「買少見少」的傳統潮州菜黎到被稱為「小泰國」之稱既九龍城,點解會食潮州野?其實九龍城除左泰國人多之外,潮州人都好多,九龍城就已經有好多間潮州雜貨店、打冷、甚至滷水....今日就決定黎呢間老字號潮州菜。七月係我呀爺生日,佢又係呢間樂口福既die heart 粉絲,大大話話食左廿幾年,由以前老細到佢個仔接班;由以前行得好地地坐到樓下,到而家要坐樓下。佢去到呢到食既野來來去去個幾味,但係志在有堆「格ge冷」同佢傾下計,或者「隻下爹」(飲茶),食既一份感情,好似舊朋友相見咁。我地一行三個人食左三個送一坐底梗係醒你幾杯功夫茶—一啖一杯,但係小心真係熱飯前同飯後都有(唔夠仲可以叫佢加)但係千其唔好飲太多 唔係就成晚晚眼光光勝瓜加肉碎,太清淡唔係好識欣賞菜脯蛋—潮州菜必食之一,雖然味道真係偏咸,但係配上潮州粥真係好岩味!滷水鵝—潮州菜必食之一,但係滷水鵝都有分唔同部分:鵝肉(肉連骨),鵝片(淡淡肉)同埋鵝頸(係潮州食過)!我地就叫左鵝片,貪佢肉多唔洗煩。滷水汁都係偏甜但係好夾個鵝片;下面用索晒汁既豆腐墊底!好味!…Read More

屈指一算,今次係第二次參加惡男兄攪的大局。我覺得大局的好處係,食物方面可以準備得好d,或款式可以多d,當然位子是另一問題,攪手也要花很多時間,所以我一向佩服攪手,我連攪個屋企人飯局都頭痕,更何況係百人夜宴?惡男兄明明斯斯文文官仔骨骨,為何會是大惡男?哈哈,在此感謝惡男兄親切的安排。其實食友飯局的食評我很少寫,主要是自問文筆差、錯字多、別字密,一比之下,獻醜不如藏拙。適逢二百食評,為左紀念,獻醜都想寫下(其實是沒存貨 )。根據惡男兄所講,是晚都是潮州人的囍宴菜,一望而知都是手功菜。由於圍數太多,所以要分兩層坐,小弟被編到下層,正好看到那大個囍字,應該比我年紀還大。前菜先來一客錦繡大四拼,四拼即菜頭卷、海參丸、蝦棗、蟹棗。小弟有幸食晒四款,名副其實功夫菜,當中應以菜頭卷最花功夫,配酸醋吃起上來很開胃;海參丸很有膠質,不說真的不知是海參做的;蝦棗、蟹棗不叫蝦丸、蟹丸,原因應是因為蝦蟹肉未打到變膠質已做成丸,相比起丸類打到起膠的彈牙感,這個吃的是肉質,咬下去還覺得是蝦蟹肉來的。不過我地果檯的雕飾明顯營養不良,正常的應該更為靚仔/靚女,希望大家不要誤會。四寶元肚湯可說是全晚最為滿意的,整隻豬肚放料(蓮子、薏米、白胡椒等)紮起煲湯,成煲拎到埋黎,侍應先抽起豬肚,再用純熟的功夫做開肚手術咁,情況就好似街邊牛雜師傅咁’習習習’已經攪掂一個豬肚。豬肚湯夠晒辣,喜歡此道的朋友應該非常歡喜,但同檯有些朋友受不了,我覺得此湯不是死胡椒味,夾埋豬肚一起飲是一流的。印象中竹笙蟠龍卷是小時候吃過的,以竹笙包著蝦膠,兩著配合正是爽口加彈牙兼而有之,蝦膠中還有少許金華火腿提高鮮味,當然手功也是少不了,是另一味覺得不錯之菜式。潮式滷水鵝是另一期待,可惜期望愈大失望愈大,滷水味不入味,鵝肉偏鞋,我會覺得更好吃的大有「鵝」在。半煎煮黃花第一次吃,黃花一向鮮甜,沒想到用煎過後再浸蘿蔔魚湯更是鮮味,不過我不是魚痴,淺嚐就好。普寧炸豆腐有點失準,豆腐沒豆味,其實只是普通炸豆腐,如果是椒鹽還好,現在整件豆腐都無甚味道,連點了那特製醬汁都無甚味道,不過其實師傅炸功是不錯的,香口脆口不油膩,如果可以提升番豆味應該會更好吧。欖菜四季豆除了肉鬆外,還加了肉片,味道不錯,但四季豆可以更新鮮,又是材料採購的問題?潮式糖醋麵,麵餅熟左後煎香兩邊,加d糖,加d配,撈麵餅,放入口,不錯。韭菜粿拼筍粿賣相不討好,吃下去也只是一般,主要原因可能是不夠熱,煎炸食品放耐左感覺即時差了很多。畢竟<百人宴>的菜式不是易準備的,暫時還是可以理解的。這是我第二次吃潮式反沙芋,第一次覺得無甚特別,這一次也是一樣,芋頭四邊中有一面完全無糖,另一邊則可稱之為「糖泥」,不平均的糖成為這味反沙芋的敗筆。最後的功夫茶,是潮州菜的特色,也是最窩心的一刻。不經不覺,終於到了二百這個里程碑,一開始根本沒想過可以堅持這麼久,現在真有點仿如隔世。這段期間認識了不少食友,也學了很多東西,在此向大家謝過,也希望大家食運亨通,長食長有。…Read More
