因疫情,近兩年都無約過家族成員出來一聚,這一次就是家族應節晚飯,一起來到獲米芝蓮推介的「金燕島潮州酒樓」,這是一家老牌主打傳統潮州菜的菜館。而位處尖沙咀,地點十分就腳,很方便大家。餐廳裝潢很有中國風,古樸而帶點雅氣,而且,地方也頗大,很喜歡卡位的彩色花窗。吃潮州菜有個特色,就是一坐下,不論你點甚麼茶,都會先送上功夫茶讓你細嘗,此外,還有餐前前菜「鹹酸菜」,均是頗有特色。先來一道湯品「太極天河素」($50),刻意做成綠白兩色,非常漂亮好看,入口幼滑香鮮,既有姿勢,又有實際。雙棗是潮州菜的特色食物,「黃金炸雙棗」($200,可按人頭數增加)就包了蝦棗及蟹棗,兩者各有特色,甘香不膩,鮮蝦味及鮮蟹味都十足,更配上兩款特色蜜糖,很有心思。「梅子明爐烏頭」($400)是冬季限定推出的特色菜,有點像泰式的明爐烏頭,不過,以酸梅子入饌,還加入了大量配菜,令其變得更豐富:),而烏頭本身十分鮮甜味美,湯汁也是不容錯過。市面上很多賣魚蛋粉的都標明是潮州魚蛋,因為潮州魚蛋確是爽鮮,這一個「魚蛋煮紹菜」($180)亦十分有水準,魚蛋、炸魚片也是爽口彈牙,魚味突出,就連紹菜也十分鮮甜。最後,再送上功夫茶,有助消滯解膩,能跟親友一聚,是一種幸福喔。…Read More

坐低先各隊三杯功夫茶消消滯又開開胃,套餐跟以往一樣無改喎,那麼一切依舊,改少少試下新野先 ﹗招牌潮州翅,真材實料又大手筆,翅針裝到滿滿的 ﹗老雞上湯鮮甜致極、濃郁香甜無比,不能跟其他酒樓生粉水相題並論 ﹗暫時係唯一一間我唔會落醋撈黎食架乍,絕對要原汁原味,否則就好浪費喇。不過硬係覺得比上次食頭圍 18:30 份量小左非常之多,少左一半呢。滷水鵝片,招牌滷水汁,幾十年陳年滷水香甜芳香,厚薄適中,咸味不嗆而帶鮮,食完又唔會口乾。鵝片質地滿意,有趙口而微彈,雖則有點乾但滑而不鞋,唔錯唔錯。到現時為止食過最滑最多汁既鵝片唔係金燕島,而係大埔潮州冷小炒囉。方魚炒玉蘭,比上次差好多倍呢,失望。鑊氣欠奉,微暖靜蠅蠅送上。整碟水份較多,炒得不夠乾爽。方魚偏咸而且硬屈屈,都無浸透喎,炒既時間及火喉不足,方魚油脂咸香未能釋放,芥蘭還芥蘭、方魚還方魚。芥蘭就非常滿意,鮮嫩爽甜好新鮮,好好食。清蒸海斑,係青斑黎喎,一斤左右最好食。野生海斑肉質特別結實彈牙,魚油豐富,鮮魚味極濃。超水準蒸得剛好,九成九熟而骨帶粉紅半透明,技巧超高,美味極致 ﹗啖啖肉,魚肚膠膠滑滑,魚肉又嫩滑,好味道。潮州炒麵,未食過梗要試試啦 ﹗上次試左勁好味勁香既欖角炒飯,但潮州炒麵有點強差人意咯。炒麵配料有蝦球、冬菇,炒得香口,沒什麼特別的炒麵。麵質有點似伊麵,比伊麵更嚥韌,但最大問題係咸左少少。我不太受得咸,但朋友仔就覺得咸度還可以。杏汁燉官燕,我都唔想不停跟上次比較,但真係質數下滑。我硬係覺得份量少左非常多,而且上次食頭圍既燕窩有焗過好乾身,但點解今次水汪汪呢?因剛才都食得好濃味,而杏汁官燕偏淡口,所以要落大量杏汁撈混,再耐心地慢慢答,食左四五口後,就會食到杏汁啖啖既清香喇。雖然份量少左,幸好都依依好好味 ﹗水晶飽,外層黏黏而嚥韌,豆沙餡清甜不過份,試一隻夠晒,太飽食唔落喇。果盤西瓜併木瓜,開心既時間好快過,又係時候講 bye bye 喇 ﹗食返幾件生果清清味蕾。上次食 18:30 每道菜都好食到拍爛手掌,覺得超值 ﹗不過今晚食第二輪 20:30 真係十分失望,差左好多呢。…Read More

近年多數在自助餐吃凍蟹腳,上一次吃潮洲凍蟹都不知是多少年前的事,幸得好友宴請,讓我有機會重溫其滋味。金燕島已由星光行搬到寶勒行再遷往現址的粵海酒店內,雖已久仰其大名,但我現在才首次光顧。我們二人獲安排坐卡座,自成一角,既舒適又較安靜。潮州凍蟹:友人一早預訂了凍蟹,但經理說適逢休魚期,所以蟹較細隻,而且要略加收費至六百多元。凍蟹既然是這餐飯的目標和主角,我們還是照叫可也。凍蟹上桌時已切開了多件,我覺得一點也不細隻,給兩個人享用絕對足夠有餘,而且細隻的肉會較嫰滑,更加好吃。這隻蟹的肉富有鮮味,肉質結實有彈性,吃得出是新鮮貨色。以這種極為簡單的方式烹煮,食材必須質優、新鮮才好吃,所以貴一些,也是值得的。滷水鵝肉鵝片鵝掌:友人另一道預訂的菜色是滷水鵝肉鵝片鵝掌併盤,頗為大碟。鵝肉和鵝片相當嫰滑,即使淋有較濃味的滷水汁,鵝肉的鮮甜味也絲毫沒被遮蓋,而且肉香撲鼻。鵝掌皮頗爽口,同樣滷得十分入味又不會過鹹,果然是招牌菜色之一。墊在下面的豆腐吸收了鵝肉和滷水汁的味道,同樣好吃。潮州翅:友人想試試潮州翅是甚麼模樣,所以叫了一碗來吃。結果不出我所料,翅的湯底是濃稠的一種,像一大碗深色芡汁,雖然看到一條條翅,貨真價實,但顯然不是友人喜歡的味道。正如他說,試過便算,始終較喜歡清燉的湯底。蠔仔粥:為了吃些澱粉質,又避免份量太多,我們叫了碗蠔仔粥,誰不知這個碗比一般湯碗大,每人結果也吃了至少兩碗。這個粥味道十分好,蠔仔又多又大隻,最欣賞廚師烹煮的時間拿捏得非常準確,把蠔仔煮得剛剛熟,令其肉身保持鮮嫰,又散發著蠔的味道。上湯莧菜:我想吃點清菜,侍應提議的上湯莧菜聽來不錯,所以便叫了碟。這個菜的高湯充滿肉的鮮味,令清淡的菜更富味道,只是我和友人都略嫌油下得多了點。綠豆爽:友人原本想點壽桃作為甜品,為我慶祝生辰,但最少要叫半打,實在太多。我揀了綠豆爽做甜品,順便清清熱。經理很好客,說請我吃這個糖水,真是高興。這個綠豆爽應該是我吃過最好吃的,綠豆很多,全去了衣,很喜歡糖水只有幾乎不能再少的甜味,還加有些清心丸增加口感,我即使嚷著飽也把它吃完呢!燕窩楊枝甘露:友人喜歡吃芒果,所以我提議他吃燕窩楊枝甘露。這道甜品盛在一個酒杯形的器皿內,上面放有些燕窩,頗為漂亮。芒果汁很濃稠,𥚃面有很多柚子肉和西米,材料十足,但對我來說是甜了點。功夫茶:在進餐前和吃過主菜後,侍應都為我們送上功夫茶。始終是高級餐館,所以提供的茶也比較優質,茶味甘香,不會只是濃或有苦澀味。當晩無論經理或侍應都表現得相當慇勤,態度一流,可是,友人卻覺得他們過度慇勤,令他感到有點不自在,真「攪笑」。(多謝包包man生日咭!)…Read More
