難得捱過了一星期辛勞的工作, 週末下午決定要來吃餐好的來慰勞一下自己。經同事推介後, 今天便選擇在銅鑼灣CUBUS 15樓這間滝壽司吃個午餐。餐廳位於高層, 景觀開揚光猛。大部分都是吧枱, 可以一邊細嚐美食一邊欣賞師傅精湛的廚藝。前菜點餐後, 師傅會特地問你有甚麼不吃, 感覺很窩心體貼。然後便上前菜, 有些雜錦刺身漬, 有一碗清新的沙律, 上面有幾塊芋頭脆片, 口感爽脆, 味道清甜。天鯛白子壽司大大粒白子份量十足, 口感細滑豐腴, 像奶油般的感覺, 天鯛肉質鮮美, 清淡優雅中帶著細膩的油脂, 肉質彈性十足。活北寄貝壽司活北寄貝肥美厚實, 甘甜鮮美, 貝肉彈牙, 經輕輕火炙後, 味道更香濃。沙甸魚壽司沙甸魚很少可會用來作刺身, 沙甸魚肉質結實﹑鮮美爽甜﹑油香四溢, 口味豐富濃郁, 口感卻清爽不膩。赤貝壽司赤貝色澤亮麗, 海水以及鮮甜味濃郁, 帶有獨特的濃厚海洋氣息, 口感外層爽脆, 內裡貝肉卻又軟又嫩, 配以木骨柚汁, 提昇鮮味。螢光魷魚壽司螢光魷魚口感爽脆及味道鮮甜, 日本人釣到螢光魷魚後馬上進行沖漬, 醃漬後依然保持刺身般的口感, 經過一段時間發酵, 風味更加升華, 外層帶爽脆感, 味道帶點咸香。赤海膽新鮮紫菜飯赤海膽一般被認為是高品質的海膽, 它的生殖腺呈淡淡的黃色, 相對較薄, 但味道濃郁, 鮮味明顯回味中帶有絲清苦。師傅特地把它放在新鮮紫菜飯上面, 混合來吃, 可以減去了一些膩滯感。橡木煙薰平政魚壽司產量極其稀少, 魚肉結實, 味道甘甜, 肉質呈漂亮的淡粉珍珠色, 經橡木煙薰後, 增加了味道的層次感。小肌壽司師傅特地加入了炒鮮蝦蝦粉, 令小肌一口咬下去, 那微酸脆甜的口感, 和淡淡的酸味與鹹味所交織出的味道, 令食客吃得津津樂道。 野生吞拿魚壽司這條吞拿魚是野生的, 而且是超過155公斤的大魚, 師傅還特地向我們展示了魚的證書, 絕對跟平時人工養殖的好吃得多, 熟成2星期的做法令魚的鮮甜味得以充分地保持, 而且是無筋的, 口感絕佳。蛋最後師傅擺放了一件清甜可口的蛋, 可以讓你清一清味蕾。蔥拖羅蓉手卷拖羅蓉與香蔥結合得天衣無縫, 另外加了一片紫蘇葉, 令整體場的膩滯感減去了不少。 湯湯是用了新鮮紫菜煮成的紫菜湯, 個人覺得比麵豉湯好飲, 比較清甜。茶碗蒸-蟹羹蒸蛋今天的是這款蟹羹蒸蛋, 蛋上面的是滿滿的鮮甜蟹肉絲, 令底層香滑的蛋味道更為濃厚, 更有層次感。甜品-柚子雪葩柚子雪葩酸酸甜甜的味道很適合夏日, 而且可以清走口腔內的氣味。甜品-紅豆羊羮羊羮是日本和菓子的其中一種, 日本人品茶時必備的甜點, 經典的紅豆口味羊羮, 用上大量滋補養生的紅豆蓉製作, 健康又美味。…Read More
