莆田喺新加坡過江龍,主打閩南菜,我哋一般好少食。是日經過,睇到餐廳堆出季節限定跳跳魚,因為從來未食過,所以就決定一試。坐落侍應先擺底茶芥,一碟醃蘿蔔同埋一碟酸菜,食落幾開胃。因為平時少食福建菜,所以花咗少少時間研究餐單,盡量選擇冇食過的菜式。九轉小腸 $98尼個豬腸好爽口,洗得乾淨,亦醃得入味,喺個好頭盤。蝦苗伴頭水紫菜 $48尼個喺個冷菜,味道微酸,紫菜入口即散開,都幾特別。香酥椒鹽跳跳魚 $138跳跳魚又叫彈塗魚,以前只喺電視上見過。餐廳有幾種唔同煮法選擇,我地就揀咗椒鹽。坦白講我對於魚嘅敏感度唔高,所以講唔出有乜嘢特別。但係可以講嘅喺師傅炸得好,條魚炸到外面酥脆而內面鮮嫩,唔油膩,而且咸度適中,幾乎可以原條就咁食哂落肚。白切羊肉 $138家人都喺羊癡,有羊肉必要嗌。尼碟羊肉味道鮮美,雖然俾咗蘸料,但喺就咁食能更加食到佢嘅原汁原味。香煎海蠣餅 $88尼碟喺個香口餸,選擇嘅喺小海蠣,肉質鮮甜,雖是香煎,卻不油腻,每口都能夠食到海蠣。砂鍋黃花魚湯 $138黃花魚喺餐廳嘅主打之一,幾乎枱枱都會嗌,因為已經要咗跳跳魚,所以我哋決定嗌黃花魚湯。睇到煲湯白色嘅湯底就知道係正,黃花魚嘅鮮味入哂湯內,一啲腥味都冇,啲湯俾我哋飲都一滴都冇得剩。瑤柱燴絲瓜 $78尼個餸喺個家常菜,絲瓜脆口,用瑤柱燴帶出佢嘅清甜,好好味。福建紅菇海鮮滷麵 $118從來未食過咁嘅滷麵,真係有啲驚喜。首先,佢有好多配料,有紅菇、蝦、白菜、青菜、花甲等,滷嘅汁稠密,唔咸,面身比較淋,喺我嗰杯茶👍今餐食咗千零蚊,以晚餐來講,咁嘅質素唔可以講佢係太貴。不過佢啲碟頭比較細,所以如果食量大的人就未必覺得佢係物有所值。…Read More

一年一度到鑽石山墳場掃墓,以往就會晌返附近搵食,今次就同家人落咗荷里活廣場食晏。認識福建菜、福建嘅食材,都喺始於「莆田」,其實,晌香港賣福建菜嘅餐廳都屬小眾,唔似得京川滬呢幾個菜系。故此,帶佢哋試試咩喺福建菜,不經不覺,佢已經喺米芝蓮一星餐廳。呢家分店幾年前都有幫襯過,店內環境骨子古雅,餐廳源自新加坡,故又有點點馬來懷舊風。因為我哋都嚟得早,出面大堂位差唔多坐滿人,而裡面陸續先開始慢慢有客。無論鋪面,還是枱上,都有介紹福建產嘅蟶子,比慣常食海鮮所見嘅蟶子短啲,但就肥啲,既然喺推廣緊,都點咗一客試試。不過好搞笑,餐牌印有8款食法,但點菜時店員話只得冰爽酒糟蟶子及薑蔥炒蟶子兩款,真喺有少少理解唔到。原本我哋嘅心水喺鐵板鹽焗蟶子,唯有退二求其次,揀咗薑蔥炒蟶子。九轉小腸 $79呢道前菜喺「莆田10醉」之一,喺頗有特色嘅心機菜嚟,點解?將啲豬腸去晒內壁肥膏,一圈又一圈捲成,正所謂九轉之意喇。故此,食落有少少爽爽哋嘅感覺,加上滷得入味,就算喺大腸,都絕不邪惡。薑蔥炒蟶子 $99以薑蔥炒都喺處理海鮮嘅好做法,一碟望落去好似唔喺好多,但都已有十多隻,且勝在啲蟶子肉真喺頗肥美,有肉地,亦都挺鮮甜,帶有薑蔥嘅香味。酥炒芋芯 $89芋頭嘢一向喺老婆嘅至愛,所以,點一客嚐嚐。唔似賣相似似哋潮州菜嘅反沙芋,就連味道都有啲似添。據介紹,雖然叫炒芋頭,但做法卻喺先煎,再炸,然後以沙糖再兜炒,故此,入口外層有份香脆感,而內裡芋香酥化,怪唔之得咁似。馬來風光 $78加多道蔬菜平衡吓,講特色嘅呢道「馬來風光」名就夠特別,其實就喺炒通菜,不過用上馬來西亞嘅參巴醬,所以,啲菜食落鹹香而微辣,非常惹味。仲有,食剩啲醬唔好嘥,等陣用嚟撈米粉都正。興化炒米粉 $78興化炒米粉喺店家另一道招牌菜,特別在於米粉超幼細,所以,專登點嚟俾家人試。再食,都保持到水準,啲米粉幼細得比天使麵仲要幼,頗似「超力」嘅銀絲米粉,粉內混有蝦仁、蜆肉、紫菜、花生、西芹等等,食材豐富,撈埋上面啲參巴醬,好食。餐廳嘅環境本身都幾舒服,招呼唔錯,茶錢$9位(好香嘅菊花茶),小食$9(酥炸頭水紫菜),價位都OK,重點喺有啲特色菜俾到大家試吓嘛!…Read More

認識莆田,是因爲在地鐵站看見大幅跨牆廣告上一句與別不同的宣傳標語「莆田哆頭蟶  食蟶新地標」,那蟶子是有很多個頭的嗎?而兩句重覆用蟶字,我這文字控看來又份外礙眼;加上廣告標榜蟶子有好幾種煮法,一直想大吃一頓蟶子,所以即使尖沙嘴店客滿,也訂到鑽石山店來。仗著新加坡店是去年米芝蓮一星,星期六晚自是人滿為患,就算訂了位也要稍等。這裏的菜式很有趣,是新加坡人開的閩菜,既有福建本色,又有些東南亞菜的影子,再添了幾道創新的菜式,很多餐點我也想試。其中一位飯友突然吃素,故此除了人氣的九轉小腸、椒鹽豬手和興化米粉,我們還點了蝦苗拌頭水紫菜、冰浸苦瓜和酥炸芋芯。至於主角蟶子,我們選了最能保留原味的煮法:花雕蒸。蟶子菜式只在盛夏供應,原來哆頭村是福建莆田市一個盛產蟶子的地方,真是孤陋寡聞。九轉小腸由一個小火爐暖著以免油脂凝固,小腸一層套一層令柔靱豐腴的鮮香加倍,功夫十足,值得一試,不過吃久了還是會有一點膩,最好與多些人分甘同味。冰浸苦瓜擺盤富心思,附上一些蜜糖蘸著吃剛好。據説每年首輪收割的紫菜才能稱爲頭水紫菜,一年只有七天收割期,蝦苗拌頭水紫菜帶一點酸,是不錯的開胃菜。椒鹽豬手雖然香口,但纍纍的皮與骨只夾著一點點肉,吃著吃著相當膩,也顧不得要補充骨膠原了。興化原來是莆田的史稱,興化米粉要趁熱吃,不然面上的紫菜瞬間濕掉變軟影響口感。花雕蟶子盛在燉盅裏,雖然廣告標榜大隻,但與港式大排檔用的大小還有一段距離,一客有十多隻,酒香混和蟶子的鮮甜,乾淨無沙,性價比高。酥炸芋芯外脆内軟,火侯掌握得很好。飯友都愛榴槤,於是點了一人一客貓山王榴槤甜點,不過賣相好看有餘實料不足,同伴說不如乾脆吃一大塊榴槤算了。我的香茅凍不過不失,香茅味只一丁點,是下午已吃過甜點後的清爽選擇。因爲主食點得不夠,吃不太飽。還有不少餐點想試,有機會再光顧。…Read More

這餐不是在我預期這麼好食,我覺得最好食的是:精美四小拼、香拌海蟄頭、上湯時蔬、竹笙海參羮、興化米粉及百秒黃花魚。精美四小拼最欣賞是九轉小腸,一層層很有心機,又沒有肥膏,可以放心食;香拌海蟄頭完全比我在其他食肆食更入味,由外到內都醃得時間足夠;上湯時蔬是金銀蛋莧菜,咸蛋黃完全溶了,每一口很有咸蛋黃香味;竹海參羹不會太多獻汁,有很多竹笙及海參,但有點不足的是胡椒花味太重;興化米粉用了很幼的米粉炒,不會覺得沒有味道,再配上食肆的醬汁,不是出面食到的炒米粉,還有是沒有油淋淋的口感;百秒黃花魚是必選的菜式,肉質鮮嫩、有甜甜地的味道、新鮮的黃花魚,不錯不錯。至於其他呢:辣汁啦啦我覺得沒有辣味,如果比我們平時食開的豉椒炒蜆,我會揀豉椒炒蜆;莆田荔枝肉其實我都唔知是什麼肉,因吃不出是什麼肉味,粉漿又太厚了;脆皮蒜香雞沒有蒜香味,與出面食的差不多;莆田滷麵及媽祖麵線,為何會一併寫,因佢地有共同嘅共通點,配料一樣,有蝦、肉絲、冬菇、小棠菜、魚湯,其實叫了三個粉都有蝦、肉絲、冬菇、小棠菜,沒有了什麼驚喜,另湯麵的麵質太淋了,沒有彈牙感,兩款湯麵的湯都食到麵的麵粉滲入湯裡,不是太好食。總括,部份的食物是唔錯的,但亦有部份的食物不是做得太好,相差太大了。味道當然是清淡,少油,是很健康的,但希望部份的食物能夠改善一下,食完後開頭是開心的,後尾是覺得一般咁啦:(!…Read More

年三十晚,與家人來到位於鑽石山荷里活廣場的『莆田』吃團年飯。『莆田』是一間來自新加坡的米芝蓮餐廳,顧名思義主打福建莆田菜。由於店面不算很大,加上是三十晚,即使早已預訂,到達後也要等20分鐘左右才可入坐。還好座位寬敞,坐得蠻舒服。「蝦苗拌頭水紫菜」的水紫菜味道鮮甜,作為開胃菜一流。不過份量實在太少了,幾個人每人一小啖就吃完……「九轉小腸」用傳統的九摺式穿套方法滷製,賣相精緻,吃起來爽口彈牙,也無油膩感,值得一試。「媽祖麵線」又叫長壽麵,麵線口感類似米粉,不過較爽口彈牙。麵線加入了香菇、蝦、花生等食材,口感豐富,配上鮮甜湯汁,效果不錯。「瑤柱燴絲瓜」以雞湯和瑤柱燴製,但醬汁的雞和瑤柱味不太明顯,瑤柱粒份量也太少。跟其他菜色相比,這一道驚喜不大。「傳統海蠣煎」即是香港人愛吃的蠔餅,香脆可口,沾上餐廳秘製的辣汁非常惹味,不過蠔仔數量多一點的話會更好。「阿元香草雞」的味道有點像醉雞,另多了陣陣香草味;雞肉選用了雞腿部分,吃起來夠鮮嫩。「砂鍋魚湯」魚味香濃,魚肉也很嫩,由於加了杞子和胡淑,完全沒有魚腥味,令人飲完一碗又一碗~菜色份量雖少,但均是有特色的手工菜,吃得出用心製作。若不介意價錢較高,又想一嘗福建的傳統美味,這兒是不錯的選擇啊。------------------------------By alvahana…Read More
