚太61歲大壽,美麗如昔,祕訣是保持心境開朗,從來不到美容院,設宴福臨門,我們有口福。三樓全層,四張大枱,估計客人有六十多人。美酒自然少不了,進門已經奉上香檳,餐後大家竟然不劈紅酒,KO整支XO!四代同堂,長輩在場,相機不可以胡亂吃先,餸菜全相欠奉,咁都無所謂,只談精彩的。前菜6款,最特別的是雞子戈渣。酷似炸豆腐,只看外表,容易與椒鹽豆腐混淆。廣府老菜,現在已經少有店子會做,大家無須擔心它是雞子,其實材料是雞蛋,只因混合粟米粉及上湯來炸,餡料口感不像雞蛋那麼滑,反而有少少沙沙粒粒感,似雞子;戈渣是北方話鍋炸的意思。炸至金黃色,香口惹味,皮煙韌內蕊軟腍,不鹹不淡,口感不俗。大紅片皮乳豬是褔臨門之招牌菜式之一,確實燒至皮薄如紙,香脆惹味。而且全只乳豬盡用,除了片皮外,豬骨連肉斬件,包括豬頭,不會保留任何部分作他用。紅燒大排翅因為環保原因,近年大家已經少吃魚翅,但傳統大菜,壽宴少不了。福臨門出品,排翅份量多如粉絲,並非最粗大但亦不脆弱,可惜高湯不夠濃郁,似乎少放了金華火腿,是否主人家要求或是現代健康版就不知道了!欠一些醇厚濃郁的滿足。伴以芽菜丶青蔥及火腿絲亦是一般的配搭,並不供應紅醋,自信心十足。鵝掌三十頭原隻吉品鮑吉品鮑是這晚的精華,吃過方知真正的溏心,品嚐鮑魚,我必用刀叉,因為一切該由手感開始,用輕輕之力切開小件,柔靱軟熟,鮑汁黏稠,鮑魚濕濶豐富,中央呈較深色調,小件入口,郁香橫溢,軟棉中肉質有彈性,滿咀幸福之感覺,慢慢咀嚼,慢慢品嚐,非常滋味;沾了鮑汁的生菜,爽脆美味;充滿膠質的鵝掌,炆至腍嫩,飽汁倍增黏稠,口口骨膠原,就是小骨內亦深藏膠原,捨不得不吮清所有汁液,一面吃著,未曾消化已感美麗!吉品鮑魚,除了是身份之象徵外,烹煮方法確令其精彩,回味無窮!焗釀鮮蟹蓋炸至金黃色,真實臉貎,無需添加任何色彩,鮮蟹拆肉無花假,並非混合大量薯蓉及洋蔥之將貨就價產品,炸漿只是薄薄一層,酥香惹味不油膩,蟹肉鮮甜,出色佳餚,人見人愛!清蒸東星班我的有頭有尾添吃分配,見那突出的眼睛,有彈性的魚臉珠肉已知新鮮,蒸功亦準繩,剛熟全魚肉嫩不嚡,魚汁香甜,無投訴之理。沒有拍照的荷葉飯是這兒的招牌,可能已經太飽,今夜亦不覺怎麼樣。甜點五款再加生日蛋糕便是六道,這三款只好打包。富戶宴客闊綽,這一頓豐盛宴席價錢不菲,難得健康快樂,主人家應該滿意,客人亦盡興而歸。…Read More

聖誕節前,靚靚K姨姨做東,於灣仔名中菜廳「福臨門」宴席一圍,座上客全為屋企人,輩份最高為八旬舅公,畫面正好描繪出三代同堂,六福臨門 !離灣仔地鐡站不遠o既「福臨門」共三層高,一樓為廚房及廂房,二樓為散座及廂房、三樓則全為廂房。貴氣十足o既門外設有代客泊車服務,每每有食客光臨,企喺正門o既旗袍姐姐都會有禮地上前接待並安排入座;雖然小弟未成為富豪,但都自覺為貴賓 。當晚飯局設於三樓廂房,樓底高,寬敞闊落,冷氣充沛,隔音足,舒適自在。房間內長期有位姐姐仔為客人斟添茶水、換碟、分餸等,服務細心體貼,舅公極為欣賞。K姨姨非常客氣,預先訂好上盛佳餚 ,招呼親人。 前菜四小碟之皮蛋酸薑、窩貼明蝦、千層峰、蒜片牛柳粒:四款前菜各俱特色,豬耳清涼爽脆,牛柳粒香軟惹味,蝦多士爽而不膩,皮蛋流心又糖心,好一道拼盤前奏! 大紅片皮乳豬:兩吃o既乳豬已去肥膏,皮層不但香脆,入口更鬆而化 ,屬燒乳豬最高境界也!手撕二道o既乳豬肉質香甜幼嫩,果然名不虛傳! 官燕釀竹笙卷: 竹笙卷包滿,燕窩份量足。竹笙外層爽脆濕潤,官燕餡料清香軟嫩,簡單地打上芡汁已覺輕巧美味,原來燕窩咸食都可以好好味架 ! 油泡蠆片:怕骨o既小肥少食魚,故不太懂得如何品評魚類菜式。唔知係咪魚種問題呢,個人覺得此味龍蠆片質感微嚡,唔多夠嫩滑。 鮑汁鵝掌鮮鮑角跟豆苗:大大隻o既鵝掌軟腍滑溜,鮑角則煙韌軟滑,伴碟o既豆苗翠綠又鮮嫩,香濃甜美。 唐生菜蒜子炆蠆翅:大肥爸爸大讚炆蠆翅o既魚皮香滑,魚肉軟熟嫩口,比油泡蠆片惹味得多! 咸切雞:相比起其他餸菜,咸切雞無論係賣相、口感定亦或係味道都似乎有啲格格不入。雖然雞隻並無肥層,雞皮亦已去毛,看似健康,但入口卻只有咸味,肉質並不軟滑,就連雞皮都帶點乾硬,講真有啲失望 ! 瑤柱荷葉飯: 荷葉飯香氣洋溢,半乾濕o既飯粒軟熟得黎又帶點彈牙,好有驚喜!飯局中有五味甜品,小肥主攻飽肚o既煎堆仔,所以避開咗香煎馬蹄糕、豆沙蘋葉角及生果拼盤 。 蓮蓉煎堆仔:煎堆仔呈完美o既球狀,金黃色o既外皮一滴油都冇沾上。咬第一口時要特別小心,因為鬆化香脆o既皮層下內藏滾熱辣o既蓮蓉餡。眼見各賓客都停哂手,煎堆仔隔咗夜又冇咁好食,XO仔當然係唔會客氣啦,一個人食咗五隻,甜在口裡 。 蓮子元肉燉雪耳紅棗銀杏糖水:糖水足料味濃,香甜潤口,嘻嘻,飲完仲覺皮膚滑咗不少添!靚靚K姨姨盛設款待家人,小肥有幸參與其中,當真不勝感激!「福臨門」由外至內都滲透著獨有o既氣派,裝潢華麗中沒有一點浮誇,廂房私隱度高,洗手間內配套齊備,環境優雅,衛生水平高,加上服務生貴賓式o既禮待及老師傅豐盛o既菜餚,怪不得能當上城中富豪o既飯堂 。…Read More
