呢間鋪一直係我既checklist 入面,但因為太難book所以一直都未試到。今次月頭就記起要打去book,打左幾十個電話終於成功book到想食記得月頭就好打去book! 鋪頭面積唔算大,只有數張卡位同埋10個bar枱位左右,今次被安排坐bar枱。一開始會有前菜同茶碗蒸,之後每人會有4塊A4和牛,包括牛肩肉,西冷同肉眼。個人最鐘意西冷,覺得肉味較濃。一個師傅只會serve一枱客人,而師傅係肉同肉中間會煮配菜,減低油膩感。最後會有和牛炒飯同甜品作結,$680嚟講真係好滿足!仲可以加多$100加牛舌。…Read More

受朋友遫請,來到「すき焼 森」食晚餐,朋友大約提前三個星期左右預約。「すき焼 森」有三家店,均位於中環,今次來到去年才開業的一家,店舖位於歌賦街,從九如坊拐進去的街角盡頭。壽喜燒分成關東及關西兩派,「すき焼 森」主打關西風壽喜燒,先將肉煎烤,加入其他配料,並慢慢調味,加糖和少量壽喜燒醬汁,令和牛有焦糖化的效果。店內設有吧檯位及卡座,每台客人均有一位師傅在席前烹調壽喜燒,介紹每一道菜的食材與產地等資訊。師傅烹調每一道菜的時間拿捏得恰好,不會令我們覺得吃得太急,等待下一道菜的時間又不會太長~~~晚餐有 Omakase,需要提早預訂。另有Sukiyaki Set及Shabushabu Set ($680/位),可選牛或豚肉。壽喜燒是主打,那我們當然都選Sukiyaki Set啊!先上前菜,日本溫室蕃茄搭配海苔﹑蠶豆及煙燻螢光魷魚。自己本身不吃蕃茄,但今次也勇於嘗試一下,蕃茄好甜,蕃茄味濃,沒有那陣草青味。煙燻螢光魷魚,魷魚入味,有點微甜,煙燻味香,質感軟稔易咬得來又帶點咬口!然後上的蒸物是櫻花蝦茶碗蒸,加入薑蓉點綴,帶櫻花蝦的香氣之餘,味道沒那麼單調。Sukiyaki Set所用的牛為A4近江和牛,是次供應3款部位,有肉眼、西冷和牛肩胛肉。師傅烹調的次序會由淡味至濃味,油脂感由少至多。妹妹選豚肉Sukiyaki Set,是採用鹿兒島黑豚肉,豚肉只有2款部位,只有西冷及肩胛肉。三款牛的部位各有特色,肉味及油香程度不同,定能迎合不同人的口味!牛肉一入口就油香四溢,牛味濃,配搭甜味的壽喜燒醬汁來吃恰到好處,口感又夠柔軟。若然喜歡滑溜口感,可沾上蛋液來吃。另每人有一小口的白飯,用上日本珍珠米,牛肉配飯,很好吃!白飯是可以添的啊~~~鹿兒島黑豚肉的肉香程度亦不輸蝕,充滿肉的甜味!!師傅梅花間竹地烹調肉及野菜,野菜有大蔥﹑豆腐﹑蒟蒻﹑冬菇﹑芋絲等,讓客人不會接連吃肉而感到太膩。惟當中的日本春菊是蒿菜的一種,所以都有陣茼蒿/皇帝菜的那陣味,是我個人不喜歡的味道啊!我們另外追加了牛舌 ($100/份),薄切牛舌配洋蔥圈,牛舌幾爽口,牛味亦夠濃,焦糖化的洋蔥圈很香甜!御飯是滑蛋牛肉飯,未夠飽的可要求增加飯量,將牛肉碎、蛋、白飯及燒汁一起煮,整碗飯都吸收了鍋內的油脂香。牛肉碎的肉味雖然不及之前的香濃,但蛋味都夠香及嫩滑!連同御飯奉上的有漬物及味增湯,漬物是生菜,普普通通。味增湯香濃而不鹹,沒有什麼配料。甜品是芒果牛乳布甸配黃豆粉蕨餅,牛乳布甸滑溜兼充滿奶香~~~蕨餅夠煙韌!!對於店舖環境﹑店員服務及食物質素都感到滿意,會想再來光顧啊!…Read More

說起對於吃肉的信念和執著,日本餐定當是數一數二的吧。壽喜燒(Sukiyaki)是關西風味裏傳統的冬季菜式,最早起源於務農人用鋤頭等工具用火燒的方式加熱食物,後因種種原因人口的遷徙而在全國傳開來,如今更是聞名全世界的日本菜肴之一。Mori位於深街小巷中,結合樸實無華的裝潢,多了幾分禪意。兩道前菜——熒光魷魚配胡麻豆腐清爽宜人,鵝肝蒸蛋推陳出新,用花椒提味,點點麻意,惹味鮮美。店員用牛油將大蔥煎香,並在鍋底墊上一層白糖,接著鋪展開牛肉,烘烤幾秒之後又撒上一層薄薄的白糖及少許豉油增加牛肉表面的焦糖質感。店員動作純熟,整道工序一氣呵成,牛肉也在精準的時間和火候把控中呈現在客人眼前。Mori有不同部位的牛肉供選擇,當晚試了幾款 — 肉眼油花四溢、肥美軟糯;Sirloin纖維清晰,肉味飽滿;牛肩肉則是肥瘦間隙、韌勁十足。喜歡爽滑口感也可以沾著食用蛋用蛋液包裹著吃。不得不一提的是,最後的親子丼也是點睛之筆,因為熟度不同令雞肉和雞蛋形成豐富的層次感,帶給食客新穎的體驗。Mori在香港有三家分店,除了食物質素不俗之外,其環境、服務和價格也非常出色。正是如此樣樣俱到的好店,才可以多年來受到眾多食客的歡迎吧!…Read More
