抗疫已經接近兩年,餐飲業中嘅C及D類食肆可以話恢復得七七八八,起碼打咗針後十二人都可以同枱食飯。嘻嘻,XO仔終於有機會以陪客身份出席長輩安排嘅晚宴,九月有幸一嚐近期都幾紅吓嘅高級潮州菜館「潮州軒」。因為自己去過前身嘅「張生記」,到步即認得出餐店門面及室內嘅裝潢格局都冇乜大改變,地方依然光鮮企理,大方舒適,環保得絕對有理。十二人宴席設於廂房內進行,有專人服務,房內有個小偏廳及私人洗手間,私隱度高且衛生非常。餐桌上擺有齊備嘅自用及公用餐具。菜單亦早已訂下。貴客未到齊,先有香口開胃嘅小食送靚酒。錦繡鹵水鵝拼盆:首道出場嘅鹵水拼盆排得好整齊,有骨嘅掌翼就冇試到,不過鵝片每件都切得好均勻,又夠肉汁,全部都係靚位。舖面嘅鵝肝外表潤澤,其實質素已經算好唔錯,只係細佬喺其他潮州店食過柔軟滑溜得多嘅演繹,難免會比下去而已。潮州四小碟之髮菜卷:炸至金黃嘅髮菜卷皮層薄到透出黑色嘅餡心,咬落鬆脆乾巧,中間嘅髮菜軟潤芳香,卷物毫不油膩,輕輕點上伴配嘅柚子秘汁即增添一份甜絲絲嘅清新。潮州四小碟之豬頭稷:如果冇聽錯,豬頭稷乃傳統潮州菜,主材為豬頭肉同糯米。第一次食覺得其質感有啲似好多條豬肉乾絲黐埋一齊咁,又乾又嚡又硬,而且仲好咸,唔係咁啱小肥口味囉!潮州四小碟之蘿蔔灌章:四小碟中最正就係以腐皮包住蘿蔔絲後煎煮嘅蘿蔔灌章!點心嘅腐皮外層輕盈巧薄,半透明嘅蘿蔔絲則軟潤甜美,簡單得黎好有驚喜。潮州四小碟之潮州筍粿:雖然菜單上寫明係「潮州粉粿」,但XO仔都幾肯定面前嘅係「筍粿」,因為食得出內含粉粿唔會有嘅筍粒。粉綠色嘅筍粿皮煙煙韌韌,但欠缺咗份香口,反而入面嘅韭菜鮮筍豬肉餡好惹味爽脆,就喺輸在煎得未夠火候。潮州紅燒翅:紅燒翅翅滾住入房繼續煲,並由經理哥哥續一分派,以確保入口時熱力十足!橙美亮麗嘅紅燒湯底鮮美香濃,翅翅亦脆潤滑溜。堂灼響螺片:以示螺片真材實料,大會指定動作梗係要喺轉盤上繞場一周啦!響螺片明顯比翅翅矜貴,因為堂灼任務要轉交大廚親自出馬,續片即灼即上枱!記得細細個食過嘅螺片都係薄薄嘅一片,當時更被叮囑要好好珍惜,因為每片都要成幾百蚊架!如相所示,呈奶白色嘅螺片每片都有返咁上吓厚度,由於新鮮灼製嘅時間掌握得恰到好處,微微捲起嘅螺片清甜鮮美,爽潤彈牙,完全唔韌,不過要千多元一塊聽到都戥主人家個荷包痛痛。鮮蝦水瓜烙:意外地,潮州軒嘅水瓜烙竟然係小肥食過最高質美味嘅版本!煎至金黃嘅水瓜烙不單厚薄適中,而且一啲都唔油,採用嘅水瓜肥潤香甜,混入嘅鮮蝦份量足,包保每一口都有蝦蝦食,雖然並非什麼名貴菜式,但絕對屬整晚之最,必吃推介也!三十年老雕蒸大紅蟹:小弟因敏感問題未有進食,眼見兩隻大蟹轉咗唔夠兩個圈已清碟,就連藏於蟹底嘅銀針粉都不見蹤影,相信唔會差得去邊。普寧豆醬焗雞:特色家常名菜豆醬雞嘅芡汁豐沛,以砂鍋上夠哂滾熱辣。靚雞嘅肉質幼嫩無比,香濃而不膩口,雞皮一切即起,超級軟滑,極品!螺頭煮水東芥菜:用螺頭煲煮嘅水東芥菜腍身得黎仍保持微脆嘅口感,煲中嘅螺頭上湯甜濃中帶有少少辣味,極之暖胃消滯。糖醋二面黃伊麵:單尾薄薄嘅兩面黃金亮橙美,乾巧唔油膩,咬落外香脆內煙韌,黏上醋醋再灑上糖粉更覺鮮香醒胃。甜品環節共有「反沙芋頭」及「清心丸豆爽」兩道,清得靚酒黎XO仔個肚肚當真已食唔落甜品,幸好仲記得影相俾大家參考。「潮州軒」環境高雅,私人廂房尤其闊落舒適,服務優良,食物質素屬中上之列。十二人盛宴中以幾款家常潮州小菜最有特式同驚喜,最令小弟吃驚反而係得悉當晚每人平均消費接近三千元;講真有翅翅同螺片食都知唔會平,不過真係冇諗過價格會咁星級囉!…Read More
